Yet how many of you actually have thought “hey, where do forks come from?” Well, it takes one trip to China and a 3-year-old laughing at your face because of your desperate attempt to eat with chopsticks to finally appreciate something so ordinary such as a fork. So, where do forks come from? The early history of the fork is obscure. As a kitchen and dining utensil, it is believed to have originated in the Roman Empire, as proved by archaeological evidence. The personal table fork most likely originated in the Eastern Roman (or Byzantine) Empire. Its use spread to what is now the Middle East during the first millennium AD and then spread into Southern Europe during the second millennium. Bone forks had been found on the burial site of the Bronze Age Qijia culture (2400–1900 BC) as well as later Chinese dynasties’ tombs.The Ancient Greeks used the fork as a serving utensil. It gained a following in Italy before any other Western European region because of historical ties with Byzantium and continued to get popularity due to the increasing presence of pasta in the Italian diet. At first, pasta was consumed using a long wooden spike, but this eventually evolved into three spikes, design better suited to gathering the noodles. In Italy, it became commonplace by the 14th century and was almost universally used by the merchant and upper classes by 1600. It was proper for a guest to arrive with his fork and spoon enclosed in a box called a cadena; this usage was introduced to the French court with Catherine de’ Medici’s entourage. In Portugal, forks were first used at the time of Infanta Beatrice, Duchess of Viseu, King Manuel I of Portugal’s mother around 1450. However, forks were not commonly used in Western Europe until the 16th century when they became part of Italian etiquette. The utensil had also gained some currency in Spain by this time, and its use gradually spread to France. Nevertheless, most of Europe did not adopt the use of the fork until the 18th century. Early settlers in Moorabbin Shire used large cast iron pots, pans and kettles, that were suspended over the open fire in the kitchen, for cooking meals. They had to be frugal and self-sufficient and so repaired the equipment to prolong its useful lifetime. Blacksmiths also made and repaired household equipment. James McEwan & Co 1852 - 1993 once dominated the the hardware retailing scene in Victoria. Established in 1852 to service the booming gold rush in Victoria the company went on to become one of the longest established retailers in Australia. Over it’s 140 year history the company went through many booms and busts. A tea strainer is a type of strainer that is placed over or in a teacup to catch tea leaves. When tea is brewed in the traditional manner in a teapot, the tea leaves are not contained in teabags, but rather are freely suspended in the water. As the leaves themselves may be distasteful, it is usual to filter them out with a tea strainer. Strainers usually fit into the top of the cup to catch the leaves as the tea is poured. Some deeper tea strainers can also be used to brew single cups of tea, much as teabags or brewing baskets are used - the strainer full of leaves is set in a cup to brew the tea, and then removed, along with the spent tea leaves, when the tea is ready to drink. By using a tea strainer in this way, the same leaves can be used to brew multiple cups. Tea strainer use declined in the 20th century with mass production of the tea bag, but is still preferred among connoisseurs who claim that keeping the leaves packed in a bag, rather than freely circulating, inhibits diffusion. Many assert that inferior ingredients, namely dust quality tea, are often used in tea bags. Tea strainers are usually either sterling silver, stainless steel, or china. Strainers often come in a set, with the strainer part and a small saucer for it to sit in between cups. Tea strainers in themselves have often been turned into artistic masterpieces of the silver- and goldsmith's craft, as well as rarer specimens of fine porcelain. Brewing baskets (or infusing baskets) resemble tea strainers, but are more typically put in the top of a teapot to contain the tea leaves during brewing. There is no definitive boundary between a brewing basket and a tea strainer, and the same tool might be used for both purposes. Tea strainers are also used by patients trying to pass a kidney stone. Scales Weighing, early 1900's
Although these scales cannot be identified against a historical period of Australian development they are therefore placed in a time frame when commercial markings from manufacurers were not important enough to have domestic kitchen items labeled. These cast iron scales were made for domestic and possibly rural areas and not for cities where demand for known branded utensils was more an issue. These scales are very "basic" and not to the level of weighing detail that commercial scales had to be at. These scales do not show any visible markers for accurate measurement. The "near enough is good enough" principle can be related to these scales.These scales are significant as they identify one of the basic preparation items for the weighing of foodstuff before the televising of "cooking" shows (1960s onward). The meals for which quantity measurements are required for domestic cooking is not exact however the use of cup measurements for large dishes is tedious and these scales offer the capacity for a larger mixture and an easier method for the "cook". As the need for accurate measurements of ingrediants for rural domestic meals has in the past been not been critical the requirement of accuracy that these scales do not provide is of no consequence. Domestic kitchens in the Kiewa Valley and the type of meals produced would not have required the accuracy of ingrediants that "modern " international cuisines of the later 1900's require. These kitchen scale were used whenrecipes had the terms "pinch, dollop, squidge and smidgen" were about as accurate as most recipes needed to be.Black cast iron, medium weighing scales, with a two arm cradle. On one side of the cradle is a two half circle holding frame for the retention of the metal container scoop. This light weight steel scoop/dish allows for the weighing of loose grain or similar type material to be contained and held in place for establish its saleable contents. On the other side of the weighing cradle is a flat circular platform to hold various metal disc. All the disks used on this platform have their weight stamped on them. When the produced filled in the scoop balances with the metal weight on the opposite end of the balance match (visual horizontal appraisal) the appropriate quantity required is obtained. This scale does not have any visual markings on the arms to identify a true balance. It is therefore reasonable to assume that these scales were for domestic use only and not for commercial transactions. There are two weights that are useable with these scales, one is stamped "1 lB"(pound) and one stamped "1" and both are made as a solid round piece of cast metal.The smaller disc has a "1 lb" moulded and pressed form within a marked inner circle and a mouled ridge outer circle enclosure. It was a period when "home" cooking(desert & cakes) was the only method of having cakes and other pastry dishes in rural areas. The utensils available for this home cooking had to be strong and reliable and low maintenance. This nut roll can is very significant(in rural Australia) because it highlights a period in time when the majority of cakes and other pastry dishes were cooked in the family kitchen and not purchased from a shop. This was a period of self sufficiency especially in semi remote rural areas such as the Kiewa Valley. This was a time when cooking utensils were either made in Australia or imported from England or Europe. After World War II imports from the USA increased significantly and then followed by cheaper products from Asia.This cylindrical nut loaf tin(mild steel) has a removable lid and base. ... is significant demonstrating the type of kitchen utensils required before ...This aluminium kettle was manufactured between 1940 to 1960's and replaced the heavier caste iron "open fire" stove ones (in doors or in the bush). A cast iron flat base between the open fires and the kettle was required. This kettle was used extensively with indoor open fire places. It was part of the evolution in "tea" making kettles. These were the only method of making hot beverages before introduction of electric kettles. For the Kiewa Valley the connection to the major electricity grid was post 1950's.This kettle is significant demonstrating the type of kitchen utensils required before electrical home connections became a reality. The aluminium structure of the kettle was an advancement over the heavier caste iron kettles. This type of kettle is still in use for bush and mountain hikers/climbers due to the light weight. This kettle was used by the Tawonga C.W.A. Branch. The C.W.A. motto "Honour our God, Loyalty to the throne, Service to the country, Through country women, For country women, By country women."This 99% aluminium hot plate kettle with lid (bakelite handle) is Australian made for flat stoves (cooking or room heating). Mincer Meat, mid 1960's
... . hand operated meat mincers meat grinders kitchen utensils Pope ...This meat mincer was born in a period where hand operated mincing and blending machines were only available for household mincing meats and blending ingredients up to the 1960's. Electrical kitchen based whitegoods were rare in areas where the connection to electricity was intermittent or not at all.This kitchen aid is a very significant item in the Kiewa Valley before suitable electrically operated mincers became available and constant reliable electrical connections were installed. The Kiewa Hydro Electricity Scheme provide the stable supply of electricity which made most of the hand operated mincing machines obsolete. However large mincers for bulk supplies were still required eg. kitchens for SEC workers during the 50's and 60's.This heavy industrial type meat mincer(cast iron) has a top "rounded feeder cup" with a mincer screw blade at the bottom. A winder handle rotates the screw like mechanism to mince and express solid pieces of meat at the other end. There is a clamp below the main structure which permits the fastening of the hand driven mincer to a table or solid ledge. Plate Hot - Camp Fire, circa early 1900s
This "camp fire" hot plate has been used from the early 1900's on camp drafts /droving cattle onto and from the Victorian high plains. The size of "camp" kitchens would depend on the amount of "cattle" men required to collect and move the "herd" to and from the "lush" high plains.This "camp fire" hot plate is significant because it was donated by a member of the Roper family (the Roper's of the Kiewa Valley) a "pioneer" family. This particular camp fire hot plate originated in Tasmania however the Victorian Alps are very similar to the Tasmanian mountain regions and this type of cooking utensil was, and still is, used in isolated regions e.g. large cattle properties in the Northern Territory. This Camp Fire hot plate was used on the High Plains at the Roper Hut for approximately 35 years.This open fire hot plate is made from caste iron. It has a circular flat (cooking) base, ideal for a few thick pieces of prime steak, a high semi circular handle with a large circular carry ring, to apply a thick stick or rod through it as an insulated handle (to position the hot plate where required over a fire). The "handle" can be folded down to save space when packing it in the saddle bags. The handle has a strong metal rivet on each end (is loose enough to allow it to be moved to either side e.g. flattened). This kettle was used by pioneer families, mainly rural, folk that needed a constant readily available source of boiling water, in or mainly outside the homestead.. This kettle was used in the early to late 1900's for the refreshment of stock men and farmers that had irregular "tea" breaks under sometimes hard and gruelling conditions.This kettle belonged and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. A scientific study started in 1947 to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This "camp draft" could take up to six weeks.This large cast iron kettle holds a capacity of three pints of water/tea. It has a flat base and mushroom shaped handle welded onto the "pot" below the rim of the pot opening. It has a rim to position the tea pot lid but no lid. This type of cast iron kettle was used by pioneer families, mainly rural in the early 1900's upon open fires (log). It covered rural activities that needed a constant readily available source of boiling water, in or mainly outside the kitchen of homesteads. This kettle was used in the early to late 1900's for the refreshment of stock men and farmers that had irregular "tea" breaks under sometimes hard and gruelling conditions.This kettle belonged to and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. The Bogong High Plains area provided Kiewa Valley cattlemen a good supply of fodder to supplement their Kiewa Valley grazing areas. This "camp draft" activity , in the high plains, could take up to six weeks.This large cast iron modified camp pot (cauldron) has a long tap connection located at the bottom end. The "tap" is made from brass and has a simple elongated "bar" control swivel at the end to control the water flow. The tap suggests that only water was heated (to a constant boil) for the replenishment of cattlemen's, or other horse rider's, tea or coffee mugs. Refreshments at a "temporary" location on the Bogong High Plains. This large deep pan (with a long handle) was used by pioneer families, mainly rural folk, that needed a pan which could cope with an open fire heat source, in or mainly outside the homestead. This pan was used in the early to late 1900's for the "stews" and other meals required by hard working stock men and farmers that had irregular "lunch and dinner" breaks under sometimes hard and gruelling conditions. Hot plates were normally not in use.This "open fire" saucepan belonged, and was used by a Kiewa Valley, pioneer family, the Roper Family. This saucepan was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. This saucepan was one of an array of "open fire" cooking utensils used in the "camp draft" grazing in the Bogong High Plains and this could take up to six weeks. This kettle belonged and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. Pie Iron Camping, circa mid to late 1900s
This Pie Iron was used in the mid to late 1900's when stock, both cattle and sheep, were grazed on the Bogong High Plains. Providing meals for stockmen over open fires, even in log cabins in the Victorian Alpine region, was usually by a "camp cook" or a stockman designated "cook" from the Valley station/property. The use of "camping cooking utensils were a necessity and not a "weekend" affair. Stockmen could spend up to six weeks on the plains and all their cooking needs required had to "pack horsed" from the valley below. A scientific study started in 1947, to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This item is highly significant to the Kiewa Valley as it demonstrates the kind of cooking utensils that were required for camp drafts in the Bogong High Plains environment. As the control of cattle and sheep in the High Plains was very demanding upon horse and rider, good "tucker" was a pre- requisite for a successful operation. As the time spent in this remote location was governed by the climatic condition maximum utilisation of the very good pastures in the High Plains was crucial to a successful and profitable season.This pie iron has two pie forms in horizontal configuration and both top and base rounded forms are connected at one end (Top) with pop rivet application. This application allows for the "opening" up of the two halves. The bodies are made from cast iron in a "cup" form and a metal rod and wooden handle extend to permit the opening of the two sides. The inner side of the "cups" are smooth which relates to pie requirements and not the jaffle/sandwich irons. Pot Melting, circa mid to late 1900's
Before 1908 the words "melting pot" was a term relating to a "crucible" with a meaning of "a pot in which metals and other substances are melted (fused) to provide metal items of varying shapes and uses. From the mid 1900's this term changed and became more related to the "mixing" of social and ethnically diverse populations. The description used here is that of pre 1908. This melting pot was used in the early to late 1900's when produce and hardware shops were too far away from the Kiewa Valley and time was at the essence. The ability to manufacture as many "crucial " items at the home property was the difference between running a successful rural business or not. The isolation of the Kiewa Valley (before the 1950's), hindered the "time down" of machinery and important "widget" replacements. The ability of self sufficiency on properties is still a boon to rural properties as time lost is never really recovered.This melting pot is highly significant to the Kiewa Valley as it provides evidence that the graziers and cattle stations required to be self sufficient in all aspects of day to day maintenance and replenishment of worn materials requiring to be "manufactured " at the property and lack of replacements from commercially shelved products. This aspect of "survival" in the "bush" can be seen in the "huts" built on the Bogong High Plains to accommodate the seasonal grazing of cattle from the Kiewa Valley.This black melting pot is made of cast iron. The lid is missing. The top rim of the pot has three lips for poring accuracy. The formation of these lips are in a "triangle" formation. The top section of the body has a curve inwards reducing the pot diameter from 270mm at the base to 135mm.at the top. The handle is made from heavy gauge wire which is fastened to the body through two lugs (welded onto the top section of the pot) and fasten through a hole at the top of each lug. The handle has a "U" shape as it goes through the lug hole, ensuring no accidental fixture to any side thus allowing free swiveling from one side to the other . "BH" indented within a diamond shape. Pot Boiler, circa early 1900s
This cast iron "boiler" was produced by one of the largest foundries in England during the late 1700's and onwards. These products were "shipped to the far realms of the "British Empire". This source was one of the only ones available to the early settlers in Australia until the mid 1900's. The catch cry of those "early " times was "the best of British" which was ingrained into the early (Australian) settler's iron and cast iron purchasing mind set. It was not until after World War II did that mindset change, when both American and Asian based manufacturers' products were accepted by the Australian consumer. The city based consumer embraced the swing a lot earlier than the more "traditional" rural consumer. This cast iron 8 gallon "boiler" is very significant to the Kiewa Valley not only that large "boilers" were used to "boil" clothes clean, over an open flame source, but also because it demonstrates one of the most important "rural" mores founded by the "early" settlers in this region. That more was the very "close" tie to "Mother England" and the "establishment". The social and "family" values from the "English" way of life was ingrained until well past the day of the "Australian Federation". It was not until the friendly "American soldier" invasion during World War II that the "Empire" bondage was being eroded away. The transition from the good "rural war cry" of "Australia prospers off the sheep's back" was slipping away and the industrial monolith started its challenge. This change was the slowest in semi remote rural centres such as the Kiewa Valley. The "old English" values lingered on until the mid 1900's.This large (8 gallons) cast iron boiler is oval in shape and has a cast iron (swivel) carrying handle. The handle has a "bend" in the centre position to allow hook and straight type rods to facilitate the positioning of a "hot" boiler. This boiler would have been used over an open fire or placed on top of "coals". On the top rim and evenly spaced between the fixed handle joins is a slightly semi curved balancing/control lip.At the bottom (underneath) "CLARK & Co. PATENT", Below this a six star triangle with the letter "C" in the middle.. Tin Coffee Cylindrical, circa mid to late 1900's
... especially beveridges and the greater choice of kitchen "utensils ...This "coffee" tin has by the "art deco" appearance its origins in the late 1950's to 1960's. This time period was one of accelerated growth both in the physical (housing) sense and the mental (new ideas and inventions) changes in "attitudes". These occurred more rapidly in cities but had its effects on the rural environment. The drinking of coffee was spurred on by easier distribution of imported food and drinks. Advertising by stronger radio links and then by television brought the variety of foods and drinks to semi isolated rural regions. The accessibility through greater information channels becoming available brought with it unbelievable ranges of goods and foodstuffs. Rural regions still relied on bulk supplies and relatively larger storage containers than those in cities. This "bulk" buying and storage "syndrome" was a lingering result of many years of "drought" periods when road transports met delays from flooded roadways in supplying population centres in the Kiewa Valley. The construction phases in building the SEC Vic Hydro electricity Scheme in the eastern sections of the Victorian Alps brought many changes to the quiet rural regions in the Kiewa Valley. Changes in population and social mores. The influx of a varied , mostly temporary, and "European flavoured cuisine" changes the "cuppa tea only" flavour to the have a "coffee break". The subliminal influence of the "American" films changed those children growing up in the post 1950s from the "English tea" to the "American coffee". This "Americanisation process has influenced not only rural Australia but also other areas throughout the world.This "insignificant" coffee tin is very significant as it demonstrates that the Kiewa Valley was becoming more accessible to reliable coffee supplies and general food items.The container was part of a "set" of containers that included tea, sugar,biscuits,flour, rice and other family condiments. This type of kitchen storage containers was brought about through changing patterns in tea and coffee useage and overall consumption. Household demands for faster "self help" cooking especially beveridges and the greater choice of kitchen "utensils" was brought on by easier access to products due to a lessening of the area's "isolation" by having a reliable (all weather) road system and an ever increasing population growth. The need for travelling goods/merchant supply caravans to service the area became a diminishing factor, as a result of the establishment of grocery stores in Tawonga and Mount Beauty in the supply of previously "hard to get" groceries. This transition was precipitated by the SEC Vic Hydro Scheme of the 1940's to 1960's which increased the valley's population level three fold.This cylindrical tin has a pull/push lid(for easy access to the contents). The container is labelled for "coffee" however it has no commercial manufacturer's label to establish that it was bought with coffee ingredients in it. The majority of the container's external surface has a "metallic" light blue colour with two sets of silver rings confining black (horizontal spotted) rectangles. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. This knife sharpener is part of the collection of items given into the care of the Cheese World Museum. Uebergang catalogue No.F 24 A metal device with two sharpening discs enclosed attached to a brown wooden circular base. A U-shaped metal handle angles up from the base.
