"In 1839 John Dight purchased Melbourne block 88, which included 26 acres of land along the Yarra River for £481 at the Port Phillip land sales held in Sydney. Dight was already in the business of flour milling and had a mill near Campbell Town in New South Wales called ‘Ceres’. In April 1840, he notified his customers through The Sydney Herald that he was leaving to go to Port Phillip. The first steam powered flour mill was constructed in Melbourne in 1841. Dight built his water powered mill, soon after, from bricks bought over from Tasmania. Dight used the river to power his mill: Water flowed along an inlet channel to turn an undershot water wheel. Chinese market-gardener’s watering-cans on a wooden yoke. This item was authenticated by the Bendigo Historical Society, and is said to be quite rare. It consists of two large galvanized watering-cans each with a pouring spout, suspended by chains from a well-used wooden yoke. The cans would each have been filled with water, then carried a distance into the market garden and used to water crops. The cans and yoke alone are very heavy, one can only imagine how heavy they were when filled with water.As profits from the gold-fields petered out the Chinese immigrants, (nearly all single men), were forced to seek other occupations. Many moved into furniture building in the East Melbourne area, whilst others went into market gardening . A significant number of Chinese men, realising the potential of the sandy, fertile soil, with a good supply of water, in the Shire of Moorabbin, leased tracts of land in that area to establish a market garden and grow produce for the increasing population of MelbourneAfter the Dendy Special Survey in1841in Brighton, Victoria, the first sale of Crown Land, taking in the whole Shire of Moorabbin, occurred in 1852. These allotments of land were eagerly bought up - some by speculators - although many were either worked by the owner, or leased out as market gardens and "fruit gardens", (orchards). As the Yarra became unsuitable as a source of water, several attempts were made to find alternative sources for the growing population of Melbourne. It was not until 1891 that the efforts to sewer Melbourne came to fruition with the setting up of the Melbourne Metropolitan Board of Works (MMBW), now known as Melbourne Water. From 1891 until 1992, it was the responsibility of the MMBW to safeguard public health by providing a sewerage system and a safe water supply system. In 1992, The MMBW merged with a number of smaller urban water authorities to form Melbourne Water. Hand operated water pumps were used to supply water prior to the widespread use of windmill pumps, electric pumps and city water systems. Usually an old pump was made from cast iron, wood or tin. Pumps were very important to people up through the 19th century as farm houses seldom had indoor plumbing with running water.
