Green beans were sent to Melbourne by train and later to Sydney, either via Bombala where they were railed, or to Eden to continue the journey on fish trucks. One pound per bag was considered a good price in the early 1920's and pickers were paid one shilling and six pence. This bean slicer was made about the 1920s by the British firm of Spong & Co. This firm was founded by James Osborn Spong in 1856 in London. James Spong invented over 100 labour-saving devices during his lifetime and his firm became well-known for its production of domestic labour-saving and safety devices, especially its grinding machine and its bean slicer. These domestic items were to be found in most households from the 1880s to the 1950s prior to the advent of electrical items that carried out similar labour-saving processes. This bean slicer is of interest as a reminder of the many labour -saving devices that were available to most women early in the 20th century, even those in the rural and more remote areas in AustraliaThis a heavy metal bean slicer with a circular piece with a rounded cut-out at the top for the insertion of the bean and an attached bolted handle with a wooden top. Attached to the circular top is a circular revolving piece with three cutters. Welded on to the top piece is a metal clamp with a large screw for attaching the slicer to a table or bench. This large bean slicer was first manufactured in the late 1800's in England and exported to Australia. Due to the transportation costs it was not used in many Domestic kitchens. This slicer would have been in a kitchen of a higher socio/economic family within the Kiewa Valley. In the 1930's the manufacturer traded this slicer as "domestic labour-saving slicers". This was the beginning of new generation of the kitchen "gadget". The introduction of the Asian "gadget" manufacturer from the late 1950's saw English export diminish by the cheaper Asian products.This item has great significance because it demonstrates that even "remote rural" locations, such as the Kiewa Valley in the early 1900s still were able to optain "state of the art" labour saving "kitchen" appliances. It was these English and European goods that were made "to last" which brought the mind set "British is best" This mindset was only altered by periods of Australian economic down turns and the cheap Asian product availabilityThis bean slicer is made from cast iron with a round body housing three rotating blades screwed into a riveted spinning base plate. This bean slicer is one of the household labour-saving devices that became increasingly popular in the early to mid 20th century. In those times vegetables such as beans were often grown in the backyard of a house or farm and bean-cutting was a laborious task, especially when providing for a large family. Processed sliced beans were not then freely available.This bean slicer has no known local provenance but is retained as an interesting example of a 20th century household labour-saving device. This is a metal object with a round disc with three metal blades underneath on a turntable for slicing. The blades are attached by six screws. There are two funnels on the top of the disc for inserting the beans. A handle that turns the blades is attached by a screw to the round disc. Attached to the disc also is a vice that enables the slicer to be bolted to a bench or table. Chicory was mixed with coffee to reduce the amount of coffee bean required to be used. This coffee "substitute" was due to the repeated fluctuations in availability of coffee beans (and price fluctuations) in the USA in the late 1800s and early 1900s resulting in the search for substitutes and additives to bulk out the available supplies. This was especially so during times of the major World Wars. Chicory was an excellent choice of fillers as it did not greatly influence the strong coffee bean taste. The first choice in USA households was coffee not tea and the influence of the American servicemen's thirst for coffee was a major thrust into the Australian "colonial" preference for a "cuppa" tea. Rural areas took longer to acquire a coffee "break" but with more and more subliminal advertising through "American" films the rural regions developed a growing preference for coffee, however the tea break alias "smoko" has lingered on.This coffee and chicory blend tin container is very significant to the Kiewa Valley in that it demonstrates that even in rural regions of Australia tastes and drinking preferences have changed by subliminal advertising as time goes by. The American "influence" whether by the "invasion" of friendly troops during the major wars or the avalanche of "American films" has altered some of the "dinky-di" Australian "true blue" tastes and mores. The availability of "straight " coffee supplies to rural areas was also in proportion to the level of all weather transport routes. In the late 1800's and early 1900's road freight had to contend with dirt roads, flooded roads, bush fires and grazing cattle/sheep in rural areas. The easier access that city households had with regard to replenishment of food and drink products, up until the mid 1900's, was severely retarded in rural areas. This extensively rusted tin of "Bushells Blue Label" Coffee and Chicory has an octagonal shaped body with a "push/pull" lid(tin).Three sides has reproduced painted ladies in "Roman dress" ladies picking the coffee beans. There is no reproduction of any chicory roots. There are two "Indian dressed" field workers(pickers) with turban head dress. Many people used their spice grinders or a mortar and pestle to grind the roasted beans into a powder. Japy Freres & Co were mostly known as watch and clock movement makers, they also manufactured coffee grinders. The company ceased in the 1930s. A square wooden and metal antique hand operated French coffee grinder mill, manufactured by Japy Freres & Co (Beaucourt Paris, France). The grinder has a wooden body and an iron lid and mechanism with a metal turning handle and knob. The metal top is attached by screws. It has a broken brass knob on the pull out wooden drawer below. The moveable lid allows the beans to be poured into the funnel to be ground by the internal mechanism.'Japy Freres & Co B.E.
