Delivery cart of Mr & Mrs W J Atkinson’s greengrocery business and general store near the corner of Whitehorse and Elgar Roads, c 1930. Emma Uebergang and William James Atkinson married in 1930. They ran a mixed business in Whitehorse Road from 1926-1952. Stock included fruit and vegetables, sweets and some groceries. With Mr Atkinson is Albert Cunnington who in about 1930 helped with deliveries. To the left can be seen Whitehorse Road as it approaches the shopping centre and over the back of the horse can be seen the White Horse Hotel. Lloyd butchers were located on the corner of Elgar & Whitehorse Roads (within the Surrey Hills postal district). From 1920-1950 Edward Lloyd also had a store at 112 Union Road, Surrey Hills. Fawns's Brewery, near Oak Street, Golden Square. ( James Lerk, Nov. 1999). As early as 1858 George Mackay recorded in the Annals that James Fawns aged 35 years was in the brewery business in Golden Square. James Fawns (1824-21/9/1891) was born in Kincardshire, Scotland and came to Australia in February 1853 on the "South Seas". In 1858 he came to Bendigo and entered into a partnership with George Elliott as brewers in Golden Square. After this partnership was dissolved in 1862, James continued the business alone. James married Helen McFarlane McAllen in 1860. Following his death, James' 3rd son Benjamin Ellison Fawns carried on the business before becoming a pastoralist in Deniliquin by 1893.Sepia coloured photo. He attended Surrey Hills State School, then went on to Box Hill High School (and / or Technical School - both are mentioned). He bought a horse and cart in order to be able to make deliveries for trades people and hence pay his way through technical school. He attended technical school 3 evenings per week studying building, carpentry, plumbing, electrical work and bricklaying. He built many homes in the eastern suburbs. He played tennis and attended church at Church of Christ. Married Margaret on 2/4/1955. Retired to Dromana where he was a member of the garden club at Redhill. Circa 1870, “Estey”, American-made, small Harmonium, (commonly known as a Gospel Organ). Initially purchased by Mr John Box, This example folds up into a small wooden case. It was often borrowed and could frequently be seen on the roadside, waiting to be picked up by horse and cart for delivery to a place of worship, often a local hall or private home. This organ was donated to the Baptist Church in the 1920s, from the estate of John Box, and was in constant use. This 'Estey' harmonium belonged to the local Bentleigh Baptist Church, Vickery Street, Bentleigh. It was often borrowed for delivery to a place of worship, often a local hall. There was also a “Methodist Mission to Chinese”, located in Lydia Street, Bentleigh, where the Methodist religion was taught to those interested Chinese. Ken Pocock won the 1976 Bendigo Cup. with Chapel Elect A broken leg suffered by Golden Square footballer Ken Pocock, while training with VFL team Collingwood, saw the end of a promising football career, but the start of a highly successful career in harness racing. Ken first worked in Bendigo as a horse and cart delivery driver for Symons dairy and Jeffreys bakery. He learned his craft by working with harness horses for veteran trainers Alf Petherick (Glideaway) and Clarrie Long (Great Dalla). Early in his career Ken had Kaye Lois, and the 1965 Moomba Cup and prolific winner Fosmar. He trained and drove standouts including: Peparkee, Chief Invader (1972 Shepparton Gold Cup) Chapel Elect (Melbourne Pacing Cup, Bendigo Cup), Go Van (Ouyen and 3KZ Cups), Game Oro (two Shepparton and two Kilmore Cups). The champion pacer Royal Gaze won 49 races, 17 seconds, 11 thirds including the Shepparton, Ballarat, Ouyen and A G Hunter Cups. Royal Gaze raced in 3 successive Inter Dominion series, winning 5 heats, and finishing third in Perth in 1974. Ken was also a highly skilled stud-master. He was involved in the planning and building of the ambitious harness racing property B J Lodge at Goornong, and travelled to the USA in the early 1970s with B J Lodge owner Bernie Ahern where they selected and bought champion US pacers Kentucky and Hilarious Way and stood them at stud. NILLUMBIK SHIRE COUNCIL ORAL HISTORY PROJECT Interview: Doug Orford Date: Tuesday 19 March 2024 Place of Interview: Aurrum Aged Care in Plenty Interviewer: Katherine Sheedy; Way Back When Consulting Historians In 2023 Nillumbik Shire Council agreed to support two Oral History projects associated with local history groups within the shire. One project was training sessions for group members on undertaking oral history recordings, which occurred in November 2023. The other project involved a professional historian recording two selected history group members, which occurred in March 2024. The interviews were undertaken by Katherine Sheedy of Way Back When Consulting Historians. Doug Orford, whose family first came to Eltham in about 1853, was born in Eltham in August 1929. Doug recalled his family’s connection to the area, starting with his grandfather in 1853, getting to school, growing up on an 18-acre block, working on the orchard, his father’s horse and cart, shops, deliveries, the war and rationing, Black Friday bushfires in 1939, and a little bit about establishing the Shire of Eltham Historical Society, later Eltham District Historical Society, of which he was a life member. Thomas William Cavey was born in 1871, he was the youngest of his family and the only child that was born in Australia. He was first employed at the lime kilns in Geelong, before moving to Queensland for 4 years where he worked as a Boundary Rider. Thomas returned to the Lilydale area to be the driver of a buggy and pair for David Mitchell of David Mitchell Quarry in Lilydale. He selected land in Seamer Road in Monbulk in about 1898, but was working for the railways in Melbourne at the time and would come up to Monbulk at weekends to clear and cultivate the land. He met Lillian Eager, probably through relatives of hers, the Wingates, who lived in Monbulk. He and LIllian were married in 1910. They bought a 22 acre property in what is now called Cavey Road. They had two sons Thomas Charles, born in 1918 and George William Born in 1923. Initially the property in Cavey Road was farmed for vegetables, fruit and berries. The land used for this was over a creek on steep land away from the house. Once the produce was harvested it was taken by flying fox, back across the creek to where it could be prepared for sale. It was then taken to the Emerald and Belgrave markets each week. Later 10 cows were purchased, and the main income from the property was the dairy which produced approximately 25 quarts of milk a day, they produced Cream and Butter and together with the milk they were delivered fresh daily in the horse and cart. Deliveries were made to Monbulk, The Patch and to the canvas town at Silvan Dam, where the workers building the Silvan Dam lived. Thomas William Cavey died in 1959 aged 89. Lillian Blanche Cavey died in 1949 aged 68.

A spring cart is a two-wheeled, one-horse cart, often with the driver standing up to drive it, and otherwise seated on a simple seat. Carts like this one had springs to make the ride smoother. It is a lighter version of a farm dray and is sometimes called a spring dray. Spring carts were often used on farms for carrying loads. In the towns, some businesses used a spring cart for deliveries of bread, milk and other goods. The carts would be used for travel and for families going on outings and picnics. Visitors to Flagstaff Hill Maritime Village from 1986 to 1992 would enjoy watching a Clydesdale horse named Duke as he worked around the village with his driver Pat McGowan. He would be hitched to a wagon or to this lightweight spring cart or sometimes he would pull the wagon with the cart attached as a trailer. The cart was used for maintenance, carting loads of timber or stone around the site or from town to Flagstaff Hill. Sometimes Duke and the cart would take visitors for cart rides around the Village. Pat McGowan was known for his restoration of horse-drawn vehicles including this spring cart. He already had 40 years of horse handling experience when he began looking after Duke, feeding and harnessing him and driving the horse and cart around the Village. Pat’s dog ‘Yabbie’ would often join them. In August 1992 Duke had to be put down. Warrnambool Veterinary Clinic and other fund-raisers began well-supported appeals and the beloved horse was replaced by a Clydesdale also named Duke (the second), who began work in late October 1992. He, like his predecessor, had a quiet temperament and was comfortable in the traffic. The spring card is an example of vehicles used on farms, for business delivery and for domestic transport in the late-19th and early-20th century. This cart is of note for being associated with the Clydesdale horse Duke which pulled the cart around Flagstaff Hills in the 1980s and 1990s, representing transport of that period.Spring cart; two-wheeled cart with shallow box tray and plank seat bolted across the front. Wheels have metal rims and fourteen (14) wooden spokes. A plank is bolted from side to side. A decorative metal step is on the cart's left and has acorn cut-out shapes in the plate. Both wheels have a brake block that is operated by a lever on the cart's right. The cart has eight-leaf suspension from front to back. The box tray is painted blue and has decorative pale yellow detail. Each shaft pole has has a handle fitting on it. This unusual bread order once belonged to Dr. Angus’ household. It was donated to Flagstaff Hill Maritime Village by the family of Doctor William Roy Angus, Surgeon and Oculist. It is part of the “W.R. Angus Collection” includes historical medical equipment, surgical instruments and material once belonging to Dr Edward Ryan and Dr Thomas Francis Ryan, (both of Nhill, Victoria) as well as Dr Angus’ own belongings. The Collection’s history spans the medical practices of the two Doctors Ryan, from 1885-1926 plus that of Dr Angus, up until 1969. The bread would be delivered to homes by the baker’s delivery cart or van. This bread order would be set up on the baker’s delivery day with the appropriate tile for the day’s requirements facing outwards in the stand. The baker would know what the customer required without having to speak to the customer. ABOUT THE “W.R.ANGUS COLLECTION” Doctor William Roy Angus M.B., B.S., Adel., 1923, F.R.C.S. Edin.,1928 (also known as Dr Roy Angus) was born in Murrumbeena, Victoria in 1901 and lived until 1970. He qualified as a doctor in 1923 at University of Adelaide, was Resident Medical Officer at the Royal Adelaide Hospital in 1924 and for a period was house surgeon to Sir (then Mr.) Henry Simpson Newland. Dr Angus was briefly an Assistant to Dr Riddell of Kapunda, then commenced private practice at Curramulka, Yorke Peninsula, SA, where he was physician, surgeon and chemist. In 1926, he was appointed as new Medical Assistant to Dr Thomas Francis Ryan (T.F. Ryan, or Tom), in Nhill, Victoria, where his experiences included radiology and pharmacy. In 1927 he was Acting House Surgeon in Dr Tom Ryan’s absence. Dr Angus had become engaged to Gladys Forsyth and they decided he further his studies overseas in the UK in 1927. He studied at London University College Hospital and at Edinburgh Royal Infirmary and in 1928, was awarded FRCS (Fellow from the Royal College of Surgeons), Edinburgh. He worked his passage back to Australia as a Ship’s Surgeon on the on the Australian Commonwealth Line’s T.S.S. Largs Bay. Dr Angus married Gladys in 1929, in Ballarat. (They went on to have one son (Graham 1932, born in SA) and two daughters (Helen (died 12/07/1996) and Berenice (Berry), both born at Mira, Nhill ) According to Berry, her mother Gladys made a lot of their clothes. She was very talented and did some lovely embroidery including lingerie for her trousseau and beautifully handmade baby clothes. Dr Angus was a ‘flying doctor’ for the A.I.M. (Australian Inland Ministry) Aerial Medical Service in 1928 . Its first station was in the remote town of Oodnadatta, where Dr Angus was stationed. He was locum tenens there on North-South Railway at 21 Mile Camp. He took up this ‘flying doctor’ position in response to a call from Dr John Flynn; the organisation was later known as the Flying Doctor Service, then the Royal Flying Doctor Service. A lot of his work during this time involved dental surgery also. Between 1928-1932 he was surgeon at the Curramulka Hospital, Yorke Peninsula, South Australia. In 1933 Dr Angus returned to Nhill and purchased a share of the Nelson Street practice and Mira hospital (a 2 bed ward at the Nelson Street Practice) from Dr Les Middleton one of the Middleton Brothers, the current owners of what previously once Dr Tom Ryan’s practice. Dr Tom and his brother had worked as surgeons included eye surgery. Dr Tom Ryan performed many of his operations in the Mira private hospital on his premises. He had been House Surgeon at the Nhill Hospital 1902-1926. Dr Tom Ryan had one of the only two pieces of radiology equipment in Victoria during his practicing years – The Royal Melbourne Hospital had the other one. Over the years Dr Tom Ryan had gradually set up what was effectively a training school for country general-practitioner-surgeons. Each patient was carefully examined, including using the X-ray machine, and any surgery was discussed and planned with Dr Ryan’s assistants several days in advance. Dr Angus gained experience in using the X-ray machine there during his time as assistant to Dr Ryan. When Dr Angus bought into the Nelson Street premises in Nhill he was also appointed as the Nhill Hospital’s Honorary House Surgeon 1933-1938. His practitioner’s plate from his Nhill surgery is now mounted on the doorway to the Port Medical Office at Flagstaff Hill Maritime Village, Warrnambool. When Dr Angus took up practice in the Dr Edward and Dr Tom Ryan’s old premises he obtained their extensive collection of historical medical equipment and materials spanning 1884-1926. A large part of this collection is now on display at the Port Medical Office at Flagstaff Hill Maritime Village in Warrnambool. In 1939 Dr Angus and his family moved to Warrnambool where he purchased “Birchwood,” the 1852 home and medical practice of Dr John Hunter Henderson, at 214 Koroit Street. (This property was sold in1965 to the State Government and is now the site of the Warrnambool Police Station. and an ALDI sore is on the land that was once their tennis court). The Angus family was able to afford gardeners, cooks and maids; their home was a popular place for visiting dignitaries to stay whilst visiting Warrnambool. Dr Angus had his own silk worm farm at home in a Mulberry tree. His young daughter used his centrifuge for spinning the silk. Dr Angus was appointed on a part-time basis as Port Medical Officer (Health Officer) in Warrnambool and held this position until the 1940’s when the government no longer required the service of a Port Medical Officer in Warrnambool; he was thus Warrnambool’s last serving Port Medical Officer. (Masters of immigrant ships arriving in port reported incidents of diseases, illness and death and the Port Medical Officer made a decision on whether the ship required Quarantine and for how long, in this way preventing contagious illness from spreading from new immigrants to the residents already in the colony.) Dr Angus was a member of the Australian Medical Association, for 35 years and surgeon at the Warrnambool Base Hospital 1939-1942, He served as a Surgeon Captain during WWII1942-45, in Ballarat, Victoria, and in Bonegilla, N.S.W., completing his service just before the end of the war due to suffering from a heart attack. During his convalescence he carved an intricate and ‘most artistic’ chess set from the material that dentures were made from. He then studied ophthalmology at the Royal Melbourne Eye and Ear Hospital and created cosmetically superior artificial eyes by pioneering using the intrascleral cartilage. Angus received accolades from the Ophthalmological Society of Australasia for this work. He returned to Warrnambool to commence practice as an ophthalmologist, pioneering in artificial eye improvements. He was Honorary Consultant Ophthalmologist to Warrnambool Base Hospital for 31 years. He made monthly visits to Portland as a visiting surgeon, to perform eye surgery. He represented the Victorian South-West subdivision of the Australian Medical Association as its secretary between 1949 and 1956 and as chairman from 1956 to 1958. In 1968 Dr Angus was elected member of Spain’s Barraquer Institute of Barcelona after his research work in Intrasclearal cartilage grafting, becoming one of the few Australian ophthalmologists to receive this honour, and in the following year presented his final paper on Living Intrasclearal Cartilage Implants at the Inaugural Meeting of the Australian College of Ophthalmologists in Melbourne In his personal life Dr Angus was a Presbyterian and treated Sunday as a Sabbath, a day of rest. He would visit 3 or 4 country patients on a Sunday, taking his children along ‘for the ride’ and to visit with him. Sunday evenings he would play the pianola and sing Scottish songs to his family. One of Dr Angus’ patients was Margaret MacKenzie, author of a book on local shipwrecks that she’d seen as an eye witness from the late 1880’s in Peterborough, Victoria. In the early 1950’s Dr Angus, painted a picture of a shipwreck for the cover jacket of Margaret’s book, Shipwrecks and More Shipwrecks. She was blind in later life and her daughter wrote the actual book for her. Dr Angus and his wife Gladys were very involved in Warrnambool’s society with a strong interest in civic affairs. He had an interest in people and the community They were both involved in the creation of Flagstaff Hill, including the layout of the gardens. After his death (28th March 1970) his family requested his practitioner’s plate, medical instruments and some personal belongings be displayed in the Port Medical Office surgery at Flagstaff Hill Maritime Village, and be called the “W. R. Angus Collection”. The bread order represents a period of time when trades people and merchants would call on their customers, delivering their goods individually and supplying them immediately from their cart or van. W.R. Angus Collection is significant for still being located at the site it is connected with, Doctor Angus being the last Port Medical Officer in Warrnambool. The collection of medical instruments and other equipment is culturally significant, being an historical example of medicine from late 19th to mid-20th century. Dr Angus assisted Dr Tom Ryan, a pioneer in the use of X-rays and in ocular surgery. Bread order or baker's delivery order, part of the W.R. Angus Collection. The rectangular wooden stand contains a set of five wooden tiles that have an option for the bread order pressed into the wood on on each side. Stand has image of wheat sheaf and word “Bread“ pressed into the wood. All items have a small hole punched in the top. This medicine glass was previously owned by Sybilla Margaret Kucks (1904-1978), daughter of Henry and Julia Kucks, and granddaughter of William and Sibilia Kucks. Sibilla was born in Warrnambool and lived there until 1917 when she moved to Armadale, Victoria, with her family. The medicine glass was among her effects left to her nephew William when she passed away and has been looked after by his wife Eva and treasured as a memento of their Warrnambool heritage. Mrs Sibilla Kucks sold sweets and fancy cakes in her Liebig Street shop from 1873 until the 1880s. She operated one of Warrnambool’s earliest dedicated confectionery shops at a time when sweets were more commonly found in a fruiterer’s shop. Her window display would have been full of brightly coloured sweets in shiny glass jars tempting passers-by. Sibilla (née Leyendecker) married Johann Wilhelm Kucks in New York, USA in 1856. Both were originally from Prussia. They sailed to Australia on the Ocean Rover and arrived in Melbourne June 10th, 1858. Seventeen days later their second child, William Jnr., was born. Warrnambool’s population was around 2,000 in 1859 when Sibilla and Johann (known as “William”) settled here. William was employed as a tailor by Cramond & Dickson. In 1859 the couple bought George Fergusson’s bakery in Timor Street and opened it as “W. Kucks Baker”. Along with fancy breads and biscuits, he advertised baked dinners to order. William supplied bread to the Warrnambool Hospital until the 1880s. In 1873 William built a row of four shops at 140-146 Liebig Street, one of which became Sibilla’s confectionery shop, and another was the new home to W. Kucks Baker. In 1877 William constructed a building in Liebig Street for the Warrnambool Steam Packet Company, which has since been incorporated into the Warrnambool Art Gallery. Its western wall shows to older construction and design. William and Sibilla had five other children. By 1896 their sons William Jnr. and Henry operated the business as “Messrs Kucks Bros., Bakers & Confectioners”. They employed six staff and used three carts for deliveries over a thirty-mile radius. They catered for clubs and functions including the Exhibitors’ Picnic Luncheon for the Warrnambool Industrial and Arts Exhibition (1896-7). In 1907 Messrs Kucks Bros. baked a monster Pyramid Cake for a local bazaar. It contained coins of various sizes and weighed 84lbs (38kg). Everyone buying a slice hoped to be lucky enough to end up with a coin! William Kucks Jnr. also became licensee of Terang’s ”Wheatsheaf Hotel”, its name and logo connecting it to the family’s bakery in Warrnambool. William (1825-1911) and Sibilla (1833-1910) Kucks and three of their seven children are buried at the Warrnambool Cemetery in a family grave. John Sambell migrated from England and established his chemist and dentist business in Warrnambool around 1890 in his premises in Fairy Street. The business later included his son Herbert. The maker, Whitall Tatum & Co, is clearly marked on the base of the bottle. The company was a a well known maker of prescription bottles. He used the brand "W. T. & Co. from Mid-1870's until the late 1880's, moulded into his glassware. This medicine glass is significant as one of very few remaining items from the history of John Sambell, chemist and dentist, Warrnambool. It is also significant as an example of medical equipment that has a design still used today. It is also significant for its association with William and Sibilla Kucks, a colonial family in Warrnambool that was greatly involved in the community and commerce of early days in Warrnambool.Medicine glass, (measuring glass or dose cup), clear glass, round. The antique chemist measuring glass is wide at the top and tapers to a narrow base. The glass has side seams and an uneven base. The glass has imperfections ans bubbles. The base is uneven. The measuring scale lines have been scored into the glass and the measurements and other inscriptions have been moulded into the glass. Glass is from J. Sambell, chemist and dentist in Warrnambool. On the back there is a measuring scale in tablespoons and teaspoons. There is also an inscription of the maker on the base. The glass was made in the late 1880's by Whitall Tatum & Co., America.Embossed within a round border "J. This baker’s wagon or cart transported and delivered bread and other baked goods in the Warrnambool area. It currently has advertising for H.H. Smith & Co. Henry Huntington Smith (1857-1941) owned and operated his Warrnambool bakery in the late 19th and early 20th century. However, the design of the wagon is similar to those used by local bakers in the 1930s and 1940s and probably originated from Stephenson’s Bakery in Warrnambool, which operated around that time. The wagon’s original internal shelves were removed in the early days of Flagstaff Hill so that children could have rides around the village in a horse-driven cart. BAKERS’ HISTORY There were many bakeries in Warrnambool in the 19th to mid-20th century. Each bread bakery made horse and cart deliveries in its allocated zone. SMITH’S BAKERY; – as shown on the wagon’s signage. Henry Huntington Smith (1857-1941) was born and educated in Warrnambool. He worked at Davis’ steam biscuit factory in Timor Street before he began his own bakery business in 1885 near the corner of Fairy and Koroit Streets. A few years later Smith built a new bakery on the corner of Fairy and Lava Street where it still stands today (2025) as Monaghan’s Pharmacy. The building was designed by James McLeod in 1892 as a bakehouse, shop and residence for Smith The address was known locally as Smith’s Corner. Next door to the bakery, at 136 Fairy Street, were stables built by Jobbins and McLeod in 1886 for William Cust. A photograph in the archives of the Warrnambool and District Historical Society shows the 1892 building with four fancy horse-drawn wagons on the street with white-clad drivers and a promotional stand erected with 5 bakers in uniform and the signage “H H Smith & Co, Pastry Cooks and Confectioners”. One of the wagons appears to have “H H Smith” painted on the side. H.H. Smith & Co. placed an Advertisement in the Weekly Times in December 1896 promoting its business as bakers, confectioners and pastry cooks, praising their shop as an ‘ornament to the town’ with ‘neat appointments’ and ‘dainty decorations’. It also boasted of supplying a large number of customers within a twelve-mile radius of Warrnambool. In November 1919 The Warrnambool Standard announced the marriage of Henry H Smith, Mayor of Warrnambool, to Jeannie Samson-Goodman in East Adelaide. In the same newspaper was a notice that Frank Crossley was to open as baker and pastry cook in H.H. Smith’s premises. As well as being the proprietor of the H.H. Smith Bakery, Henry Huntington Smith was a Councillor for the Warrnambool Municipality from 1913 to 1937 and Mayer for two terms. In December 1919 during his first term as Mayor, he was honoured for the work he had done with returning soldiers after World War I, receiving a document in recognition of this work, presented by the Mothers, Wives and Sisters of returned soldiers. Smith was very interested and involved in the community in many roles, including being the Vice President of the first Warrnambool and District Historical Society. STEPHENSON’S BAKERY: – believed to be the past owner of the wagon. The last owner of the bakery was Harold Stephenson. Stephenson was enlisted in the A.I.F. and was invalided home in 1943 before the end of the Second World War. He also served as a Councillor from 1958 to 1976, during which time he served six terms as Mayor for the City of Warrnambool (1966-1973) while he had the bakery. He was very involved in many local organisations including the Warrnambool Surf Life Saving Club and the Road Race Committee. He died in 1985, lauded as being one of Warrnambool’s “most distinguished civic leaders”. It has been said that the baker injured in World War II invented a special contraption to enable him to get up into the wagon and that he alerted his customers that he was in their vicinity by blowing a whistle. The customers would come out and choose their bread from the back of his wagon then pay him for it. However, another account is given by a man who once earned pocket money by helping the baker on his rounds. He says that it was Stephenson, the owner and manager of the bakery, and not the delivery baker who received a significant injury during the war, making him unable to climb the stairs of his upstairs accommodation at the bakery, therefore causing him to sleep downstairs. At this time in the early to late 1940 Stephenson’s bakery had three wagons, one for each of the delivery rounds. The wagons were painted black and yellow. Two of the drivers were Stan Lake and Ali (Alec) Dean who both had wagons with the covered cabin design. The third driver was Bill Lake who had a flat wagon. Stan Lake delivered in the area around Lava and Koroit Streets, Ali Dean had another round and Bill Lake had the Dennington area. Bread continued to be delivered into the 1960s but by this time the delivery vehicles were motorised. The goods produced at Stephenson’s bakery included bread baked in different shaped tins such as High Tin, Sandwich and Vienna. Some shapes were easily divided into half by breaking them apart, therefore the baker could make two-quarter loaves from a half loaf, satisfying different needs. There was the option of white or brown bread, sweet buns, fruit buns and Boston buns. The baker’s assistant was known to take great delight in ‘trimming’ the broken halves of excess bread and crust, enjoying his treat. THE BAKERY PREMISES: – Southeast corner of Fairy and Lava Streets, Warrnambool. The building retains the original cast iron veranda. Above the veranda, a motif of a wheat sheaf in ornamental plaster can be seen. Inside the building, there are still some of the original fittings. The building was classified by the National Trust in August 1979. After the Second World War, an official system of zoning was introduced as a fair way for the baking industry to operate. In 1949 different pricing was introduced by the Government for either delivered or retail purchased bread. Many of the small local bakeries went out of business after the Government banned zoning. The way was made open for the larger bread manufacturers to enter the local market with cheaper prices. Some of those companies were Mc Queens, Tip Top, Twisties, and Sunicrust, (Mc Queens ‘new’ bakery building was where the current Toyworld shop now stands, is, in the Ozone carpark.) O’Grady’s Bakery, later changing hands and known as Burkes Bakery, was on Fairy Street near the Timor Street intersection, on the North West side. There was also a bakery named Almay. The baker’s wagon is significant because of its association with H.H. Smith’s Bakery in Warrnambool.. The H.H. Smith’s Bakery building on the corner of Fairy and Lava Streets, built in 1892, is classified by the National Trust, August 1979. Smith Street Warrnambool was named after Henry Huntington Smith, who was a Warrnambool Councillor 1913 – 1937 and Mayor 1919 – 1921. Baker’s wagon, often referred to as a baker’s cart. Four wheeled horse-drawn delivery wagon, front wheels smaller than rear wheels. Wagon is clad with metal sheets and lined with varnished timber panels. Wheels have metal rims, wooden spokes and rear wheels have wooden brake pads. Horse shaft is timber with metal fittings. Front has a metal lamp holder, brake lever, metal hand grips and decorative metal foot plates. The wagon has suspension leaves on back and sides and double suspension leaves on the front. Driver’s area at front has a roof, glass side windows and wooden box seat with hinged compartment accessing wagon storage area. Door above back of seat has buckled leather handgrip strap attached, door slides open for access to wagon area. Back of wagon has a wooden step and a split door; top door has ventilation louvers, both doors have metal latches. Wagon is painted cream with brown trim and signage and green step. Remnants of red and green paint are visible; underside of seat panel is painted grey. Wagon advertises H.H. Smith & Co. Baker, a Warrnambool business established in 1885, but is of a more modern design seen around 1930’s and 1940’s and most likely belonging to Stephenson's bakery. In the late 1800's early 1900's transporting goods by road was difficult and at times impossible because roads as thoroughfares did not exist.The means of travelling along the roads in the 1800's was by bullock wagon, horse pulled dray, pack horse or simply by foot. This is a pictorial record of transport in the mid 18th - early 19th century. Milk was delivered by the "milk man" direct to the homes of consumers. Delivery to homes in Orbost and district and was made initially by horse and cart and later by truck. .The dairy industry in Orbost and the surrounding area has always been a major contributor to the milk supply of Victoria.A clear glass half-pint milk or cream bottle. Moulded in two halves, made to take either a cork or cardboard disc pressed into top with wire grip. The bottle was meant to be recycled and the glass is therefore quite thick. This photograph was framed and mounted then presented to the South Warrnambool school by the South Warrnambool Centenary Committee in 1977 on the school's centenary year. The school was decommissioned and closed in the 1990s. In the photograph, people unload the coal from the ship beside the Breakwater and load it into the row of tramway carts. The coal would be sold to businesses and householders for the purpose of fuel for warmth, cooking, heating water and running machinery. The image shows the early days at the Port of Warrnambool. The building of the Warrnambool Breakwater had only just been completed. Steamships and sailing ships were frequent visitors to the port. Steam Navigation companies were plentiful, carrying passengers and freighting cargo such as coal, timber, food, livestock, furniture, hardware and haberdashery between Melbourne and the ports along the southwest coast of Victoria, including Warrnambool. The carts would take their loads into the township for distribution. The ship carrying the coal is thought to be the "S.S. Chillagoe" previously named "Speculant". In 1903 the Chillagoe was registered at the Port of Melbourne, and it sailed between Melbourne and Newcastle, New South Wales, where coal was mined and sold in significant quantities. In March 1890 a tragedy occurred when coal was being unloaded at the Warrnambool Breakwater. A local young man, David Ferrier, was working in the hold of the steamship Kurrara as its delivery of coal was being unloaded. A basket of coal fell from a sling onboard and came down upon Ferrier, breaking his back. He was not expected to live. In September 1890 there was a strike of coal workers but the Geelong Advertiser reported that a Warrnambool firm of coal merchants had recently received some large cargoes from Newcastle.The photograph is historically significant as it is connected with the local areas of the Warrnambool Breakwater, Lady Bay, and the South Warrnambool Primary School. The scene shows a moment in time when a steamship was unloading a shipment of coal onto tram carts on the Breakwater, which had only just been completed that year. The photograph was taken about 13 years after the opening of the South Warrnambool School, which was decommissioned around 20 years after it celebrated its centenary..
