Peterson & Co. in Melbourne. This company along with neighbouring tea importers offices were burnt down in a horrific building fire in Melbourne.This item was used in a period of time when the tea beveridge was the main hot beveridge to accompany meals, and "high tea" was a special treat to enjoy quality teas and "finger" food. In the rural sector of the Kiewa Valley, the favourite hot drink at "smoko" or other rest times was a freshly "brewed" pot or "billy" of tea. The hot drink tea was later in time challenged by the hot cup of coffee. This change occured at a later time in the rural sector than in cities or larger towns. The rural sector in this time frame was a lot more "traditional" in a lot of their day to day learned mores. Life style changes took longer to evolve mainly due to lack of media bombardment (mainly from city based advertisers) within the family home . It is embossed with content details and the name of the general tea agent. The main body has been fastened by pressed, not soldered connections.Embossed with the following "Ceylon Flavoured" and in bold large letters "RASAWATTE TEA" and below this in smaller print "ONE POUND NETT" This is encapsulated by Tea plant petals and vines. It is designed to separate and crush the pulp of the fruit in a way that is easy to operate. Lemon squeezers can be made from any solid, acid-resistant material, such as plastic, glass, metal (usually aluminum) or ceramic. The oldest known lemon squeezers were found in Kütahya, Turkey and date to the first quarter of the 18th century. These ceramic presses are in the traditional style of Turkish pottery of the 18th century and have a superficial resemblance to today's press equipment with cones, though they are designed differently. These examples were individually made, and specially designed for making the then popular citrus drink sorbet. Lemons are not native to northern Turkey, though during the 17th and 18th centuries they were imported in bulk to Constantinople.The fruit juice press is an example of early 20th century kitchen utensils and is not associated with an historical event, person or place, provenance is unable to be determined at this time and the item is believed to have been made around 1900. This item is currently being used in Flagstaffs Hill village display and regarded as significant as it demonstrates domestic kitchen utensils used around the turn of the 19th century and today is a collectable item. The store was also used as a post office until early 2000s. The general store is historically significant because it has a long association with Kangaroo Ground and has been an important centre of community life for more than 120 years - Council meetings used to be conducted in the front room of the store at a time when Kangaroo Ground rivalled Eltham as the major centre of the Shire. The general store is historically and aesthetically significant as one of a group of three well preserved public buildings in the Kangaroo Ground hamlet and as a major heritage component of Kangaroo Ground which was one of the earliest settled areas of the Shire and which has the character of an English village rather than an Australian settlement. Published: Nillumbik Now and Then / Marguerite Marshall 2008; photographs Alan King with Marguerite Marshall.; p77 Today the general store is an uncommon form of trade but the one at Kangaroo Ground continues a long tradition of friendliness and service. For more than 100 years it has been a centre of community life. In the settlement’s early days a previous general store, on the same site, was the meeting place for the Eltham District Road Board, precursor to the Eltham Shire Council. For years Kangaroo Ground rivalled Eltham as the shire’s major centre. It developed very differently from the rest of the shire as its rich soil attracted prosperous Presbyterian Scots who had large agricultural properties.1 The present store was built to replace another one, which had burnt down in 1898, after replacing a predecessor on the other side of the road in 1865. The store retains its outward character and its cellar, although inside it has changed considerably. It now includes a café and offers local produce, milk bar products, grocery items, gas and other fuel. Until early this century the store was also used as a post office. Kangaroo Ground’s first postmaster was Andrew Ross, who first operated from the school opposite, then from his hotel next to the present tennis court site. The first postmaster at this store was Edward Weller, followed in 1868 by James Anderson. At that time a mail coach ran three times a week between Eltham and Woods Point through Kangaroo Ground, Yarra Flats, Healesville, Fernshaw, Marysville and Matlock. Some early postmasters were Rodger, McLaughlin, Greenway and Burns.2 Burns was the only postmaster operating from the store. The others operated from Andrew Ross’s hotel. The mail service improved in 1892 when coaches ran from Melbourne to Queenstown (now known as St Andrews) and changed horses at Kangaroo Ground twice daily. The only telegraph office in the district at that time was at the Kangaroo Ground Post Office. Telegrams to outlying areas such as Queenstown and Kinglake had to be sent by hand. A local resident in the early 1900s often rode his pony to deliver telegrams and was paid one shilling a mile porterage. The store has also contributed to the lighter side of Kangaroo Ground life. During the years that Con Wraight owned the store, between 1906 and 1946, a new piano was needed for the Kangaroo Ground Hall, so monthly dances were held to raise money. When the piano was bought, a grand ball was held in the Kangaroo Ground Hall to celebrate the occasion and supper followed at Mr Wraight’s barn, cleaned especially for the occasion. Every New Year’s Eve, a Scottish piper would set off from between the store and the schoolhouse, playing his pipes, and march to Cameron’s Pigeon Bank homestead on the Kangaroo Ground-Warrandyte Road. Between 1914 and 1922, the store was a station for the Kangaroo Ground Bush Fire Brigade’s tanker. It consisted of a wooden barrel on a cart, fitted with a hand-pump, and stood on the side of the road outside the store. Joy Ness, who belonged to an early Kangaroo Ground family, moved here in 1940 and recalled her impressions of the store at that time: ‘It was a very dark shop stained in a dark colour and on the walls just below the ceiling hung hurricane lamps, ropes, kitchen utensils and other goods for sale. ‘Goods were weighed on a brass scale with weights, on which mothers also weighed their babies, because the nearest Infant Welfare Centre was at Greensborough. The bacon was cut with a hand slicer and later a pot-bellied stove warmed the store. Farmers and other locals used to gossip around it as they collected their daily mail. In those days the butter and cheese were kept in the cellar as no ice was delivered for cooling.’This collection of almost 130 photos about places and people within the Shire of Nillumbik, an urban and rural municipality in Melbourne's north, contributes to an understanding of the history of the Shire. Published in 2008 immediately prior to the Black Saturday bushfires of February 7, 2009, it documents sites that were impacted, and in some cases destroyed by the fires. It includes photographs taken especially for the publication, creating a unique time capsule representing the Shire in the early 21st century. Yet how many of you actually have thought “hey, where do forks come from?” Well, it takes one trip to China and a 3-year-old laughing at your face because of your desperate attempt to eat with chopsticks to finally appreciate something so ordinary such as a fork. So, where do forks come from? The early history of the fork is obscure. As a kitchen and dining utensil, it is believed to have originated in the Roman Empire, as proved by archaeological evidence. The personal table fork most likely originated in the Eastern Roman (or Byzantine) Empire. Its use spread to what is now the Middle East during the first millennium AD and then spread into Southern Europe during the second millennium. Bone forks had been found on the burial site of the Bronze Age Qijia culture (2400–1900 BC) as well as later Chinese dynasties’ tombs.The Ancient Greeks used the fork as a serving utensil. The use varied according to local customs, social class and the nature of food, but forks of the earlier periods were mostly used as cooking and serving utensils. Records show that by the 9th century a similar utensil known as a barjyn was in limited use in Persia within some elite circles. It gained a following in Italy before any other Western European region because of historical ties with Byzantium and continued to get popularity due to the increasing presence of pasta in the Italian diet. At first, pasta was consumed using a long wooden spike, but this eventually evolved into three spikes, design better suited to gathering the noodles. In Italy, it became commonplace by the 14th century and was almost universally used by the merchant and upper classes by 1600. It was proper for a guest to arrive with his fork and spoon enclosed in a box called a cadena; this usage was introduced to the French court with Catherine de’ Medici’s entourage. In Portugal, forks were first used at the time of Infanta Beatrice, Duchess of Viseu, King Manuel I of Portugal’s mother around 1450. However, forks were not commonly used in Western Europe until the 16th century when they became part of Italian etiquette. The utensil had also gained some currency in Spain by this time, and its use gradually spread to France. Nevertheless, most of Europe did not adopt the use of the fork until the 18th century. The fork’s adoption in northern Europe was slower. Pot Melting, circa mid to late 1900's
Before 1908 the words "melting pot" was a term relating to a "crucible" with a meaning of "a pot in which metals and other substances are melted (fused) to provide metal items of varying shapes and uses. From the mid 1900's this term changed and became more related to the "mixing" of social and ethnically diverse populations. The description used here is that of pre 1908. This melting pot was used in the early to late 1900's when produce and hardware shops were too far away from the Kiewa Valley and time was at the essence. The ability to manufacture as many "crucial " items at the home property was the difference between running a successful rural business or not. The isolation of the Kiewa Valley (before the 1950's), hindered the "time down" of machinery and important "widget" replacements. The ability of self sufficiency on properties is still a boon to rural properties as time lost is never really recovered.This melting pot is highly significant to the Kiewa Valley as it provides evidence that the graziers and cattle stations required to be self sufficient in all aspects of day to day maintenance and replenishment of worn materials requiring to be "manufactured " at the property and lack of replacements from commercially shelved products. This aspect of "survival" in the "bush" can be seen in the "huts" built on the Bogong High Plains to accommodate the seasonal grazing of cattle from the Kiewa Valley.This black melting pot is made of cast iron. The lid is missing. The top rim of the pot has three lips for poring accuracy. The formation of these lips are in a "triangle" formation. The top section of the body has a curve inwards reducing the pot diameter from 270mm at the base to 135mm.at the top. The handle is made from heavy gauge wire which is fastened to the body through two lugs (welded onto the top section of the pot) and fasten through a hole at the top of each lug. The handle has a "U" shape as it goes through the lug hole, ensuring no accidental fixture to any side thus allowing free swiveling from one side to the other . "BH" indented within a diamond shape. Pot Boiler, circa early 1900s
This cast iron "boiler" was produced by one of the largest foundries in England during the late 1700's and onwards. These products were "shipped to the far realms of the "British Empire". This source was one of the only ones available to the early settlers in Australia until the mid 1900's. The catch cry of those "early " times was "the best of British" which was ingrained into the early (Australian) settler's iron and cast iron purchasing mind set. It was not until after World War II did that mindset change, when both American and Asian based manufacturers' products were accepted by the Australian consumer. The city based consumer embraced the swing a lot earlier than the more "traditional" rural consumer. This cast iron 8 gallon "boiler" is very significant to the Kiewa Valley not only that large "boilers" were used to "boil" clothes clean, over an open flame source, but also because it demonstrates one of the most important "rural" mores founded by the "early" settlers in this region. That more was the very "close" tie to "Mother England" and the "establishment". The social and "family" values from the "English" way of life was ingrained until well past the day of the "Australian Federation". It was not until the friendly "American soldier" invasion during World War II that the "Empire" bondage was being eroded away. The transition from the good "rural war cry" of "Australia prospers off the sheep's back" was slipping away and the industrial monolith started its challenge. This change was the slowest in semi remote rural centres such as the Kiewa Valley. The "old English" values lingered on until the mid 1900's.This large (8 gallons) cast iron boiler is oval in shape and has a cast iron (swivel) carrying handle. The handle has a "bend" in the centre position to allow hook and straight type rods to facilitate the positioning of a "hot" boiler. This boiler would have been used over an open fire or placed on top of "coals". On the top rim and evenly spaced between the fixed handle joins is a slightly semi curved balancing/control lip.At the bottom (underneath) "CLARK & Co. PATENT", Below this a six star triangle with the letter "C" in the middle.. Tin Coffee Cylindrical, circa mid to late 1900's
... family condiments. This type of kitchen storage containers ...This "coffee" tin has by the "art deco" appearance its origins in the late 1950's to 1960's. This time period was one of accelerated growth both in the physical (housing) sense and the mental (new ideas and inventions) changes in "attitudes". These occurred more rapidly in cities but had its effects on the rural environment. The drinking of coffee was spurred on by easier distribution of imported food and drinks. Advertising by stronger radio links and then by television brought the variety of foods and drinks to semi isolated rural regions. The accessibility through greater information channels becoming available brought with it unbelievable ranges of goods and foodstuffs. Rural regions still relied on bulk supplies and relatively larger storage containers than those in cities. This "bulk" buying and storage "syndrome" was a lingering result of many years of "drought" periods when road transports met delays from flooded roadways in supplying population centres in the Kiewa Valley. The construction phases in building the SEC Vic Hydro electricity Scheme in the eastern sections of the Victorian Alps brought many changes to the quiet rural regions in the Kiewa Valley. Changes in population and social mores. The influx of a varied , mostly temporary, and "European flavoured cuisine" changes the "cuppa tea only" flavour to the have a "coffee break". The subliminal influence of the "American" films changed those children growing up in the post 1950s from the "English tea" to the "American coffee". This "Americanisation process has influenced not only rural Australia but also other areas throughout the world.This "insignificant" coffee tin is very significant as it demonstrates that the Kiewa Valley was becoming more accessible to reliable coffee supplies and general food items.The container was part of a "set" of containers that included tea, sugar,biscuits,flour, rice and other family condiments. This type of kitchen storage containers was brought about through changing patterns in tea and coffee useage and overall consumption. The need for travelling goods/merchant supply caravans to service the area became a diminishing factor, as a result of the establishment of grocery stores in Tawonga and Mount Beauty in the supply of previously "hard to get" groceries. This transition was precipitated by the SEC Vic Hydro Scheme of the 1940's to 1960's which increased the valley's population level three fold.This cylindrical tin has a pull/push lid(for easy access to the contents). It uses the Imperial measurements of ounces and pounds. There are 16 ounces (OZ) in one pound (LB), and each pound equals approximately 454 grams in Metric measurements. Scales have been used to measure and compare items for value for centuries. A weight was placed on one side of a balance and the object was placed on the other. Adjustments were made to either the weight or the object until the balance was horizontal, which meant that each side was the same weight. The Salter family business began in 1760 with spring makers, Richard and William Salter. In the late 18th century, Richard Salter invented the spring scale, where the weight of an object on the tray of the scale causes pressure on a spring in the scale. The pressure caused by gravity was then measured to calculate the weight of an object. Spring scales are still used today along with the more recent and accurate digital scales. The company began manufacturing in West Bromwich, England, in 1770. The firm was taken over by William’s sons, John and George. In 1824, after the death of John, the firm became George Salter & Co. T. & C. Clark & Company Limited was based at Shakespeare Foundry in Wolverhampton England and was founded in 1795 by Thomas and Charles Clark. The company grew to be one of the largest iron foundries in Wolverhampton and were pioneering in the manufacture of enamelled cast iron cookware and sanitary wares. The company's product range included thousands of items, both domestic and industrial. T. & C. Clark were pioneers in the use of enamelled cast ironware, after taking out a patent in 1839 guaranteeing their products to be free of lead or arsenic. Scales Weighing, early 1900's
Although these scales cannot be identified against a historical period of Australian development they are therefore placed in a time frame when commercial markings from manufacurers were not important enough to have domestic kitchen items labeled. These cast iron scales were made for domestic and possibly rural areas and not for cities where demand for known branded utensils was more an issue. These scales are very "basic" and not to the level of weighing detail that commercial scales had to be at. These scales do not show any visible markers for accurate measurement. The "near enough is good enough" principle can be related to these scales.These scales are significant as they identify one of the basic preparation items for the weighing of foodstuff before the televising of "cooking" shows (1960s onward). The meals for which quantity measurements are required for domestic cooking is not exact however the use of cup measurements for large dishes is tedious and these scales offer the capacity for a larger mixture and an easier method for the "cook". As the need for accurate measurements of ingrediants for rural domestic meals has in the past been not been critical the requirement of accuracy that these scales do not provide is of no consequence. Domestic kitchens in the Kiewa Valley and the type of meals produced would not have required the accuracy of ingrediants that "modern " international cuisines of the later 1900's require. These kitchen scale were used whenrecipes had the terms "pinch, dollop, squidge and smidgen" were about as accurate as most recipes needed to be.Black cast iron, medium weighing scales, with a two arm cradle. On one side of the cradle is a two half circle holding frame for the retention of the metal container scoop. This light weight steel scoop/dish allows for the weighing of loose grain or similar type material to be contained and held in place for establish its saleable contents. On the other side of the weighing cradle is a flat circular platform to hold various metal disc. All the disks used on this platform have their weight stamped on them. When the produced filled in the scoop balances with the metal weight on the opposite end of the balance match (visual horizontal appraisal) the appropriate quantity required is obtained. This scale does not have any visual markings on the arms to identify a true balance. It is therefore reasonable to assume that these scales were for domestic use only and not for commercial transactions. There are two weights that are useable with these scales, one is stamped "1 lB"(pound) and one stamped "1" and both are made as a solid round piece of cast metal.The smaller disc has a "1 lb" moulded and pressed form within a marked inner circle and a mouled ridge outer circle enclosure. Plate Hot - Camp Fire, circa early 1900s
This "camp fire" hot plate has been used from the early 1900's on camp drafts /droving cattle onto and from the Victorian high plains. The size of "camp" kitchens would depend on the amount of "cattle" men required to collect and move the "herd" to and from the "lush" high plains.This "camp fire" hot plate is significant because it was donated by a member of the Roper family (the Roper's of the Kiewa Valley) a "pioneer" family. This particular camp fire hot plate originated in Tasmania however the Victorian Alps are very similar to the Tasmanian mountain regions and this type of cooking utensil was, and still is, used in isolated regions e.g. large cattle properties in the Northern Territory. This Camp Fire hot plate was used on the High Plains at the Roper Hut for approximately 35 years.This open fire hot plate is made from caste iron. It has a circular flat (cooking) base, ideal for a few thick pieces of prime steak, a high semi circular handle with a large circular carry ring, to apply a thick stick or rod through it as an insulated handle (to position the hot plate where required over a fire). The "handle" can be folded down to save space when packing it in the saddle bags. The handle has a strong metal rivet on each end (is loose enough to allow it to be moved to either side e.g. flattened). This kettle was used by pioneer families, mainly rural, folk that needed a constant readily available source of boiling water, in or mainly outside the homestead.. This kettle was used in the early to late 1900's for the refreshment of stock men and farmers that had irregular "tea" breaks under sometimes hard and gruelling conditions.This kettle belonged and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. A scientific study started in 1947 to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This "camp draft" could take up to six weeks.This large cast iron kettle holds a capacity of three pints of water/tea. It has a flat base and mushroom shaped handle welded onto the "pot" below the rim of the pot opening. It has a rim to position the tea pot lid but no lid. This type of cast iron kettle was used by pioneer families, mainly rural in the early 1900's upon open fires (log). This kettle was used in the early to late 1900's for the refreshment of stock men and farmers that had irregular "tea" breaks under sometimes hard and gruelling conditions.This kettle belonged to and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. The Bogong High Plains area provided Kiewa Valley cattlemen a good supply of fodder to supplement their Kiewa Valley grazing areas. This "camp draft" activity , in the high plains, could take up to six weeks.This large cast iron modified camp pot (cauldron) has a long tap connection located at the bottom end. The "tap" is made from brass and has a simple elongated "bar" control swivel at the end to control the water flow. The tap suggests that only water was heated (to a constant boil) for the replenishment of cattlemen's, or other horse rider's, tea or coffee mugs. Refreshments at a "temporary" location on the Bogong High Plains. This large deep pan (with a long handle) was used by pioneer families, mainly rural folk, that needed a pan which could cope with an open fire heat source, in or mainly outside the homestead. This pan was used in the early to late 1900's for the "stews" and other meals required by hard working stock men and farmers that had irregular "lunch and dinner" breaks under sometimes hard and gruelling conditions. Hot plates were normally not in use.This "open fire" saucepan belonged, and was used by a Kiewa Valley, pioneer family, the Roper Family. This saucepan was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. This saucepan was one of an array of "open fire" cooking utensils used in the "camp draft" grazing in the Bogong High Plains and this could take up to six weeks. This kettle belonged and was used by a Kiewa Valley, pioneer family, the Roper Family. This kettle was moved from their Kiewa Valley property to their hut built on the Bogong High Plains. A scientific study started in 1947 to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This large (black, soot infused) cast iron saucepan has a "ten pint" holding capacity and was used on the "open fire", possible on the fire direct. Pie Iron Camping, circa mid to late 1900s
This Pie Iron was used in the mid to late 1900's when stock, both cattle and sheep, were grazed on the Bogong High Plains. Providing meals for stockmen over open fires, even in log cabins in the Victorian Alpine region, was usually by a "camp cook" or a stockman designated "cook" from the Valley station/property. The use of "camping cooking utensils were a necessity and not a "weekend" affair. Stockmen could spend up to six weeks on the plains and all their cooking needs required had to "pack horsed" from the valley below. A scientific study started in 1947, to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This item is highly significant to the Kiewa Valley as it demonstrates the kind of cooking utensils that were required for camp drafts in the Bogong High Plains environment. As the control of cattle and sheep in the High Plains was very demanding upon horse and rider, good "tucker" was a pre- requisite for a successful operation. As the time spent in this remote location was governed by the climatic condition maximum utilisation of the very good pastures in the High Plains was crucial to a successful and profitable season.This pie iron has two pie forms in horizontal configuration and both top and base rounded forms are connected at one end (Top) with pop rivet application. This application allows for the "opening" up of the two halves. The bodies are made from cast iron in a "cup" form and a metal rod and wooden handle extend to permit the opening of the two sides. The inner side of the "cups" are smooth which relates to pie requirements and not the jaffle/sandwich irons. One hundred years after the founding of the company, a factory in Esslingen began construction. At that time the company had 20 employees. In 1881, company commissioned Germany's first file production machine. In 1889, Friedrich Dick built a new factory in Kollwitz/Fleischmannstrasse in Esslingen, employing 100 people and expanding the product line to include knives for butchers and chefs, cleavers and other specialized tools. Files manufactured ranged from the smallest watchmaker's file to the largest (over 45 cm in length) square file. In 1997, the F Dick company moved to a new headquarters in Deizisau, Germany.
