The buy product of the milk was cream and butter. Once the cows had been milked, often by hand, women would place the milk in shallow dish, and next morning the cream would be separated from the milk. Or a cream separator machine would be used. The cream would then be churned by the paddles in the butter churner until it formed in butter clumps. Butter Pats would be used to take the butter out and press into triangle butter blocksThis butter churner is significant due to its historical value which explains how butter was made by hand before this process became mechanistically made. Many houses or small farms in the Kiewa Valley had these butter churns to make their own butter for their household or to sell. This has very good interpretation significance as it adds to the history of dairy industry in the Kiewa Valley. Faulding & Co was a pharmaceutical company founded in Adelaide, South Australia in 1845 by Francis Hardey Faulding 1816 – 1868, a native of Swinfleet, Yorkshire, He arrived in Sydney on the Nabob in February 1842,and travelled on the brig Dorset to Adelaide in May, where he opened a pharmacy at 5 Rundle Street in 1845.The pharmacy flourished, so he purchased a warehouse in Clarence Place in the city and transferred the manufacturing and wholesale arms of the business there. In 1861 he entered into partnership with Luther Scammell (1826–1910).a Yorkshireman, who had received medical training at Guy's Hospital, and arrived in Adelaide in 1849. Faulding died in 1868 and Scammell took over the business, however he was forced to retire in 1889 when the Bank of Adelaide threatened foreclosure after a series of failed mining and pastoral speculations. Two of his sons, Luther Robert Scammell FCS LSA ( 1858 – 1940) and William J. Scammell ( 1856 – 1928) acquired the manufacturing and wholesaling operations, and the business name, in 1888; the retail shops were sold to reduce the debt to the bank.The company expanded under the two brothers and later two sons of each became directors of the company. In June 1921 Faulding & Co. became a private company, with L.R. Scammell as chairman and managing director. He continued to run the firm's affairs until 1935.Two of the Faulding company's major innovations were the development of a process for distillation of eucalyptus oil, and the development of the test for determining the eucalyptol content of the oil. Faulding's success was founded on eucalyptus oil, which formed the basis of an antiseptic marketed as "Solyptol" (for soluble eucalyptus oil). The test became the industry standard, and the British Pharmacopoeia standard method in 1898. Other well-known products were Milk Emulsion (a pleasant alternative to cod-liver oil), Solyptol Soap, (which won a gold medal at the Franco-British Exhibition in London in 1908), Solyptol disinfectant, junket tablets, cordials, essential oils for perfumery and reagents such as Epsom salts, most produced in its factory in Thebarton The Faulding Co. built success around optimising the delivery of oral dosage form drugs. It now includes a café and offers local produce, milk bar ...The present store was built circa 1900 to replace another which had been destroyed by fire in 1898, which had replaced a predecessor on the opposite side of the road in 1865. The store was also used as a post office until early 2000s. The general store is historically significant because it has a long association with Kangaroo Ground and has been an important centre of community life for more than 120 years - Council meetings used to be conducted in the front room of the store at a time when Kangaroo Ground rivalled Eltham as the major centre of the Shire. The general store is historically and aesthetically significant as one of a group of three well preserved public buildings in the Kangaroo Ground hamlet and as a major heritage component of Kangaroo Ground which was one of the earliest settled areas of the Shire and which has the character of an English village rather than an Australian settlement. Published: Nillumbik Now and Then / Marguerite Marshall 2008; photographs Alan King with Marguerite Marshall.; p77 Today the general store is an uncommon form of trade but the one at Kangaroo Ground continues a long tradition of friendliness and service. For more than 100 years it has been a centre of community life. In the settlement’s early days a previous general store, on the same site, was the meeting place for the Eltham District Road Board, precursor to the Eltham Shire Council. For years Kangaroo Ground rivalled Eltham as the shire’s major centre. It developed very differently from the rest of the shire as its rich soil attracted prosperous Presbyterian Scots who had large agricultural properties.1 The present store was built to replace another one, which had burnt down in 1898, after replacing a predecessor on the other side of the road in 1865. The store retains its outward character and its cellar, although inside it has changed considerably. It now includes a café and offers local produce, milk bar products, grocery items, gas and other fuel. Until early this century the store was also used as a post office. Kangaroo Ground’s first postmaster was Andrew Ross, who first operated from the school opposite, then from his hotel next to the present tennis court site. The first postmaster at this store was Edward Weller, followed in 1868 by James Anderson. At that time a mail coach ran three times a week between Eltham and Woods Point through Kangaroo Ground, Yarra Flats, Healesville, Fernshaw, Marysville and Matlock. Some early postmasters were Rodger, McLaughlin, Greenway and Burns.2 Burns was the only postmaster operating from the store. The others operated from Andrew Ross’s hotel. The mail service improved in 1892 when coaches ran from Melbourne to Queenstown (now known as St Andrews) and changed horses at Kangaroo Ground twice daily. The only telegraph office in the district at that time was at the Kangaroo Ground Post Office. Telegrams to outlying areas such as Queenstown and Kinglake had to be sent by hand. A local resident in the early 1900s often rode his pony to deliver telegrams and was paid one shilling a mile porterage. The store has also contributed to the lighter side of Kangaroo Ground life. During the years that Con Wraight owned the store, between 1906 and 1946, a new piano was needed for the Kangaroo Ground Hall, so monthly dances were held to raise money. When the piano was bought, a grand ball was held in the Kangaroo Ground Hall to celebrate the occasion and supper followed at Mr Wraight’s barn, cleaned especially for the occasion. Every New Year’s Eve, a Scottish piper would set off from between the store and the schoolhouse, playing his pipes, and march to Cameron’s Pigeon Bank homestead on the Kangaroo Ground-Warrandyte Road. Between 1914 and 1922, the store was a station for the Kangaroo Ground Bush Fire Brigade’s tanker. It consisted of a wooden barrel on a cart, fitted with a hand-pump, and stood on the side of the road outside the store. Joy Ness, who belonged to an early Kangaroo Ground family, moved here in 1940 and recalled her impressions of the store at that time: ‘It was a very dark shop stained in a dark colour and on the walls just below the ceiling hung hurricane lamps, ropes, kitchen utensils and other goods for sale. ‘Goods were weighed on a brass scale with weights, on which mothers also weighed their babies, because the nearest Infant Welfare Centre was at Greensborough. The bacon was cut with a hand slicer and later a pot-bellied stove warmed the store. Farmers and other locals used to gossip around it as they collected their daily mail. In those days the butter and cheese were kept in the cellar as no ice was delivered for cooling.’This collection of almost 130 photos about places and people within the Shire of Nillumbik, an urban and rural municipality in Melbourne's north, contributes to an understanding of the history of the Shire. Published in 2008 immediately prior to the Black Saturday bushfires of February 7, 2009, it documents sites that were impacted, and in some cases destroyed by the fires. It includes photographs taken especially for the publication, creating a unique time capsule representing the Shire in the early 21st century. The first fully artificial infant milk formula, Farine Lactee ...The Wodonga Historical Society Haeusler Collection provides invaluable insight into life in late nineteenth and early twentieth century north east Victoria. The collection comprises manuscripts, personal artefacts used by the Haeusler family on their farm in Wodonga, and a set of glass negatives which offer a unique visual snapshot of the domestic and social lives of the Haeusler family and local Wodonga community. The Haeusler family migrated from Prussia (Germany) to South Australia in the 1840s and 1850s, before purchasing 100 acres of Crown Land made available under the Victorian Lands Act 1862 (also known as ‘Duffy’s Land Act’) in 1866 in what is now Wodonga West. The Haeusler family were one of several German families to migrate from South Australia to Wodonga in the 1860s. This item is a Nestlé Lactogen baby formula measuring scoop used in the preparation of formula for bottle feeding. It was used by Ilma Margaret Ernestine Haeusler (née Tasker, b.1900 in Tallangatta) to feed her son Alfred who was born in 1922. Ilma died in childbirth in 1928. This measuring spoon is one of several objects in the Haeusler Collection concerning early childhood that provide insight into family and home life in early twentieth century Wodonga. The first fully artificial infant milk formula, Farine Lactee, was developed in the 1860s. Companies continued to attempt to develop synthetic formulas which nutritionally replicated human breast milk in the decades that followed. Nestlé began producing Lactogen in 1921. It was marketed to women as a nutritionally superior substitute for breast milk, and as a nutritional supplement for breast feeding mothers. From the 1920s, when the Haeusler Collection measure was produced and used, Nestlé employed nurses in major Australian cities to promote Lactogen and its supposed health benefits to new mothers. They also used print advertisements to offer free product samples and instruction booklets advising on pregnancy and infant care for the same purpose. Nestlé was formed in 1905 by the merger of the Anglo-Swiss Milk Company, established in 1866 by brothers George and Charles Page, and Farine Lactée Henri Nestlé, founded in 1866 by Henri Nestlé. The company grew significantly during the First World War and again following the Second World War, expanding its offerings beyond its early condensed milk and infant formula products. In the twenty-first century, Nestlé has faced criticism and boycotts over its decision to market baby formula as an alternative to breastfeeding in developing countries. The adoption of bottle feeding in countries without access to clean water and sanitation infrastructure has contributed to high infant mortality rates. This item has well documented provenance and a known owner. It forms part of a significant and representative historical collection which reflects the local history of Wodonga. Malleys Ltd was established in about 1890 by Francis Malley (1863-1932). This firm was located in the Sydney suburb of Alexandria, in McEvoy Street. They manufactured items for use in the dairy industry, as well as for hardware related to building and plumbing. Many of the Malley dairy products were sold under the "Sunrise" name. Malley retired in 1912. In 1931 there were branches at Parramatta, Hurstville & North Sydney. An early item made by an Australian manufacturer of dairy equipment in Australia specifically for the local market. Terra cotta is the perfect medium to manufacture items for keeping foods and liquids cool. When water is added to the base, the terra cotta body absorbs it and the subsequent evaporation creates a cooling effect for the contents. It is particularly effective when used to keep milk, cheese, butter and bottles of wine cool.Terra cotta was one of the first ceramic materials to be used.Terra cotta cooler, with bell shaped lid that is open at the top, but with a rim for holding water. There are ventilation holes around the base of the lid. The top stands inside the base. Functional object - Tile from the floor of the Nestle Factory - Dennington, Early to mid 20th Century
The Nestle factory at Dennington was commenced in 1907 and proved to be a big boost to the local economy. The first product manufactured was sweetened condensed milk which began in 1911 and by 1944 was the largest plant in the Southern Hemisphere. They went on to produce Lactogen, full cream milk powder and in 1966 Milo and Nescafe. On average up to 650 people were employed. Nestle relinquished their link with the site when it was sold to Fonterra in 2005. A relic from a significant part of Warrnambool’s history, industry and agriculture and a large number of long serving employees.Terracotta coloured six sided, one side flat and the reverse with raised bars. Mr P L Phillips operated a general store in Liebig Street in the early part of the 20th Century. He was a highly regarded member of the community. He was community minded and promoted support for local industry, advertising his locally made or sourced products. He and his wife were involved in the Congregational church and music. He was mentioned in The Warrnambool Standard as arranging an Honour Roll for the Aboriginal soldiers who fought in WW1, with two losing their lives. The Nestle Company has been a long established business and major employer in Warrnambool (Dennington) since the early 20th century until it was purchased by Fonterra around 2000. The significance of this item lies in the connection of a large company with a strong presence in Warrnambool, and a small business combining to promote a patriotic theme which would have been very important in the days proceeding the First World War. Light white card with details enclosed within a light grey frame and text. Nestle Milk is in large text across the top, above a coloured picture depicting soldier and sailor in uniform in oval with kangaroo and emu in gold. These two bottles have contained milk sold by the Warrnambool firm of Antarctic Ice Pty Ltd. in the mid 20th century.In the 1930s a pasteurizing plant was set up in Warrnambool in conjunction with an ice works in Kepler Street known as Antarctic Ice (Good and Stevenson). This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These lids are missing.The bottles have lettering impressed into the glass. ‘This bottle contains milk bottled for sale by Antarctic Ice Products Pty Ltd Warrnambool and always remains their property. These are milk bottles from the Warrnambool firm of Antarctic Ice. These bottles are of great interest, firstly as examples of the pint bottles in which we used to receive bottled milk in the mid 20th century and secondly as examples of the bottles used by an important local Warrnambool firm, Antarctic Ice. These are six clear glass one pint milk bottles. They have round bases and bodies tapering through to the neck with a round moulded glass top. Domestic object - Butter Churn, Cherry and Sons, 1890-1920
The subject item is a good example of a large, hand-operated Bentwood box butter churn used to make up to 14 pounds of butter. It was made in Gisborne, Victoria, by the famous manufacturer, E. Cherry, and is known as an Improved Patent No.2 model probably dating from the late 1800s. The Cherry works specialised in making all types of butter churns and equipment for both domestic use on farms and small butter factories during the late nineteenth and early to mid. twentieth centuries. Milk was "separated" to retrieve the cream which was then beaten to make butter. E Cherry began making various models of Cherry butter churns in 1858, Edward Cherry migrated from Herefordshire England to Australia in 1855 with his wife Ann Appleby, nee Davis, and established a joinery workshop at Gisborne, Victoria. He began by making butter churns in his spare time and his product soon became popular allowing him to establish a viable business. A factory was established in 1875 and he started to make churns of all sizes including up to industrial scale. He exported his products to many countries around the world, Edward Cherry died in 1909 and the business was then run by his son George until he died in 1917. E Cherry's other son Thomas (1861-1945) was also involved in the firm maintaining an interest for several years. He had been born in Gisborne and became a senior house medical surgeon at the Melbourne Hospital in 1890. He continued his studies at Kings College London, eventually becoming a renowned bacteriologist and agricultural scientist. This is a common small 'meat safe' used in most homes prior to the arrival of Refrigerators. Food, such as milk, butter, cooked meat would be stored for a short time in this safe. This is done through a mechanical process, via a crank used to manually turn a rotating device inside the barrel shaped churn. The agitation of the cream, caused by the mechanical motion of the device, disrupts the milk fat. The membranes that surround the fats are broken down, subsequently forming clumps known as butter grains. These butter grains, during the process of churning, fuse with each other and form larger fat globules. Air bubbles are introduced into these fat globules via the continued mechanical action of the churn. The butter grains become more dense as fat globules attach to them while the air is forced out of the mixture. This process creates a liquid known as buttermilk. With constant churning, the fat globules eventually form solid butter and separate from the buttermilk. The buttermilk is then drained off and the butter is squeezed to eliminate excess liquid and to form it into a solid mass. Then rinsing could be done simply by washing in water, followed by draining, salting and working or "kneading" the butter with a pair of wooden butter pats, or with bare hands. This is a paddle churn, a barrel that contains a paddle, which is operated by a handle. The paddle churned the butter inside the container when the handle was turned. Alfred R Varcoe was a dairyman with stables, cart shed and his house in Eliza Street, Black Rock, Victoria. Dairy farming was established early in the settlement of the Brighton / Moorabbin area following the Dendy's Special Survey 1841 and subsequent land sales c1850. There are two distinct types of milk consumption: a natural source of nutrition for all infant mammals and a food product for humans of all ages that is derived from other animals. Milk is a key contributor to improving nutrition and food security particularly in developing countries. Improvements in livestock and dairy technology offer significant promise in reducing poverty and malnutrition in the world. Pasteurization is used to kill harmful micro-organisms by heating the milk for a short time and then immediately cooling it. In the past, milk was always packaged in glass milk bottles The first glass bottle packaging for milk was used in the 1870s. The first company to do so may have been the New York Dairy Company in 1877 with a small glass lid and a tin clip. Lewis P. Whiteman holds the first patent for a glass milk bottle c1884,which was sealed with a waxed paper disk. The Express Dairy Company in England began glass bottle production in 1880. Melbourne Glass Bottle Works Spotswood 1880 - 1990. Milk cartons first came to Australia in 1958, when the Model Dairy in Melbourne began packaging milk in 150 ml and 500 ml cartons. At the time, 160,000 new glass bottles were needed in Melbourne alone every week to keep up the delivery of 1.3 million bottles of milk a day c1970, the blow-moulded disposable plastic milk bottle was introduced. In 1987, only about 2% of milk was still being sold in glass bottles. Glass milk bottles are now rare. General use of milk bottles is usually associated with the 20th century , with occasional late 19th century. Initially, milk was delivered in cans stacked upright in a wagon. At each stop, someone, usually the wife of the house, would bring a pitcher or a pail to the wagon, and the milk man would ladle out the desired amount of milk. Needless to say, this practice was hazardous and unhealthy. The New York State Tuberculosis Association condemned the practice of selling “loose milk,” still being conducted in New York City in 1922, as a major cause for the spread of tuberculosis (Glass Container1922:8). This bottle was manufactured for the Lady Talbot Milk Institute. The Institute was initiated circa 1900 by Lady Talbot wife of Sir Reginald Arthur James Talbot, Governor of Victoria (1904 to 1908). From 1908 the Lady Talbot Milk Institute provided "pure" unpasteurized cows milk to specific mothers throughout Victoria. Similar bottles were filled with Specially Supervised "Nursery Milk". The reason for establishing this specialised nursing milk was to reduce the high mortality rate of infants(not on breast milk) in the early 1900s due to contaminated milk supplies. Pasteurized milk became available after World War II which ensured that milk consumed by infants (not able to obtain breast milk) was free from any contaminants. Bottled milk distributed by the Lady Talbot Milk Institute was used by specific mothers of infants in lieu of breast milk. As this requirement was throughout Victoria some nursing mothers within the Kiewa Valley and in the SEC Company town of Mount Beauty needing this service were covered. The establishment(Circa 2000) of breast milk supply from donor mothers throughout Australia has replaced the fundamental product initiated by the Talbot Milk Institute. The slogan "Breast is best" initiated by the Nursing Mothers Association is one of the major supporters of the mother's milk bank supplies.One pint wide necked refillable glass milk bottle. Butter Stamp Block, Circa 1950
At the time when this shortbread / butter stamp block was used, rural dairies and larger properties who manufactured their own butter used butter stamps blocks for identifying the source of the butter or for decoration.. The patterns stamped into the warmed butter provided for a range of decorative visual enhancement to the "plain" and "boring" straight leveled normal butter surface. Although the wooden surfaces could be hard to keep clean commercial usage would have been limited and eventually replaced by a non porous and hygienically cleaner material. Greater hygiene controls where introduced. from the late 1940s on. These controls were the result of high infectious illnesses due to contaminated milk and dairy handling methods.This shortbread / butter stamp was used by a Kiewa Valley dairy and it presents what the domestic butter beautification processes were available during the mid to latter 1900s was. Their was a pride by rural properties in their produce and its by-products.This shortbread / butter stamp is made from wood, round and fashioned from a flat bed to a dome top. The top has a round moulded hole with screw indentations for fastening a pressure pole. The pattern on the face of the stamp is of an eleven petalled flower pattern around a small circular flower head. Both the head and petals have indentations which are will produce raised points in the pressed butter. Enclosing the flower pattern is a pattern which when pressed against the butter would produce small ridges radiating outward.On the dome stamped in black ink "T. & W. Bottled Phenyle cleaner was used throughout the 1900's in domestic kitchens, toilets and other "clean, germ free" environments. Some of these environments would encompass dairying milk handling rooms and hospital kitchens and ablution areas. It is a product which has resulted in the poisoning of some unwitting users (newspaper accounts of a woman in 1928 who drank some phenyle mistakenly for wine and died). The reliance of effective poisonous cleaning products in kitchens, especially in the 1900's was and is still a very hazardous element that the "most pivotal place in a house" contains. In the era when this particular bottle was used (1920's) the main means where consumed around the kitchen table, and this was especially so in rural areas. Keeping this area "germ" free was a mandatory requirement.This bottle is significant to the Kiewa Valley because this area was mostly rural with "out houses" and milk collection areas that required that "extra attention" of sanitation. Rural areas also where more prone to have the kitchen area as a general meeting place for the family before dinner and other meals. Sanitation was of greater importance in rural areas, due to the greater distances to hospitals and doctors if contamination occurred. City homes at this time frame had lounge rooms for the daily get together of the family unit. This was an era before the television and computer age fragmented and isolated family members from one another. This was a time that family members grouped together in the kitchen to find out "the latest news".This amber glass, diamond shaped bottle with cork stopper once contained Phenyle. Phenyle is a highly poisonous liquid. The amber opaque glass was used and not a clear glass to highlight it's content. It has a cork stopper at the top of a slender neck. All the glass embossed writing is highlighted by a string of crosses. The cross was used to enforce a visual danger sign.On one side "THIS BOTTLE IS THE PROPERTY OF" and in large print underneath "KITCHEN'S" and below this and underlined "POISONOUS". On the next side "NOT TO BE TAKEN" and next side in very large print and surrounded by a border "PHENYLE" with crosses enclosing it. On the bottom of a "blank side is "REGd. ... by products contaminating their fresh milk containers and storage ...This item was used in conjunction with the Suddeth (Sudden Death) Carbon Bi-siilphide fumigator during many rabbit plagues that invaded Victoria and NSW before CSIRO introduced the myxomatosis virus in 1950.The contents of this jug was very important pre 1950 for all rural areas which suffered under the annual mice plagues, especially the wheat producing regions. Milk producers suffered from the mice by products contaminating their fresh milk containers and storage facilities. Rabbit warrens causing farm machinery instabilities and also horseback activities eg mustering herds.This glazed pottery jug has a screw on lid and a cream coloured body with a caramel brown neck. The remnance of a handle, which has been broken off is located at the top just below the the rim of the lid.On one side below the neck and within a black boundary mark "SUDDETH" and below "SMOKE MIXTURE No. 2" and sandwiched between two black lines "POISON". Squeegee - Tea Tree, circa mid to late 1900's
This "home made" squeegee was manufactured in the mid to late 1900's by an ingenuous dairyman as a solution to the removal of cow "pats" from the concrete floors of his "milking" sheds. The tea tree made squeegee (being made from nature's anti bacterial material) was an excellent hygienic implement to use. This "home made" wooden squeegee is very significant to the Kiewa Valley and its surrounding regions because it highlights the natural ingenuity found in the pioneer farmer, grazier and other rural folk. It demonstrates the "mother of invention and adaptation" is very strong in rural areas where "off the shelf" products were a rare quantity. Part of the natural psyche of the rural Australian inhabitants is the ability to produce inventions that overcome physical restrictive conditions, "the man/woman of all trades" is an apt description of the pioneers of yesteryear and of those to come.The squeegee handle is a long branch made from a tea tree, inserted into the upper flat side of a slab of tea tree wood which is flat on one side and curved on the other, the natural curve of the tree trunk. This certificate was awarded in appreciation of 25 years service to the Nestle Company which operated a dairy factory at Dennington in Warrnambool. The company came to Warrnambool in 1907 and purchased 17 acres at Dennington and a new dairy plant was established by 1911. At its peak it employed 600 people and processed 55000 gallons daily in the milk condensery which is a process whereby much of the water content is drawn from the milk and sugar is added making a product which has a long shelf life and because it is processed at low temperature the milk maintains much of its vitamin content.A certificate which links a local person to a long and well known industry in Warrnambool and the Western district.Cream soft card certificate with red and black text.Mr H Goodall. Warrnambool Cheese and Butter Factory at Allansford commenced in 1888. By the early 1900s it had 3 subsidiary creameries where farmers delivered their milk. Often the farmers collected the skim milk to feed pigs. At this time bacon was considered to be a dairy product. Warrnambool Cheese and Butter Factory Company was formed by a group of Warrnambool business men. The company was registered in May 1888 and commenced commercial production in November 1888. The company retained its independence for more than 125 years until acquired by Canadian firm Saputo. It has operated from the same site since its inception and also has an office in Japan. Milk processing is undertaken by Sungold. Milk powder for export is also produced on-site. Cheese World is a retail arm of the company operates on a connected site selling company products, local food products, wine and cheese tasting. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. Perfect Cheese Company was founded in 1930 by newly-arrived Italian migrant Natale Paquale Italiano. The company specialised in traditional Italian-style cheese but also produced Greek, Cypriot and Maltese origin cheeses. The cheeses were sold in Australia and Italy with all products being matured and non-processed. The company remained in operation until the early 2000s.This weighing machine is significant as it represents the machinery used by an early cheese production company.Large metal machine with cast iron with a cast iron frame and a stainless steel rectangular bowl in a cradle. The round weighing scale at the top shows a weight scale up to 1100 pounds.
