The late 19th to early 20th century stone cottage with weatherboard extensions. From research, it has been determined that the cottage was the Port Fairy (Belfast) Lighthouse Keepers cottage. The dome roof in the background indicates a lighthouse, in which case the cottage would have been the living quarters for a lighthouse keeper and assistant keeper. The narrow poles could have been for signals and antennae. The object on the rock stack looks like a large metal milk can.The photograph shows a typical late 19th to early 20th century cottage, abandoned at dilapidated for many years. Black and white rectangular photograph mounted on card. The image shows a dilapidated stone cottage with an old picket fence. Extending behind the stone cottage are gabled roofs above weatherboard walls. The cottage has corrugated roof sheets of different colours, and four chimneys, three with chimney pots. From research, it has been determined that the cottage was the Port Fairy (Belfast) Lighthouse Keepers cottage. Near the fenceline on the left, a corrugated water tank is positioned below a pipe joined to the roof gutter. Nearby are a timber shed and timber walls or screens. In the background are two tall narrow poles with spheres on top, higher than the cottage, with one pole on each side, the left one attached to the building. A domed roof with a knob on top is on the right behind trees. Several angular shapes appear on the horizon on the left, one almost hidden by the trees. The foreground is rocky and slopes uphill on the right. At the foot of the slope is a stack of closely fitted rocks with an object shaped like a milk can on top and an object to its left that is like an open grid. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. This photograph shows the Orbost Butter factory, which in 1917, installed a very successful electric light. the dark heap to the left of the road is Supposedly the grave of "Dan the Cook" who was speared by Aborigines in 1857. Dan Moylan, known as "Dan the Cook"was speared to death in 1851 at Orbost Station, Snowy River as punishment for kidnapping a young Aboriginal girl and holding her for three days, refusing to release her. The men of the tribe congregated at Dan's hut. When Dan came outside, a volley of spears was launched at him, killing him. In the tragic aftermath, the camp at Milly Creek was attacked in retribution and a number of Gunai/Kurnai people were killed. The Orbost Butter and Produce Co. Ltd was registered on June 1st 1893 and was an important source of income to the Orbost district. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw. This machine was the first double action (suction and pulsator) milking machine. This method is still in use today. Invented by Alexander Gillies,of Terang. The LKG milking machine is of State significance because it represents a high degree of technical achievement. It demonstrates the innovation developed by a Western District farmer, Alexander Gillies, that enabled dairy farms throughout Victoria to move successfully from hand milking to machine milking, thus contributing to the mechanisation of one of Victoria's major rural industries.
