Hung in the public bar of the Rose and Crown Hotel in Bay Street soon after the 2nd World War until major renovations were carried out in aprrox 1986/7. It was then returned or donated to the Port Melbourne Sub-Branch of the RSL, but due to diminishing membership they soon donated it to the PMCC for safe keeping or display. This device would separate the cream from milk using a hand operated lever. When turned, the lever would activate a disc which would spin the separator bowl at a great speed. Through this use of centrifugal force, the cream would gather in the middle while the milk would be pulled towards the outside walls of the bowl. Once the rotation ceased, the milk and cream would flow out of two separate spouts. Prior to the invention of the separator, gravity was used to naturally separate the cream from the milk. The cream rose to the top and was then skimmed by hand. This process was lengthy and often resulted in sour milk, so the invention of the mechanical separator was popular in the dairy industry as there was less waste and encouraged greater production levels. Sir William Gilliatt was born in 1884 in Lincolnshire. He was educated at Boston Grammar School and Wellingborough College, and began his medical career at the Middlesex Hospital in 1925. He became obstetric and gynaecological surgeon at King's College Hospital, a position he held until his retirement in 1946. Gilliatt was a foundation fellow of RCOG, U.K. and served on the Council from 1932 until his death in 1956. He was also the President of the RCOG from 1946 until 1949. Gilliatt was known to be an excellent clinical teacher and was gynaecologist to the Royal family for two decades. He wrote very little for the medical journals, but his influence on obstetric and gynaecological practice was considerable and his attention to detail was painstaking. He was killed in a motor accident on 27 November 1956.Framed black and white photograph.
