English-born Henry Phillips (1821-1896) came to Australia with his wife Elizabeth in 1849. They lived for some time in Port Fairy. In 1865 Henry formed a partnership with Christopher Beattie and established the Warrnambool undertaking business of Beattie and Phillips. This business continued on after the deaths of the founders and lasted until the year 2000. In Warrnambool Henry Phillips was involved in the management of the Mechanics Institute. These tools are retained as examples of vintage tools and as mementoes of the Warrnambool carpenter and businessman, Henry Phillips.These are nine brown wooden tools, rectangular in shape and similar in size and design. An extra piece of wood adjoins one side of each tool. A thin metal blade has been inserted at an angle in each tool in a slot at the top of the wooden blocks and these have small wooden pieces resting on them. He was educated at local state schools and became a draper's assistant at Euroa. A testimonial as 'an energetic, pushing salesman, a careful stock-keeper … honest and industrious' gained him city experience with Ball & Welch Ltd, drapers, in their Carlton store. He used an inheritance to open a drapery store at Korumburra, south Gippsland, in 1895, moving to Rutherglen in the upper Murray valley in 1899. Frustrated by irregular stock deliveries, he moved to Fitzroy, Melbourne, in 1902, seeking a warehouse and the benefits of combined supplies for effective development of country trading. By 1905 he was producing many stock items at Northcote and had established retail outlets at Bendigo and Warracknabeal. Branches at Echuca, Numurkah and Yarrawonga followed in 1906, with ten more in 1907. He moved his city establishment to East Malvern in 1911, and had opened forty shops by 1920 and seventy-four by 1928. All were managed by women, on a strictly cash basis. Drapery remained the main line, supplemented by ironmongery, crockery, school requisites and toys. Gilpin saw the Depression years as a challenge. Between 1928 and 1931 he established eighteen new branches, including two in Tasmania, at Devonport and Ulverstone. The chain included South Australian branches at Mount Gambier, Millicent and Renmark, twenty-five stores in southern and western New South Wales, and ten in suburban Melbourne. Gilpin's Chain Store News was issued monthly. In 1944 Foy & Gibson acquired a controlling interest in Gilpin's business and in 1951 the chain was bought by G. J. Coles & Co. Ltd for £1,250,000. It was used to ram or mould butter into 56 pound butter boxes for bulk supply or for later cutting up into smaller quantities. Warrnambool was, and is still today, the centre of an important dairying industry with several large milk, cheese and butter factories in the area. The Warrnambool Cheese and Butter Factory at Allansford is the oldest operating factory of this type in Victoria and was established in 1888. The production of butter in the area was greatly accelerated by the invention of refrigeration in the early 1880s, enabling butter to be transported overseas. Warrnambool had two butter box factories which both closed in the 1920s. Up to the mid 1950s the production of butter was largely a hand process.This butter ram is of considerable interest as an example of the early tools used in the local butter industry.This is a heavy solid wooden block in a rectangular shape with the top shaped in the form of a pyramidal base.
