The entries date from 1913 to 1915 and the names of those with accounts are mostly well-known residents of Warrnambool at the time. The items bought include hams, shoulders, lard, sides, German sausage, pork sausages, bacon, hocks and bones. The book was found in the old Mackay Taylor law firm building and was obviously in storage with that firm. The owner of the accounts book would have been a client of the law firm. Mackay Taylor was formed in 1893 with the merger of the law firms of George Sutherland Mackay and James Fletcher, a business that was known originally as Fletcher and Mackay and then changed to Mackay and Taylor in the 1920s. The business was at 131 Kepler Street.This accounts book is of some interest as it contains the names of many prominent Warrnambool people and their meat-related purchases in the 1913-1915 time frame. These include the names Battarbee, Ward, Milvertion, Harrington, Murrell, Powell, Younger, Smith and Russell. The lists of items bought show the lifestyles and eating habits of the time with some bulk buying of large pieces of meat, some for hotels etc. This is a small maroon coloured bound book of 173 pages (double-sided). There are pages with alphabetical tabs at the start of the book. Inside the front and back covers are inserts of heavy quality paper with a blue and red design. The company was wound up but the brewery continued to operate as Sheldrick and Co., with Walter Sheldrick and Thomas Price as principal partners. Sheldrick died in 1893 but the brewery continued with various partners in the business. In 1894 the brewery was sold to James W. McGee and Co. and this firm operated the brewery until its demise in 1922 when it was bought out by the Ballarat, Melbourne Co-Operative and Carlton and United Breweries and closed. This demijohn is of interest as it came from the Warrnambool New Brewery (closed 1922). This brewery, known as Sheldrick’s was a prominent business in Warrnambool for over 50 years. This is a circular-shaped stone jar enclosed in a wicker case with handles. The jar has a circular yellow top with no stopper. ‘James W. Thomas Fidler was a Warrnambool butcher who married... was a Warrnambool butcher who married Fanny Cockman in 1849 in London ...This certificate has been designed and drawn by James McKain Meek, one of several produced by him to sell to local families in Warrnambool and district as a means of raising money to support his family. James Meek (1815-1899) was a fish canner, fisherman, fishmonger, storekeeper, café proprietor, explorer, gold digger, accountant, writer, librarian and above all an outstanding calligrapher. After being a pioneer settler in the Ballarat area and residing also in Port Melbourne he came to Warrnambool and lived in the area in the 1850s and 60s. He explored much of the Terang area and the Otway Ranges, speaking and writing of the great potential of the latter area. One of Meek’s calligraphy works won an award in the International Exhibition of Melbourne in 1861 and some of his works are in various art galleries and museums today. Thomas Fidler was a Warrnambool butcher who married Fanny Cockman in 1849 in London.This certificate is of great significance as one of the calligraphy works of James Meek, a 19th century resident of Warrnambool, celebrated today as a talented calligrapher. The certificate was displayed in 2015 in a James Meek exhibition at Ballarat Art Gallery. The item is also of social significance showing how the more affluent 19th century families recorded and preserved their family history. This is a certificate hand drawn by James Meek. It is a template that enables the owner to insert the details of a family tree, in this case the 19th century family of Thomas Fidler and Fanny Cockman. The certificate is in grey and black shadings with highly ornamental scrolls and patterns. The document has been produced in black ink. It has a central column with spaces for names and side tablets to include more information. The side tablets are star-shaped and the central column has attachments of various shapes – circles, rectangles etc. The base of the column has further ornamental scrolls, swirls and lacework and features sketches of three emus on one side and three kangaroos on the other side. The certificate is mounted on white cardboard. ... by a company headed by a Warrnambool butcher and hotel proprietor... by a company headed by a Warrnambool butcher and hotel proprietor ...This is an invoice sent from the Warrnambool New Brewery (Walter Sheldrick & Co.) to Captain Selby. The Bill was for two dozen ales ordered on November 4th 1873 and for 6 dozen ales ordered on November 24th 1873 (cost £6-18-0). The bill was paid in February 1874. The Warrnambool New Brewery was established in 1868 by a company headed by a Warrnambool butcher and hotel proprietor, Walter Sheldrick. It was at the corner of Timor and Fairy Streets. After the first year the company was wound up and Walter Sheldrick and Thomas Price and, initially, two other partners, continued on the business. Sheldrick died in 1876 and his son Richard took over the business. By 1892 he had left the business and the brewery was operated by Edward Price, Edmund Hutton and William Trigg. In 1894 the brewery was sold and continued on until it was closed in 1922. The labels of Warrnambool Sheldricks ales had been known throughout the Western District for over 50 years. Captain Selby came to Warrnambool in the late 1860s and lived at ‘Clifton’ on the banks of the Hopkins River not far from the mouth if the river. He was a keen sportsman and was prominent in the Anglers Society, the Rowing Club (as President) and the Gun Club (pigeon shooting).As this is an original 1873 docket it is of considerable interest. It refers to the Warrnambool New Brewery, a prominent business in Warrnambool for over 50 years and to Captain Selby, well-known at the time in sporting circles. We have a good collection of other Captain Selby dockets. This is a buff-coloured piece of paper, an 1873 invoice sent from the Warrnambool New Brewery (Walter Sheldrick and Company) to Captain Selby of Warrnambool. The docket has printed red lines and both printed and handwritten material in black ink. Functional object - Mincer, late 19th or early 20th Century
A meat grinder, commonly known as the meat mincer, is used for chopping meat into fine pieces. Alternatively, it can be used for the mixing of raw or cooked meat, fish and vegetables. It is the best way to process meat, and is a widely used piece of equipment by butchers and in the home.. Butchers have been known to use either mincing knives or meat cleavers in the kitchen for years to produce a quantity of minced meat. This was a slow and laborious process. The advent of the meat mincer has not only made the mincing process easier but also faster. The meat mincer has slowly evolved over the years into what it is today. The first meat mixer or meat mincer was invented in the 19th century by a German inventor named Baron Karl Drais. Although some versions of the device date back to much earlier. The oldest form of meat mincer was hand cranked which forced meat through a metal plate with several small holes in it, which resulted in long and thin strands of the meat. The meat was fed into the funnel that was placed at the top of the mixer. This meat would pass through a hand cranked screw conveyor that would squash and mix the meat before passing it through the metal plate. Needless to say, this was again a slow and laborious procedure to follow to produce large quantity of meat. With passage of time, this hand cracked machine became powered by electricity. The meat mincer has a great adaptability and efficiency now. The huge variety in mincer plates allows a butcher to produce different types of minced meat in any shape desired. However, traditional manual meat mincers have not really changed a lot. They are manually operated and made of cast iron, as earlier. They are similar to the original mincer designs, dating back to the early 1900s. Some butchers still prefer using a variety of mincer knives. Document - Michael Maloney Letters of Administration 1907, 1908
Tait collection: item 54 of 62 This document gives the details of the Letters of Administration of Michael Maloney who died intestate in 1907. He was aged 64. In this document he was described as a farmer from Dennington, near Warrnambool but a Michael Maloney is listed in 1866 as a butcher and this may be the same person or a member of his family. Michael Maloney left real estate to the value of £160 and personal estate to the value of £38. This was passed over to the son, Michael Maloney, a railway employee of Flemington, Melbourne. The lawyers involved in drawing up this document were O’Mahony and Murray who had legal offices in Warrnambool in the late 19th and early 20th centuries. Con O’Mahony had established his practice in Warrnambool in the 1880s under the name of Klingender, O’Mahony and Murray and by the 20th century this was operating under the name of O’Mahony and Murray. Con O’Mahony died in 1920. This document was then passed down to successive lawyers occupying the legal premises in Kepler Street where it was located in 2014 (the former premises of the legal firm of Mackay Taylor). This document is of some interest as it gives details of the Letters of Administration of Michael Maloney, a farmer in the Dennington area in the late 19th and early 20th centuries. It will be useful for researchers. This is a cream-coloured piece of parchment paper folded in two to make four pages. The front page has ruled black margins and there is handwritten material on two of the pages in brown ink. These two pages also have printed italic script on them in black ink with the handwritten material inserted in the spaces left. A seal of the Supreme Court of Victoria is attached with a green ribbon and there is a red stamp of the Master in Equity of the Supreme Court on the first page. The document is somewhat stained. The document gives the details of the Letters of Administration of Michael Maloney of Dennington who died in 1907. Bottle, Sheldrick Pale Ale, Early 20th Century
Walter Sheldrick, a butcher and publican, established the Warrnambool New Brewery at the corner of Timor and Fairy Streets in 1868 as a company. The business was known as Sheldrick and Co. and after Walter Sheldrick’s death his son, Richard, managed the company until his death in 1893. In 1894 the business was sold to John McGee and Company until this firm sold to the Ballarat, Melbourne, Co-operative and Carlton and United Breweries in 1922. James...Warrnambool and District Historical Society Inc. 2 Gilles ...This 1901 history of the Boer War is written from the British perspective and the writing is so emotionally-charged that it reads like a story from a Boys Only Annual. The owner was James Fidler, presumably the eldest son of Thomas and Fanny Fidler who arrived in Melbourne in 1849. They lived on a property called Grange in Panmure with the homestead called Maida Hill. Thomas Fidler owned butchers’ shops in Warrnambool and Panmure. James Fidler was born in 1850 and died in 1929. This book is of interest because it was owned by James Fidler whose family was a prominent one in Warrnambool and Panmure in the 19th century. The book is also useful for researching the Boer War, a conflict in which many Warrnambool and district men took an active part. This is a hard cover book of 1554 pages. There are several pages at the end listing other books published by Cassell and Company. There are 127 chapters and an index. There are many black and white illustrations and several full-page colour plates. This book has the stamp of G.G. Humm and was presumably owned by him. George Gordon Humm (1886-1959) was the son of Elizabeth and George Humm. He was a grocer in Warrnambool. His father came to Woodford with his first wife in 1860 and set up as a butcher. He entered the hotel business and was at one time the licensee of the Criterion Hotel in Warrnambool as were several members of the Humm family at a later stage. This book is of interest as it belonged to a member of the Humm family, prominent in the Warrnambool-Woodford area in both the 19th and 20th centuries, This is a hard cover book of 115 pages. At the back are several pages of lists of publications by the publishers, Gall and Inglis. The cover is dark green with black lettering on a gold background and orange, black and yellow ornamental patterns. The back page has the initials of the publishers. The cover is somewhat faded. Chapman operated a blacksmith’s shop in Mortlake Rd, Purnim, about 15 mins drive from Warrnambool. Chapman made this horseshoe case especially for the 3rd Exhibition of Australian Manufacturers and Products, held in the Exhibition Building in Melbourne, which was organised and promoted by the Australian Natives Association (ANA). Reference is made to the horseshoe case in the Exhibition’s Souvenir Catalogue of 1907 on page 85, under the heading 'In the Machinery Section the following exhibits are also shown … 'CHAPMAN, T.A. , Woolsthorpe, via Warrnambool, Case of Horseshoes'. The Australian Natives’ Association (ANA) were a non-partisan and non-sectarian, friendly society founded in Melbourne, Australia in April 1871. It was set-up for the benefit of Australian-born white men, and membership was restricted exclusively to that group. Men of other races including the Chinese and Indigenous people were not allowed to join. The ANA had relatively progressive views on women (for the time) and attracted suffragists seeking support for their cause, and in 1894, the ANA advocated for women’s enfranchisement. Although, white women were only admitted as members from 1964. The organisation was most prominent in Victoria and sought to shape Australia’s national identity and was a training ground for businessmen, trade unionists and politicians including many of Australia’s early prime ministers such as Edmund Barton, Alfred Deakin, James Scullin and Francis Forde, and the first Australian-born governor-general, Isaac Isaacs, was a member. By 1910 it had developed into a nationwide association with real political and social influence, and members would participate in many activities. The ANA lobbied strongly for anti-Chinese legislation and were an ardent believer of colonial unification. Its mission and efforts are largely credited for the successful referendums that resulted in Federation of the six Australian colonies into a new nation, the association’s most important legacy. The ANA was also a supporter of trade protection, and were a staunch advocate of the first act of Australia's new parliament, the Immigration Restriction Act 1901 (cth) or commonly known as the White Australia Policy, which became one of the central pillars of Australian nationalism in the 20th-century. The ANA campaigned against the Australian Federal Government's new immigration policy after the Second World War (non-British immigration from southern and central Europe) in order to maintain a 'white Australia', and resisted changes when the Labor government during the 1970s fully dismantled and abandoned the White Australia Policy. The ANA merged with Manchester Unity Independent Order of Oddfellows, in 1993 to become Australian Unity Ltd. The display case of horseshoes changed hands several times, going from its maker Thomas Chapman to his mother then various other members of his family. The case was also displayed at the Lee Family’s butcher shop at 188 Liebig St Warrnambool, and in the Purnim Hotel during the Warrnambool May Races. In the late 1950s the horseshoe case went to Thomas’s son, Brian. He was a Master Farrier and completed his apprenticeship at Flemington Racecourse, and in Warrnambool he owned a blacksmith business at the Warrnambool Racecourse Grounds. Brian later operated a blacksmith’s at Flagstaff Hill, where his customers would bring their horses to be shod. Brian passed away in August 2017. The horseshoe case is significant as an example of trades in the early 20th century in Western Victoria, Australia. It is also significant as an example of horseshoes from the early 20th century. The horseshoe display case is also significant for its association with the Australian Exhibition of 1907, showcasing Australian produce and manufacturing to the world. The case contains (a) complete chrome set each of Trotting Shoes, Hunting Shoes and Racing Plates, and (b) one pair of Hind Polo Shoes and one pair of Front Aluminium Shoes. The wooden frame has gold lettering on each side proclaiming “Australian Natives Association, T.A. Chapman, horse shoer, Warrnambool” and is topped by a painted Australian coat of arms. This book details the lives of the ancestors of the author, Graeme Davison. It begins with the story of Jane Hewett who migrated with her eight children to Australia from England in 1850. The book not only tells the story of the Hewett families but also gives a wider picture of Australian conditions at the time, making it a valuable social history of Australia in the 19th century and beyond. Graeme Davison, Emeritus Professor of History at Monash University in Melbourne, has also written five other books dealing with aspects of Australian history. This book is of high interest because it is an important social history of Australia detailing the lives of the Hewett families. It is also of significance to those in the Warrnambool region as a member of the Hewett family, John Hewett, settled in Warrnambool with his wife and family and was a local butcher there for some years. This is a soft cover book of 274 pages detailing the family history of the author Graeme Davison. The cover is cream-coloured and has sepia-coloured photographs of the author’s ancestors on the front and back. The printing on the front and back covers is in gold and black. The book contains a Contents page, Introduction, ten chapters on the author’s family history, Acknowledgements, Picture Acknowledgements, Notes and Index. There are many black and white photographs, sketches and maps. A scotch eye auger is perfect for quickly making holes in dry or wet wood for making chairs, stools, and any number of woodworking projects. The scotch eye serves as a peg gauge and whatever peg you make to go into the hole should fit into the augers eye. Robert Sorby & Sons: The forbearer's of Robert Sorby had been cutlers in the Sheffield region of England, dating from the mid 17th century. Robert Sorby and Sons were registered in Sheffield in 1828 as a manufacturer of edge tools, saws, scythes and hay knives. In addition to manufacturing tools, they also diversified into the manufacture of crucible steel for tool manufacture. From circa 1860-1967, the Sorby factory in Sheffield was known as the “Kangaroo Works”. The Kangaroo Brand of tools was made by Robert Sorby & Sons. During the 19th century, they had a large trade in Australasia. By the early 20th century, they were manufacturing carving tools, planes and plane irons, circular saws, wood saws, butchers saws and cleavers, garden tools, pruning knives, coopers’ knives, bricklayers tools and joiners tools. In 1923 Robert Sorby & Sons was bought by Sheffield company Hattersley and Davidson. A honing steel, sometimes referred to as a sharpening steel, whet steel, sharpening stick, sharpening rod, butcher's steel, and chef's steel, is a rod of steel, ceramic or diamond-coated steel used to restore keenness to dulled blade edges. They are flat, oval, or round in cross-section and up to 30 centimetres (1 ft) long. The steel and ceramic honing steels may have longitudinal ridges, whereas the diamond-coated steels are smooth but embedded with abrasive diamond particles. Non-abrasive honing rods such as smooth ceramic or ribbed steel are able to remove small amounts of metal via adhesive wear. In normal use, the rod is applied to the blade at a slightly higher angle than that of the bevel, resulting in the formation of a micro-bevel. The term "hone" is associated with light maintenance performed on a blade without the effort and precision normally associated with sharpening, so the name "hone" was borrowed. In the 1980s, ceramic abrasives became increasingly popular and proved an equal, if not superior, method for accomplishing the same daily maintenance tasks; manufacturers replaced steels with ceramic (and later, manufactured diamond abrasive) sharpening "steels" that were actually hones. Use Honing steels are used by lightly placing the near edge of the blade against the base of the steel, then sliding the blade away from yourself along the steel while moving it down – the blade moves diagonally, while the steel remains stationary. This should be done with the blade held at an angle to the steel, usually about 20°, and repeating on the opposite side at the same angle. This is repeated five to ten times per side. Steeling It is often recommended that steeling be performed immediately before or after using a knife and can be done daily. By contrast, knives are generally sharpened much less frequently. A traditional smooth honing steel is of no use if the edge is blunt, because it removes no material; instead it fixes deformations along the edge of a sharp blade, technically known as burnishing. There has long been speculation about the efficacy of steeling (re-aligning the edge) vs honing (removing minor deformation with abrasives); studies tend to favour abrasives for daily maintenance, especially in high-carbide-volume "stainless" steels (such as the popular CPM S30V steel, which tends to "tear out" when steeled rather than re-forming an edge.) Small honing steel for outdoor activities Usage trends Steels have traditionally been used in the West, especially in heavy-use scenarios (e.g. butchering, where the edge deforms due to forceful contact with bone). These scenarios also lead Western trends toward blades tempered to a lower level of hardness (and thus lower brittleness). In East Asia, notably Japan, harder knives are preferred, so there is little need for steeling intra-day, as the edge does not deform as much. Instead, the blade is honed as needed on a waterstone. While tradition has kept the practice of steeling alive in Western kitchens, the majority of honing steels sold are abrasive rather than smooth, and knives are harder and more frequently made of stainless steel, which does not respond to traditional steeling techniques as well as high-carbon/low alloy tool steels.The sharpening steel is essential to maintain the sharpness of carving and other knives.Steel knife sharpener with bone handle. In the high tech, fast paced society that we live in, it’s easy to take some things for granted. Case in point: the wood cutting board on which you’ll probably be preparing the evening’s dinner. Have you ever taken the time to think about the history of the cutting board? Where did it come from, and what did ancient civilizations use to cut their meats, fruits and vegetables? Wood throughout the ages Since the dawn of time, wood has been one of the most available materials used by mankind to build tools and lodgings, so it’s not really surprising to know that wood has been used in the preparation of food since the prehistoric ages. Of course, back then, cavemen probably used an unpolished slab of tree trunk to cut the kill of the day on and they probably didn’t think twice about saving it once the meal was over. Chances are they probably threw it in the fire with the rest of the wood needed to kindle it. Advances in technology Throughout the centuries, mankind evolved and started creating machines from steam, electricity and metal. When the circular saw was invented, nicer, cleaner slabs of wood were cut and used as cutting boards. Since soft wood was the most available type of wood at the time, it was the material of choice for to be used for cutting boards. Boards were made smaller since the slab of wood could now be cut to any desired size. Since they were made smaller, they were also used to eat off of and some people referred to them as trenchers. Trenchers were originally pieces of stale hard bread that were used as substitute plates. Wood trenchers quickly became the replacements of the eatable dinnerware. The butcher block: the cutting board’s larger cousin In the industrial ages, many industries rapidly developed, and the butchery industry followed this trend as well. Before the invention of the cutting board, butchers used tree rounds to carve their meat on. The rounds were often too soft and they rapidly became unsanitary. Hard maple wood butcher blocks were the preferred choice of the industry. They were made to be extremely thick and durable, so durable in fact, that a butcher could use the same block for almost his entire career. Cutting boards around the world As cutting boards began to be more and more used in kitchens around North America, the rest of the world crafted such boards from different materials. The East used thick bamboo as their material of choice. Despite its frail appearance, bamboo is quite strong and made durable cutting boards and butcher blocks. Europe used maple in the crafting of their cutting boards while Persia used flat pieces of polished wood in their kitchens. This painting was part of the original furnishings of the St Nicholas' Mission to Seamen's Church at 139 Nelson Place, Williamstown, Victoria. The Church was operated by the Mission to Seamen organisation. THE MISSIONS TO SEAMEN (Brief History: for more, see our Reg. No. 611, Set of Pews) The Missions to Seamen was an Anglican charity that served seafarers of the world since 1856 in Great Britain. It symbol is a Flying Angel, inspired by a Bible verse. Today there are centres in over 200 ports worldwide where seamen of all backgrounds are offered a warm welcome and provided with a wide range of facilities. In Victoria, the organisation began in Williamstown in 1857 as a Sailors’ Church, also known as ‘Bethel’ or the ‘Floating Church’ in an old hulk floating in Hobson’s Bay, Port of Melbourne. It soon became part of the Missions to Seamen, Victoria. In the year 2000 the organisation, now named Mission to Seafarers, still operated locally in Melbourne, Portland, Geelong and Hastings. The Ladies’ Harbour Lights Guild was formed in 1906 to support the Missions to Seamen in Melbourne and other centres such as Williamstown. Two of the most significant ladies of the Guild were founder Ethel Augusta Godfrey and foundation member Alice Sibthorpe Tracy (who established a branch of the Guild in Warrnambool in 1920). The Guild continued its work until the 1960s. In 1943 a former Williamstown bank was purchased for the Missions to Seaman Club. The chapel was named St Nicholas’ Seamen’s Church and was supported by the Ladies’ Harbour Lights Guild, the Williamstown Lightkeepers’ Auxiliary and the League of Soldiers’ and Sailors’ Friends. It ceased operation in 1966. A Missions to Seamen Chapel and Recreation Room was a significant feature of ports during the late 1800s and into the 1900s. It seemed appropriate for Flagstaff Hill to include such a representation within the new Maritime Village, so the Melbourne Board of Management of Missions to Seamen Victoria gave its permission on 21st May 1979 for the entire furnishings of the Williamstown chapel to be transferred to Flagstaff Hill. The St Nicholas Seamen’s Church was officially opened on October 11, 1981, and closely resembles the Williamstown chapel. This painting is significant historically for its origin in the St Nicholas Mission to Seamen's Church in Williamstown, established in 1857 to cater for the physical, social, and spiritual needs of seafarers. It originated in Bristol, England when a Seamen's Mission was formed in 1837. The painting is historically significant for its connection to the Ladies Lightkeepers’ Auxiliary, an organisation of women, formed to support seafarers. The connection of this painting to the Mission to Seamen and to the Ladies Lightkeepers’ Auxiliary highlights the strong community awareness of the life of people at sea, their dangers and hardships, and their need for physical, financial, spiritual and moral support. Francis John Newberry founded the Victoria Foundry and Enameling Works in 1890 with a workmate from the Humbles iron foundry in Lupton Street Geelong where he worked. Newberry & Walker Foundry & Enameling Works was built adjoining a cottage that was to be the home of the Newberry family during the ensuing years. Although Walker soon relocated to New Zealand, the Newberry and Walker foundry had become a local success. The foundry produced numerous cast iron products such as washing copper frames, and friezes, balustrades and verandah columns. Verandah posts are to be found in declining numbers, but the Newberry and Walker mark can sometimes be seen on the few which remain. A certain number of iron culvert posts were also made; some of them were still in place on the road to Cressy as late as 1961. Perhaps half the iron friezes on Geelong West verandahs came from the local firm’s foundry. This draw knife once belonged to a Sough Australian family of coopers, or barrel makers surnamed Schahinger. The maker was Hale Bros. of Sheffield. The brothers, John Thomas Hale (1853-1919) and Samuel Stafford Hale (1855-1948) owned the Moorfield Works. The firm's Corporate Mark of a horse's head was granted in 1842 and came with the statement that "All tools marked with a "Horse's Head" are Guaranteed". The firm made tools for edgers and joiners, wall drills, cold chisels, files and rasps, printers' and publishers' tools, butchers' and bread knives, and table cutlery. This draw knife was used by a cooper in South Australia for making wooden barrels in the traditional manner. The makers had a family business of making knives, cutlery and tools for trades people. This draw knife is relevant to the trades represented in a maritime village of the late 19th century.
