See KVHS 1697Dairy farming in the Kiewa Valley was the main industry with farmers keen to test the quality of their milk before selling it. Milk and Cream Fat Tester Centrifuge
In 1890 D. Babcock invented a test for measuring the amount of butter fat in milk, either on the farm or in the dairy or creamery. Samples of milk were put in the glass vial and then spun (by cranking the handle) causing the cream to separate from the non-fat milk thus determining the percentage of cream in the milk. ledger, 1911-1914
This ledger was used by the Shire of Orbost from 1911 - 1914. It was used to record fees paid for Dairy Registration, Dog Registration and Sheep dipping. At that time dairy farmers were required to register all milking cows. Dogs, too, were to be registered and there were strict laws on sheep dipping. Every sheep-owner was to dip all his sheep immediately after shearing and directly from the shearing-board in every year and also at the time of dipping his sheep dip all his lambs. In case the sheep couldn't be conveniently dipped directly from the shearing board they were to be placed and kept in a securely fenced paddock to be dipped within sixty days after shearing. Sheep-owner who neglected or failed to comply with any of these directives were liable to a penalty of not less than One pound nor more than Twenty pounds. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. Orbost was at first included in the Bairnsdale Shire from 1882 and was later part of the Tambo Shire. Because of travelling distances the Croajingalong Shire was created in 1892 (name changed to Orbost Shire 17.2.1893 with James Cameron as the first Shire President. In 1994 it amalgamated to become part of East Gippsland Shire Council. The item was donated to Orbost & District Historical society from P.R.O.V. as a Place of Deposit (POD) item for safe keeping by a local history group or museum. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. This item is a record of local council accounting. The Shire of Orbost no longer exists as it was absorbed by the East Gippsland Shire Council.A dark blue, leatherette covered ledger cash book with tan spine, stitched marbled end covers. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. This photograph is part of the collection of items given into the care of the Cheese World Museum. This machine was the first double action (suction and pulsator) milking machine. This method is still in use today. Invented by Alexander Gillies,of Terang. The LKG milking machine is of State significance because it represents a high degree of technical achievement. It demonstrates the innovation developed by a Western District farmer, Alexander Gillies, that enabled dairy farms throughout Victoria to move successfully from hand milking to machine milking, thus contributing to the mechanisation of one of Victoria's major rural industries. Warrnambool Cheese and Butter Factory at Allansford commenced in 1888. By the early 1900s it had 3 subsidiary creameries where farmers delivered their milk. Often the farmers collected the skim milk to feed pigs. At this time bacon was considered to be a dairy product. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. The Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. The collection of items from their property was put into store for a number of years before being given into the care of the Cheese World Museum. The family often re-used, recycled and repaired items and examples can be seen in the museum. This Babcock tester is part of the collection of items given into the care of the Cheese World Museum. The Babcock tester was used to determine the butter fat content in milk. Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. This test also provided a means for farmers to identify poor performing cows and upgrade the quality of their herd and subsequent milk supply to the factory.Four tipping metal testing tubes which revolve on a brass base. Exercise Book, A Carroll Exercise Book
This exercise book was donated by Donna Daly, who found it among her parents belongings. Her parents were Josie and Tich Kelly and she was unsure of the connection with A Carroll.This document is significant as it indicates records kept on-farm by some farmers. It records prices received for milk, calves, pigs and the amount of the government subsidy during this period which covers the time of World War II. It provides an interesting comparison with the Taylor milk passbook from 1895 and associated milk slips which are also held by Warrnambool Cheese & Butter Factory.Fawn coloured exercise book with pictures of old sewing machines on the front cover and Arithmetic tables on the back in blue printing. For many years the Heywood Cheese Factory was an important part of life for Heywood and district farming and a vital place of employment for up to 40 men and 10 women. The factory opened in 1939 as a subsidiary of the Portland Butter Factory before becoming a world renowned cheese making enterprise. It was felt important to document its history from the surviving factory workers, including dairy suppliers and milk truck drivers. We hear their stories of the long hours and hard work without penalty rates, travelling unsealed roads and mixed with their humour of the bygone days is an important acknowledgement of that era. François Boullier of France and Isaac Hunt of England both took credit for inventing the cheese grater in the 1540s. Ingredient supplies, mainly milk, ebbed and flowed in both France and England, as they have in the United States during this coronavirus pandemic. Boullier originally aimed to use up an overabundance of cheese in Paris. An avoidance of meat led French farmers to convert their meat herds (often boys) to dairy-producers (girls), which led to more milk and even too much milk, which led to a market flooded with cheese. Boullier made his first cheese grater out of pewter to grate hard, sometimes dried out cheeses, which turned them into a sort of condiment. Pewter is known as a rather soft metal, and Boullier’s original grater is reportedly on display in a museum in Le Havre, France. Isaac Hunt wanted to stretch cheese due to a shortage in England, so he grated and melted it for Welsh rarebit and other dishes. Grating cheese allowed more even distribution of the cheese to melt it in cooking and still does. During the Great Depression of the 1930s, Philadelphia cheesemonger and entrepreneur Jeffrey Taylor also wanted to stretch cheese for to bulk up cheese features, including vegetables, to make them look like more filling food during difficult economic times. Taylor read about Boullier’s invention and made his own by sharpening the holes of a metal shower drain. For the last century, many companies have tried to improve the cheese grater and invent a new “latest” one that we all must-have. Graters are now made of all sorts of materials including bamboo, wood, and various metals. Some are decorated with clowns’ heads, some are shaped like plastic frogs, while others bear knuckle protectors. They vary in size, shape, and function. Grating slots come with different angles and shapes of slots and can grate everything from zucchini, onions and cheese, to cooked eggs, coconut, potatoes, cabbage, and lemon and orange peel, and possibly even create wood shavings. Milk is a key contributor to improving nutrition and food security particularly in developing countries. Improvements in livestock and dairy technology offer significant promise in reducing poverty and malnutrition in the world. Pasteurization is used to kill harmful micro-organisms by heating the milk for a short time and then immediately cooling it. In the past, milk was always packaged in glass milk bottles The first glass bottle packaging for milk was used in the 1870s. The first company to do so may have been the New York Dairy Company in 1877 with a small glass lid and a tin clip. Lewis P. Whiteman holds the first patent for a glass milk bottle c1884,which was sealed with a waxed paper disk. The Express Dairy Company in England began glass bottle production in 1880. This would improve texture and flavour, and also help the butter keep well, since milk turns rancid more quickly than fat alone. Salt was usually mixed in at this stage - for flavour and preservation. This glass jar once contained Australian-made Nestle’s Malted Milk. The jar carries the company’s familiar logo. This jar would have originally had a screw-top metal lid. The large jar may have been used in a canteen, hospitality business or hospital due to its capacity. The jar was owned by Dr W.R. Angus, surgeon and oculist, who lived in Warrnambool with his wife and growing family for over thirty years. It may have been purchased from the Nestle factory in nearby Dennington. The jar was donated by his family and is part of the W.R Angus Collection. Nestles Malted Milk powder is usually added to either hot or cold milk as a nutritious drink supplement. The powder is a combination of evaporated whole milk powder, malted barley and wheat flour. Nestle began in 1867 and its products were available in Australia since the 1880s. Australia had become Nestle’s second-largest export market by 1906 and by 1908 Nestle had set up business in Australia. The Nestle factory in Dennington, Warrnambool, opened in 1911 and was the world’s largest condensed milk plant. For over 100 years the factory produced dried milk powder from the produce of local dairy farmers. It was a major employer for the district until an announcement was made on May 2019 by its recent owner Fonterra that it was closing its Dennington site for financial reasons. This Nestle Malted Milk jar is connected to the history of Warrnambool, as it was owned by the daughter of Dr W. R. Angus and his wife Gladys. It is part of the W.R. Angus Collection, which is notable for still being located at the site connected to Doctor Angus, Warrnambool’s last Port Medical Officer. It is also connected through its manufacturer Nestle. which had a branch in Warrnambool from 1911 to 2019, overlapping the time when the Angus family resided there, from 1939 to the 1970s. The jar is also significant as an example of the early-20th-century food found in local households and businesses, and could have been purchased from the local Nestle factory.Round tall clear glass jar with a wide mouth, short neck and straight sides on a cylindrical body. The jar has been blow-moulded in two pieces with a side seam running from the base to the top of the lip. There are air bubbles in the glass, and the base has been ground flat. The outside of the mouth is threaded. Inscriptions are moulded on one side and there is a round logo with text around an image of a mother bird with three young birds in a nest. The jar once contained Nestles Malted Milk and was made in Australia around the 1920s. The jar is part of the W.R. Document, Sedgwick, was known as Upper Emu Creek until 1901. It is located ten miles south of Bendigo in hilly sedimentary and granite country.The first freehold grants were taken up in 1854. In 1861 the Strathfieldsaye Road District was Proclaimed. Five years later it became the Shire of Strayhfieldsaye.Mining west of the Axe Creek commenced in 1863. Agriculture, farmers made modest livings from vineyards, orchards,dairy cattle, eggs and tomatoes. The Osborne family had seventy acres planted to apples. Heyfield Butter Factory Company opened in 1891, and became a co-operative in 1892. It was a major employer in the town, and provided an outlet for local dairy farmers. It amalgamated with Traralgon and Yarram Co-operatives in 1960 to form South Eastern Milk products, which in turn amalgamated with Gippsland Consolidated Milk in 1971 to form Gippsland Amalgamated Milk. In 1973 Gippsland Amalgamated Milk became part of Murray Goulburn, who closed the Heyfield Butter Factory in May 1973. One enquiry to a resident, who arrived there in 1948, suggested this may have ceased being used before that date, or was not available locally.This wrapper is of historical significance as an example of the packaging and promotion of the main product from the Heyfield Butter Factory and Electricity Supply Company. This factory was a major employer and economic influence in the Heyfield District from 1891 to 1973, with the buildings still being an important component in the landscape of the town.Three butter wrappers for one pound blocks of Heyfield Creamery pasteurised butter. Container - Model Dairy Plastic Milk Bottles, Model Dairy, c.1960
This pair of milk bottles, produced for the Model Dairy in Cotham Road, Kew, were donated by Vik Sabaliauskas. They belonged to his father who worked at Model Dairy in the 1950s and 1960s. Vik wrote about his father: "As for my father, his whole life story is interesting. He was part of the big immigration program after WW2. He was a displaced person in Germany like lots of others who came out looking for a new life. Our family name is actually SABALIAUSKAS which is of Lithuanian descent. My Dad was also named Vik (Viktoras). He was known as Big Vik and I was little Vik. He arrived in Australia in 1947 and then did his 2 years of work organised by the Government and then he came to Melbourne. We lived in Tyler St Preston and he rode his pushbike to and from Kew every working day for years. In my estimation that was about 13 kms for about 6 or 7 years. Imagine that happening today. Freezing Winter mornings and hot Summer afternoons. His English was poor but he had a great work ethic like all European immigrants. His duties related to maintaining and operating all the machines. One story that he told me about was that after I was born (in 1959) he made friends with one of the drivers who delivered milk to the dairy. He asked him to get a container of milk from the farmer everyday which was just for me. I remember going to the Model Dairy Family Christmas parties which were always well patronised. I also remember visiting him in the PANCH Hospital (Bell Street Preston) where he was treated for kidney stones caused by drinking very creamy milk. He wasn't happy when he was told by the doctor to cut back on milk. My Dad was one month short of his 95th birthday when he died and he lived a pretty healthy life." (2019)Kew was a major milk producing district in the Nineteenth and early Twentieth centuries, with three major dairy farms lining the Yarra between Studley Park in the west and Burke Road in the east. In addition to these dairy producers, there were also a number of accredited dairy retailers in the suburb. The largest and most enduring of these was the Model Dairy founded by the Kew pioneer James Venn Morgan. Milk bottles that include the name of the producer or retailer are historically significant as they represent a period in Kew's history before the mass production of milk in the second half of the Twentieth Century. A number of these named bottles have the additional attribute of rarity.Pair of plastic milk bottles, designated on the front as to be used in the refigerator on on picnics. Machine - Lister Cream Separator, R.A. Lister & Co. Ltd, c1910
A separator is a centrifugal device that separates milk into cream and skimmed milk. Separation was commonly performed on farms in the past. Most farmers milked a few cows, usually by hand, and separated milk with a hand operated machine for domestic use. The milk was poured into the bowl on the top and the handle had to then be turned fast enough to get the separator up to speed adequate to separate the cream and the milk. The milk would come out of one spigot and the cream out of the other. In general practice some of the skimmed milk was consumed by the family, while the rest may have been used to feed calves and pigs. Enough cream was saved to make butter, and the excess was sold. In many cases excess could be bartered or swapped with neighbours for other items of produce. LISTER - A prominent make of separator which became very popular with the dairy farmer, was the "Lister" separator. The early separators sold by R. A. Lister in the 1880's, were made by "Koefoed & Hauberg", Copenhagen. Denmark, called the "Alexandria". Ashton Lister became the sole agent for Koefoed & Hauberg made separators in England and all the English Colonies, throughout the world. Being an enterprising salesman, Ashton, sent his son Edward on a three-year sales tour of Australia & New Zealand in 1890, (hence the strong presence of Lister in Australia.) Initially, the separator was totally manufactured in Denmark and assembled in Dursley, England. By 1892 Lister were making parts at their Victorian Iron Works, and around about the early 1900's, Lister began manufacturing separators in their own right, severing ties with Koefoed & Hauberg. The Lister firm is still going today, under the name of Lister Petter, England, but do not manufacture separators, as the manufacture of farm / domestic separators ceased in the early 1960's.This item is significant as it is representative of domestic and dairying machinery used throughout rural areas of Australia in the early to mid 20th century.The separator is made in 3 sections. The base is metal plated with blue enamel. The vat is made from silver painted tin. There are 2 outlet spouts. The detachable handle, made from cast iron and wood, is held in place by a screw. North east Victoria was a major dairy producing region in the late nineteenth century. The first iteration of the Wodonga Butter Factory Ltd was established in 1892. Dairy was sent from farmers across the district for processing at the factory in Wodonga in the 1890s. Victorian creameries regularly exported frozen butter to London, stock was transported by rail for sale in Melbourne, and of course sold and consumed locally. E.W. Mann, of the prominent local Wodonga family, was a shareholder and was closely involved in the establishment of the Wodonga Butter Company. Many families living on farms also owned their own cow, and had equipment to process their own dairy products at home. This item has strong links to the history of Wodonga and north east Victoria. ... was installed in the complex, and so whole milk was collected from dairy... in the complex, and so whole milk was collected from dairy farmers ...Holdenson and Nielson Fresh Food Pty Ltd was founded in 1903 by Poul Jorgenson Holdenson and Andrew Nielson, after acquiring the Fresh Food and Storage Co, which had plants throughout Australia, including Albury. The plant was moved to Wodonga that year. Cream was collected from all areas of North East Victoria and the Riverina, with contractors carting it to the railway stations for rail travel to Wodonga. The Butter Factory was built on the Lincoln Causeway in 1926, and the Cheese Factory in 1942 as a wartime emergency project. At the same time, a pasteurising plant was installed in the complex, and so whole milk was collected from dairy farmers, rather than just cream. The company was bought out by the North Eastern Dairy Co-operative in 1962. It became a retail milk depot also involved in ice-making and cold storage. In 1985, Goulburn Murray bought the complex and as the site was surplus to requirements, it was sold to Wodonga Council. The buildings were adapted for other uses. The Butter Factory was modified and extended and for some time was occupied by the Albury- Wodonga Visitor Centre. The Creator's Gallery was established in the engine room, and the loading area and ice-making works were extended and modified for use as the HotHouse Theatre. The Cheese Factory was adapted for use as a theatre and jazz venue, and housed the HotHouse office. This photograph was taken at Samaria Farm on Sunday the 5th of September when Wooragee Landcare Group took a bus trip to the Tatong area (near Benalla) to look at land use on small farms. The day trip was organised to observe land use on small farms as well as a social event for the Group. Samaria Farm at the time was a nine-hectare property located in northeast Victoria, near Mount Samaria, 130 km Northeast of Melbourne. The photograph features several pigs believed to be the breed called Large Black. The Large Black Pig breed is a traditional, heritage breed that was first imported to Australia from the UK in the early 1900's. It is believed to have originated from the Old English Hog of the 16th and 17th Centuries. The first reference to them in the Australian Pure Bred Pig Herd Book was in 1912. They are a black pig with lop ears and were prized for their superior milking and mothering abilities and soon became popular with early Dairy Farmers who fed them whey from separated milk as part of their butter making process. They proved economical to keep and, being excellent grazing pigs, were also used to pick up windfall fruit in orchards. Their black colouring also enabled them to withstand the hot Australian summers and avoid sunburn which combined with their hardiness and docile temperament made them highly suitable for free-range pork production, however Large Black pigs tend to get very fat and were not suitable for intensive farming so were often crossed with other breeds for pork production. They are now quite rare as a pure breed having been on the edge of extinction for some time. They were rescued in the early 1990s by a rare breeds farmer in the Yarra Ranges. These days they are also the focus of a small conversation effort with six registered breeders currently in Australia. For biosecurity reasons there are no imports of live pigs or pig semen permitted into Australia. This photograph shows a group of people attending one of the events that Wooragee Landcare Group has organized within the educational framework of promoting best land management practices for all types of land uses and ensuring sustainability, in addition to encouraging community interaction via social events. The Large Black pig breed is significant because of their role in early Victorian farming. They are now quite rare as a pure breed having been on the edge of extinction for some time. These days they are the focus of a small conversation effort with six registered breeders currently in Australia. For biosecurity reasons there are no imports of live pigs or pig semen permitted into Australia. The number of cattle in this photo suggests that it was a small holding, at the beginning of the dairy industry in Bacchus Marsh. This industry became a major source of employment in Bacchus Marsh. By the early twentieth century, the Bacchus Marsh region was a significant contributor to the dairy industry in Australia. Small sepia unframed photograph on card with gold border framing photograph. Housed in the album, 'Photographs of Bacchus Marsh and District in 1883 by Stevenson and McNicoll'. This is a photo of a dairy farm in an unknown location in the Bacchus Marsh district. It has been taken from an elevation looking down at the farm. On the left, the roadside can be seen running alongside a stream or river which is fenced off by a line of trees and a post and rail fence. Parked on the road outside the farmhouse is a wagon which is unhitched. The wagon has a white rooftop and on the side can be seen a professional logo, details unclear. This wagon is most likely the wagon used by the photographers to access outlying properties with their photographic equipment. The farmhouse itself faces the road with side doors giving onto the yard. The roof is partially covered by new slates, possibly slate covering bark. Six milking sheds of post-and-rail construction adjoin the farm yard. In the first and fourth stalls (l to r) the farmer and his wife can be seen seated, miking cows. The rest of the herd are awaiting milking in the yard which also has a post-and-rail fence. A bull of milking shorthorn breed stands outside the fence. The milking herd itself is of various breeds; Herefords, roan shorthorn and roan and white shorthorns can be identified. On the right is a shed of rough-hewn boards and a shingle roof.
