In 1872 William Tulloch and Alexander McLaren constructed a new brick 'Royal Standard Brewery' to the design of architect Henry R. Caselli. They had been operating a much smaller 'Royal Standard' Brewery, possibly since 1859. The Ballarat Brewing Company was established in 1895 and took over operations of the 'Royal Standard'. This new company resulted in the merger of the 'Royal Standard Brewery', James Coglans 'Phoenix Brewery' (Warrenheip) and Henry Leggo's 'Barley Sheaf Brewery' (Creswick Rd). J. Coglan and W. Tulloch were principals of the new company. By 1912 the Ballarat Brewery buildings fronting Armstrong Street were upgraded and new plant installed. Ballarat Brewing Company was well established as a thriving business. In 1926 'Ballarat Bertie' (the cellar-man) advertising image was introduced. It was used successfully until 1994 on 'Ballarat Bitter' labels. During the1940s and 50s the Ballarat Brewing Company was significantly upgraded and extended equipment and buildings. In 1959 Carlton and United Breweries purchased the Ballarat Brewery, its brewing rights and the land (but not the 114 BBC hotels or the Dana Street offices). The Lydiard Street frontage become the 'front' of the CUB Brewery. CUB ceased brewing at the Ballarat Brewery site in 1989 and closed the plant. Four years later the 'brewery site' was purchased by the Ballarat School of Mines to enlarge its campus area as TAFE was a rapidly expanding areas of education. In 1994 plans were developed for the 'Brewery Complex' with careful regard for needed educational facilities and due concern regarding historical aspects of the site and its buildings. There was close consultation and cooperation with the Ballarat City Council during the planning process. In 1995 most of the Brewery buildings were demolished by some special structures and features are preserved. The old brewery chimney was retained as a permanent reminder of the original industrial site, as were two boilers. The SMB Brewery Complex was completed in 1996 and reflects aspects of the former brewery's appearance. It was opened by Prime Minister John Howard on 28 February 1997. Walter Sheldrick, a butcher and publican, established the Warrnambool New Brewery at the corner of Timor and Fairy Streets in 1868 as a company. The business was known as Sheldrick and Co. and after Walter Sheldrick’s death his son, Richard, managed the company until his death in 1893. In 1894 the business was sold to John McGee and Company until this firm sold to the Ballarat, Melbourne, Co-operative and Carlton and United Breweries in 1922. This Pale Ale bottle, therefore, was bottled before 1922.This bottle is of considerable significance as it is one of the last products of a prominent brewery in Warrnambool and is now nearly 100 years oldThis is a brown-coloured glass beer bottle with a long neck and no stopperOn oval shaped paper label ‘Sparkling Pale Ale, Sheldrick and Co. This cask bung came from the brewery of Sheldrick and Co. The New Brewery (Warrnambool), founded by Walter Sheldrick and Thomas Price as partners in a company, was situated at the corner of Timor and Fairy Streets. It was known as Sheldrick and Co. and operated from 1868 to 1922 with John McGee and Company running the business after 1894. In 1922 the business was sold to Ballarat, Melbourne Co-operative and Carlton and United Breweries. The casks, used for wine and spirits, were in 1892 cleaned by steam and a lifting device was used to transport the casks from the cellars to the delivery wagons. This is a most significant item as one with a clear provenance and used in the brewery business of Sheldrick and Co., a major industry in Warrnambool in the 19th and early 20th centuries. It is an example of the equipment use in the brewery business more than a 100 years ago. This is circular cask bung or stopper with the outer shell made of brass and the stopper insert made of cork. There is a screw thread on the metal. Both the brass and the cork are slightly worn.Inscribed on the metal:‘Sheldrick & Co. Warrnambool’sheldrick and co., sheldrick’s brewery

In 1868, Walter Sheldrick, a Warrnambool butcher, established a company to operate the Warrnambool New Brewery (at the corner of Timor and Fairy Streets). The company was wound up but the brewery continued to operate as Sheldrick and Co., with Walter Sheldrick and Thomas Price as principal partners. Sheldrick died in 1893 but the brewery continued with various partners in the business. In 1894 the brewery was sold to James W. McGee and Co. and this firm operated the brewery until its demise in 1922 when it was bought out by the Ballarat, Melbourne Co-Operative and Carlton and United Breweries and closed. This demijohn is of interest as it came from the Warrnambool New Brewery (closed 1922). This brewery, known as Sheldrick’s was a prominent business in Warrnambool for over 50 years. This is a circular-shaped stone jar enclosed in a wicker case with handles. The jar has a circular yellow top with no stopper. ‘James W. The Ballarat-based firm, J Chatham and Co, serviced the Hotel Industry in Victoria, particularly Victoria’s Wimmera and Western Districts. Established by Jack { John} Chatham in 1956, The business was based at 7 Lydiard St South, Ballarat. As a regional hotel and motel broking specialist, he worked closely with other Ballarat businesses, including the Ballarat Brewery. On Jack's death in 1967, the business was taken over by his son, Philip, and renamed J Chatham Pty Ltd. The business continued to grow. Chatham House, the building the business operated from, and subsequently purchased and named, at 7 Lydiard St South, Ballarat still stands today. In the 1970's a Melbourne branch also opened in Dudley St, Nth Melbourne, In the 1980s the Melbourne branch, J Chatham and Daunt Pty Ltd, operated from 205 Victoria Parade, Fitzroy, a few blocks west of the Carlton United Brewery. Philip's son, Andrew, joined the business, then called J Chatham, Daunt and Foley Pty Ltd., in the late 1980s. The business at this time operated from a terrace house [?Bouverie Street] Carlton near Grattan St. By 2005, the Daunt and Foley partnership had dissolved. Philip predeceased his wife, Elizabeth Chatham (nee Holmes), a Director of the Company in 2001. His share of the business was inherited by Andrew. Elizabeth died in 2005 and the business was sold in 2006.
