Used domestically, though any extra butter could have been sold to neighbours. Many families kept a cow or two for milk etc. Cream needed to be at least 2 days old - the thicker the better. The handle was turned until the cream turned to butter,the whey was poured off and the butter washed in cold water until the water ran clear. Generally salt and bicarbonate of soda were added. Two pats were used to form butter into 1lb lots. This butter was most typically meant for consumption by the family, but in some instances it may be taken away for consignment by commercial receivers of dairy produce. This ledger was used by the Shire of Orbost from 1911 - 1914. It was used to record fees paid for Dairy Registration, Dog Registration and Sheep dipping. At that time dairy farmers were required to register all milking cows. Dogs, too, were to be registered and there were strict laws on sheep dipping. Every sheep-owner was to dip all his sheep immediately after shearing and directly from the shearing-board in every year and also at the time of dipping his sheep dip all his lambs. In case the sheep couldn't be conveniently dipped directly from the shearing board they were to be placed and kept in a securely fenced paddock to be dipped within sixty days after shearing. Sheep-owner who neglected or failed to comply with any of these directives were liable to a penalty of not less than One pound nor more than Twenty pounds. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. Orbost was at first included in the Bairnsdale Shire from 1882 and was later part of the Tambo Shire. Because of travelling distances the Croajingalong Shire was created in 1892 (name changed to Orbost Shire 17.2.1893 with James Cameron as the first Shire President. In 1994 it amalgamated to become part of East Gippsland Shire Council. The item was donated to Orbost & District Historical society from P.R.O.V. as a Place of Deposit (POD) item for safe keeping by a local history group or museum. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. This item is a record of local council accounting. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. The certificates were passed to Cheese World Museum by the factory management.This certificate was held by the factory management until transfer to Cheese World Museum. The Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The family often re-used, recycled and repaired items and examples can be seen in the museum. This Babcock tester is part of the collection of items given into the care of the Cheese World Museum. The Babcock tester was used to determine the butter fat content in milk. Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. This catalogue belonged to Alderdice Brass Foundry in Warrnambool. It was donated to the museum by John Downing from the foundry. The catalogue is for the firm of J Bartram & Son who were suppliers of dairy equipment. They were one of the earliest suppliers of mechanical milking machines in Victoria.The catalogue is significant as it is from an early dairy supplier and shows early dairy equipment. A separator is a centrifugal device that separates milk into cream and skimmed milk. Separation was commonly performed on farms in the past where farmers milked a few cows, usually by hand, and separated by letting milk sit in a container until the cream floated to the top when it could be skimmed off by hand. Some of the skimmed milk was consumed while the rest was used to feed calves and pigs. Enough cream was saved to make butter, and the excess was sold. Manual rotation of the separator handle turns a mechanism which causes the separator bowl to spin at thousands of revolutions per minute. When spun, the heavier milk is pulled outward against the walls of the separator and the cream, which is lighter, collects in the middle. The cream and milk then flow out of separate spouts. Circa late 1800s. Wooden domestic butter-churn. This is a paddle churn, a barrel that contains a paddle, which is operated by a handle. The paddle churned the butter inside the container when the handle was turned. Early settlers had to be self sufficient, growing their own vegetables, making tools and clothing and usually had a house cow to produce their milk supply. An unsigned note states it was used by a Chinese market-gardener’s family. From the mid 1800s into the1900s, there were numbers of Chinese market gardeners working in Bentleigh, Moorabbin, Mc Kinnon, and Cheltenham in the Shire of Moorabbin. After the sale of land following 'Dendy's Special Survey' 1841 many Chinese settlers rented allotments and established market gardens in the area and sold their produce to the increasing population of Melbourne at the markets in St Kilda and Melbourne.Circa late 1800s.
