A separator is a centrifugal device that separates milk into cream and skimmed milk. Separation was commonly performed on farms in the past where farmers milked a few cows, usually by hand, and separated by letting milk sit in a container until the cream floated to the top when it could be skimmed off by hand. Some of the skimmed milk was consumed while the rest was used to feed calves and pigs. Enough cream was saved to make butter, and the excess was sold. Manual rotation of the separator handle turns a mechanism which causes the separator bowl to spin at thousands of revolutions per minute. When spun, the heavier milk is pulled outward against the walls of the separator and the cream, which is lighter, collects in the middle. The cream and milk then flow out of separate spouts. A butter churn is a device used to convert cream into butter. This is done through a mechanical process, via a crank used to manually turn a rotating device inside the barrel shaped churn. The agitation of the cream, caused by the mechanical motion of the device, disrupts the milk fat. The membranes that surround the fats are broken down, subsequently forming clumps known as butter grains. These butter grains, during the process of churning, fuse with each other and form larger fat globules. Air bubbles are introduced into these fat globules via the continued mechanical action of the churn. The butter grains become more dense as fat globules attach to them while the air is forced out of the mixture. This process creates a liquid known as buttermilk. With constant churning, the fat globules eventually form solid butter and separate from the buttermilk. The buttermilk is then drained off and the butter is squeezed to eliminate excess liquid and to form it into a solid mass. Then rinsing could be done simply by washing in water, followed by draining, salting and working or "kneading" the butter with a pair of wooden butter pats, or with bare hands. This is a paddle churn, a barrel that contains a paddle, which is operated by a handle. The paddle churned the butter inside the container when the handle was turned. These are milk bottles from the Warrnambool firm of Antarctic Ice. In the 1930s a pasteurising plant was set up in Warrnambool in conjunction with an ice works in Kepler Street, Warrnambool, known as Antarctic Ice (Good and Stevenson). This firm secured a milk supply from several dairy farmers in the Warrnambool district. Antarctic Ice at the Kepler Street site was eventually bought by the Warrnambool Cheese and Butter Company and Kraft Foods as equal partners and the milk was marketed as the Sungold brand. A farmer, Kaye Ryan, had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) to treat his own milk in opposition to Antarctic Ice and later Sungold. Kraft and Warrnambool Cheese and Butter purchased the Ryan business and the Sungold operations moved to the Ryan site. Kraft sold its share of Sungold and in 1989 the Sungold plant was moved to the Warrnambool Cheese and Butter Factory at Allansford where it operates today. These bottles are of great interest, firstly as examples of the pint bottles in which we used to receive bottled milk in the mid 20th century and secondly as examples of the bottles used by an important local Warrnambool firm, Antarctic Ice. These are six clear glass one pint milk bottles. They have round bases and bodies tapering through to the neck with a round moulded glass top. The North-Eastern Dairy Company was established on 14th December 1892 as a butter factory and built in 1893. In 1928 a new butter factory was built and a milk products factory in 1952. Whole milk sales commenced in 1951, with pasteurised, homogenised milk in both bottles and cartons being sold in the 1980's. Devondale / Murray Goulburn was established in 1950. Cartons enabled the safe transportation and storage of milk. The North East Dairy Company enabled the dairy farmers in the Kiewa Valley to send their milk and milk products eg. cream to the factory at Kiewa. The factory bought its own cream carting vehicles during WW1. This milking equipment was used in the early days of milking using machines. The dairy industry is and has been one of the major industries of the Kiewa Valley. This equipment was used on local farmers, P & R. In 1890 D. Babcock invented a test for measuring the amount of butter fat in milk, either on the farm or in the dairy or creamery. Samples of milk were put in the glass vial and then spun (by cranking the handle) causing the cream to separate from the non-fat milk thus determining the percentage of cream in the milk. This ledger was used by the Shire of Orbost from 1911 - 1914. It was used to record fees paid for Dairy Registration, Dog Registration and Sheep dipping. At that time dairy farmers were required to register all milking cows. Dogs, too, were to be registered and there were strict laws on sheep dipping. Every sheep-owner was to dip all his sheep immediately after shearing and directly from the shearing-board in every year and also at the time of dipping his sheep dip all his lambs. In case the sheep couldn't be conveniently dipped directly from the shearing board they were to be placed and kept in a securely fenced paddock to be dipped within sixty days after shearing. Sheep-owner who neglected or failed to comply with any of these directives were liable to a penalty of not less than One pound nor more than Twenty pounds. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. Orbost was at first included in the Bairnsdale Shire from 1882 and was later part of the Tambo Shire. Because of travelling distances the Croajingalong Shire was created in 1892 (name changed to Orbost Shire 17.2.1893 with James Cameron as the first Shire President. In 1994 it amalgamated to become part of East Gippsland Shire Council. The item was donated to Orbost & District Historical society from P.R.O.V. as a Place of Deposit (POD) item for safe keeping by a local history group or museum. The shire covered an area of 9,347 square kilometres and existed from 1892 until 1994 when it became part of the East Gippsland Shire Council. This item is a record of local council accounting. Mr Albert (Bert) Nankervis was born at Thougla, in the Upper Murray, in 1903. He had a large family and was one of eight children, four boys and four girls. He and his family moved to a farm in Wooragee named ‘Wattle Grove’ in 1918 after his father returned from serving as a soldier in World War One. The family established ‘Wattle Grove’ as a dairy farm as Beechworth has a high demand for milk and little supply. They had 25 milk cows that were hand milked every morning in order to provide milk for approximately 100 customers in the town, with any extra going to the butter factory at Springhurst. Albert married Floré Lilias Hardy in 1930 and they had two sons, Phillip and Barry. In this oral history, Albert discusses his life as a farmer in Wooragee, including his role in getting electricity to Beechworth, as well as his participation in the Young Farmer’s Association Immigration Scheme, which provided work experience to migrants in order for them to learn how to farm. This oral history recording was part of a project conducted by Jennifer Williams in the year 2000 to capture the everyday life and struggles in Beechworth during the twentieth century. This project involved recording seventy oral histories on cassette tapes of local Beechworth residents which were then published in a book titled: Listen to what they say: voices of twentieth century Beechworth. These cassette tapes were digitised in July 2021 with funds made available by the Friends of the Burke. Mr Albert (Bert) Nankervis’s account of his life in Wooragee and the local area, including Beechworth, during the early 20th century is historically and socially significant to the cultural heritage of the region. He details his life as a farmer and milkman in the early 20th century, particularly the interwar period (1918-1939), but also discusses life after the Second World War, including employing young migrant men to train them as farmers through the Young Farmer’s Association. This oral history account is socially and historically significant as it is a part of a broader collection of interviews conducted by Jennifer Williams which were published in the book 'Listen to what they say: voices of twentieth-century Beechworth.' While the township of Beechworth is known for its history as a gold rush town, these accounts provide a unique insight into the day-to-day life of the town's residents during the 20th century, many of which will have now been lost if they had not been preserved. This is a digital copy of a recording that was originally captured on a cassette tape. The cassette tape is black with a horizontal white strip and is currently stored in a clear flat plastic rectangular container. This glass jar once contained Australian-made Nestle’s Malted Milk. The jar carries the company’s familiar logo. This jar would have originally had a screw-top metal lid. The large jar may have been used in a canteen, hospitality business or hospital due to its capacity. The jar was owned by Dr W.R. Angus, surgeon and oculist, who lived in Warrnambool with his wife and growing family for over thirty years. It may have been purchased from the Nestle factory in nearby Dennington. The jar was donated by his family and is part of the W.R Angus Collection. Nestles Malted Milk powder is usually added to either hot or cold milk as a nutritious drink supplement. The powder is a combination of evaporated whole milk powder, malted barley and wheat flour. Nestle began in 1867 and its products were available in Australia since the 1880s. Australia had become Nestle’s second-largest export market by 1906 and by 1908 Nestle had set up business in Australia. The Nestle factory in Dennington, Warrnambool, opened in 1911 and was the world’s largest condensed milk plant. For over 100 years the factory produced dried milk powder from the produce of local dairy farmers. It was a major employer for the district until an announcement was made on May 2019 by its recent owner Fonterra that it was closing its Dennington site for financial reasons. This Nestle Malted Milk jar is connected to the history of Warrnambool, as it was owned by the daughter of Dr W. R. Angus and his wife Gladys. It is part of the W.R. Angus Collection, which is notable for still being located at the site connected to Doctor Angus, Warrnambool’s last Port Medical Officer. It is also connected through its manufacturer Nestle. which had a branch in Warrnambool from 1911 to 2019, overlapping the time when the Angus family resided there, from 1939 to the 1970s. The jar is also significant as an example of the early-20th-century food found in local households and businesses, and could have been purchased from the local Nestle factory.Round tall clear glass jar with a wide mouth, short neck and straight sides on a cylindrical body. The jar has been blow-moulded in two pieces with a side seam running from the base to the top of the lip. There are air bubbles in the glass, and the base has been ground flat. The outside of the mouth is threaded. Inscriptions are moulded on one side and there is a round logo with text around an image of a mother bird with three young birds in a nest. The jar once contained Nestles Malted Milk and was made in Australia around the 1920s. The jar is part of the W.R. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. This photograph is part of the collection of items given into the care of the Cheese World Museum.
