R. Coulthard, President of the Australian Institute of Dairy Factory Managers and Secretaries Inc. (Victorian Branch) in 1965 and 1966. The Butter Factories’ Managers Association was formed in the 1890s and held its first annual conference in 1893. This organisation became the Australian Dairy Institute and then was incorporated with the Australian Society of Dairy Technology on 24 March 1986 to become the Dairy Industry Association of Australia. Ross Coulthard was a former manager of the Tallangatta dairy factory and later manager of the North Eastern Dairy Company at Kiewa. He had gained experience at several dairies across Victoria and was a qualified Butter Maker, Milk and Cream Grader and Tester and later a Cheesemaker. He took over as manager at Tallangatta in 1954 and later became Manager of the North Eastern Dairy Company at Kiewa after a merger with the Tallangatta Butter Company. He served as Victorian President of the Dairy Industry Association in 1966 and 1976 and was the Australian National President in 1980. A woman stands beside the ruins, observing them solemnly. The owner of this once prominent dairy, John Brewer, was born in Cornwall, England in 1832. After coming to Australia in 1849, Brewer worked in various forms of livestock transportation. Upon hearing of the vast discovery of gold in Victoria's north-east, he engaged in mining in the Ovens Goldfield district before starting his own dairy on Wooragee road (now Old Wooragee road). The Wooragee Valley, approximately five kilometres north of Beechworth, was used extensively during the nineteenth century to build farming practices in the area, possessing eighteen farms by 1860. Brewer enjoyed a prosperous career in the dairy industry, personally delivering milk to the residents of Beechworth. He died on the thirteenth of August 1915, a few weeks shy of his eighty-third birthday. As this photograph is dated approximately fifteen years later, it can be assumed that the dairy fell into neglect following his death. The sons and other descendants also purchased farms in the area. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992 after which the property was sold. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. The collection of items from their property was put into store for a number of years before being given into the care of the Cheese World Museum. The family often re-used, recycled and repaired items and examples can be seen in the museum. This item is part of the collection of items given into the care of the Cheese World Museum. The Warrnambool and District Pig Breeders', Agents and Buyers' Association was responsible for inspecting pigs. During the early 20th century the pig industry was included as part of the dairy industry. After milk was separated the cream went to the factory and the skim milk went back to the farm to feed the pigs. Early newspaper reports include information relating to the price of bacon in the list of dairy goods. Warrnambool Cheese and Butter Factory commenced a bacon factory in the early 1900s but it was a short-lived operation. The Babcock tester was used to determine the butter fat content in milk. Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. This test also provided a means for farmers to identify poor performing cows and upgrade the quality of their herd and subsequent milk supply to the factory.Four tipping metal testing tubes which revolve on a brass base. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. This photograph is part of the collection of items given into the care of the Cheese World Museum. This arrangement remained in place until the 1990s. WCB took over the Garvoc factory in the 1920s.
