These stirring rods with long handles and base referred to as a dasher were common in the dairy industry. They were made to agitate milk or cream in milk cans and were used on dairy farms and in old creameries. They helped to cool the milk and stop it from separating. These letters are part of communication which took place between Sir Robert Menzies and Mr. G. R. Coulthard, President of the Australian Institute of Dairy Factory Managers and Secretaries Inc. (Victorian Branch) in 1965 and 1966. The Butter Factories’ Managers Association was formed in the 1890s and held its first annual conference in 1893. This organisation became the Australian Dairy Institute and then was incorporated with the Australian Society of Dairy Technology on 24 March 1986 to become the Dairy Industry Association of Australia. Ross Coulthard was a former manager of the Tallangatta dairy factory and later manager of the North Eastern Dairy Company at Kiewa. He had gained experience at several dairies across Victoria and was a qualified Butter Maker, Milk and Cream Grader and Tester and later a Cheesemaker. He took over as manager at Tallangatta in 1954 and later became Manager of the North Eastern Dairy Company at Kiewa after a merger with the Tallangatta Butter Company. He served as Victorian President of the Dairy Industry Association in 1966 and 1976 and was the Australian National President in 1980. Taken in approximately 1930, this photograph depicts the ruins of Rosehill Dairy. A woman stands beside the ruins, observing them solemnly. The owner of this once prominent dairy, John Brewer, was born in Cornwall, England in 1832. After coming to Australia in 1849, Brewer worked in various forms of livestock transportation. Upon hearing of the vast discovery of gold in Victoria's north-east, he engaged in mining in the Ovens Goldfield district before starting his own dairy on Wooragee road (now Old Wooragee road). The Wooragee Valley, approximately five kilometres north of Beechworth, was used extensively during the nineteenth century to build farming practices in the area, possessing eighteen farms by 1860. Brewer enjoyed a prosperous career in the dairy industry, personally delivering milk to the residents of Beechworth. He died on the thirteenth of August 1915, a few weeks shy of his eighty-third birthday. As this photograph is dated approximately fifteen years later, it can be assumed that the dairy fell into neglect following his death. The Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992 after which the property was sold. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. The collection of items from their property was put into store for a number of years before being given into the care of the Cheese World Museum. The family often re-used, recycled and repaired items and examples can be seen in the museum. This item is part of the collection of items given into the care of the Cheese World Museum. The Warrnambool and District Pig Breeders', Agents and Buyers' Association was responsible for inspecting pigs. During the early 20th century the pig industry was included as part of the dairy industry. After milk was separated the cream went to the factory and the skim milk went back to the farm to feed the pigs. Early newspaper reports include information relating to the price of bacon in the list of dairy goods. Warrnambool Cheese and Butter Factory commenced a bacon factory in the early 1900s but it was a short-lived operation. These glass churns came in several different sizes. A 3 and 1/2 pint vessel could churn 2 pints of cream into butter. A similar glass churn is advertised in the mail order catalogue for D & W Chandler Ltd, Melbourne. Issue No.49, page 168. Listed as 'Butter machines (Glass) Makes butter equal to the best wooden churn, and quicker. Series of interviews with former employees of Kraft (Allansford) and directors of Warrnambool Cheese and Butter Factory discussing their time and experiences as employees and directors of the factories. The Babcock tester was used to determine the butter fat content in milk. Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. This test also provided a means for farmers to identify poor performing cows and upgrade the quality of their herd and subsequent milk supply to the factory.Four tipping metal testing tubes which revolve on a brass base. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. This machine was the first double action (suction and pulsator) milking machine. This method is still in use today. Invented by Alexander Gillies,of Terang. The LKG milking machine is of State significance because it represents a high degree of technical achievement. It demonstrates the innovation developed by a Western District farmer, Alexander Gillies, that enabled dairy farms throughout Victoria to move successfully from hand milking to machine milking, thus contributing to the mechanisation of one of Victoria's major rural industries. The Warrnambool Cheese and Butter Factory Company Limited was established in 1888 at Allansford and remained as an independent dairy manufacturer until 2014 when it was taken over by Canadian company Saputo. The factory was burnt in 1929 and all records lost. This booklet is a reprint of the original.Warrnambool Cheese and Butter Company Ltd was the earliest dairy manufacturer registered in Victoria. The Kraft Walker Cheese Co Pty Ltd entered into an agreement with Warrnambool Cheese and Butter Factory Company in 1935 whereby the Kraft company leased premises from WCB. This arrangement remained in place until the 1990s. WCB took over the Garvoc factory in the 1920s.
