World War 2 commenced in 1939 in Europe. The first controls over the production and distribution of products in Australia were introduced in 1940, partly due to disruption of shipping. In 1942, after Japan entered the War, comprehensive rationing was introduced to manage shortages and control civilian consumption. After the War, rationing was gradually phased out. Clothing rationing was abolished on 24 June1948. The last rationed product was tea, which ended in July 1950.Many young men from the City of Moorabbin volunteered for active service during WW2 .The market gardeners had to manage their farms with reduced labour. Farms and businesses over the whole country were affected so rationing was introduced to control the civilian use of commodities. The Satin Bowerbird is commonly located around the eastern and south-eastern coast of Australia. They reside in wetter forests and woodlands, and nearby open areas. They feed mostly on fruits throughout the year but in summer will supplement their food supply with insects and in winter with leaves. The Satin Bowerbird is most commonly known for it's practice of building and decorating it's bower. They will often collect objects of bright blue to decorate the bower including straws, clothes peg, parrot feathers, pens, marble, string, glass and bottle tops. This decoration is done by a male Bowerbird in the effort to attract females. This specimen is part of a collection of almost 200 animal specimens that were originally acquired as skins from various institutions across Australia, including the Australian Museum in Sydney and the National Museum of Victoria (known as Museums Victoria since 1983), as well as individuals such as amateur anthropologist Reynell Eveleigh Johns between 1860-1880. These skins were then mounted by members of the Burke Museum Committee and put-on display in the formal space of the Museum’s original exhibition hall where they continue to be on display. This display of taxidermy mounts initially served to instruct visitors to the Burke Museum of the natural world around them, today it serves as an insight into the collecting habits of the 19th century.This specimen is part of a significant and rare taxidermy mount collection in the Burke Museum. This collection is scientifically and culturally important for reminding us of how science continues to shape our understanding of the modern world. They demonstrate a capacity to hold evidence of how Australia’s fauna history existed in the past and are potentially important for future environmental research. This collection continues to be on display in the Museum and has become a key part to interpreting the collecting habits of the 19th century.This taxidermy Satin Bowerbird specimen has dark black/blue glossy plumage and a pale coloured bill of small size. The bird is of a medium size compared to other species of birds and has pale legs with short talons. The eyes are made of strikingly blue coloured glass which represents the violet-blue iris of this bird while living. The bird has a short tale and has been stylized in a leaning/crouched position with it's back arched upwards and head out long. This specimen stands on a small platform and there is some deterioration to the tail feathers which protrude beyond the platform which may have otherwise provided some protection. Schuss was advertised as Victoria’s Official Ski Journal It was issued monthly from 1935 to 1961 except during the war when summer issues covered two months. This continued after the war, but it averaged 10 issues annually over its 25 year life. Schuss was published by the Ski Club of Victoria which had a membership of 38 Ski Clubs and demanded to be recognised as the prime authority on skiing in the state. The other 30 ski clubs with 85% of the members disagreed and the politics of skiing became heated. These clubs formed the Federation of Victorian Ski Clubs with their own journal, Ski Horizon. With the establishment of the Victorian Ski Association, Ski-Horizon published its last issue in Nov - Dec. 1955 and the role of the official journal was fully taken over by “Schuss”. This item is significant because it contains stories, images and information documenting the development of the ski industry in Victoria.The journal features stories and events chronicling developments in Victoria and internationally. Page 234 - 235 featured an extensive report on developments at Falls Creek, Victoria. FALLS CREEK SKI CENTRE CONTINUES ITS STEADY ADVANCE Falls Creek skiing has continued to show markedly improved standards over this past season. Better facilities in and around the ski village itself have been accompanied by better skiing on the abundant snow covering all adjacent slopes. Just to mention a few of those facilities in the village: There have been extensions and big improvements at the Hymans Ski School, a number of excellent new club lodges have come into being, Nissen Lodge is in operation at the foot of the tow and adjacent slopes all setting new standards of ski-living that must make other resorts watch their step. While the advent of Cecil Dobson's General Store and Ski Centre, added to the service already available at the Nissen tow house, has removed all the old problems of food supply. Nissen ski-tow, the enticing face of the Frying Pan has given good service for a number of seasons now. To it has been added this year Bob Hyman's small portable tow which has worked for most of the season on the slope just in front of Skyline Lodge. The racing programme carried out at Falls Creek through this season has maintained the high standard shown in all other affairs. The main events started with the N.E.D.S.A. After moving to Melbourne in 1903, she was swiftly employed by the Argus newspaper and became the lead writer for the women's sections in 1908, continuing to work in the role until she retired in 1939. During this time she extensively covered domestic and community welfare topics, alongside advice columns replying to a vast quantity of letters; her writing contributed to creating a space in newspaper journalism to address the interests of women at the time. During her time at the Argus she moved away from the radical activism of her youth, becoming an establishment figure over the course of her long career. She was a prominent figure in Melbourne life as President of the Victorian Women’s Writers’ Club, the Lyceum Club, and a foundation member of the Australian Journalists’ Association. Even after her retirement from the Argus, her journalism continued to have an influence; during the Second World War, Stella reported from England on the wartime experiences of women and children. This recipe book was one of several written by "Vesta" - most likely, this is the 1939 edition - and aimed to provide a collection of nutritious recipes to aid women in choosing meals to cook for their households. The introduction to the book stresses the importance of nutrition, referring to a League of Nations survey that revealed that "in spite of our abundant and varied food supply, nutritional and dental diseases are much too prevalent in Australia." In 1861, William Dennis of Carrs Plains Station, a staunch Methodist became Honorary, Aboriginal Protector for the area. One of his main tasks to give Government supplied food and clothing to the Aboriginals. Many district, remaining First Nations People became based at Carrs Plains, and their dead were buried in a cemetery on the station. The cemetery is show on survey map of Wirchilleva Borough, in corner of camping & water reserve near surveyed Bismarck township. Gold was discovered in Victoria c1850 and people came from all over the world to seek their fortune at Ballarat and Bendigo and surrounding gold fields. This large wooden rocking- box or cradle was used by gold prospectors. A handle on the rocker is pushed back and forth, as the miner put gravel into the top part and finer and heavier particles dropped through a screen, helped along by buckets of water. The bottom part of the device had slats, that caught the heavier metals. After many shovel loads of gravel were pushed through the rocker, the miner would then use his gold pan to sort out the heavy minerals to find gold. Most of the pioneer settlers in Moorabbin Shire left the area to try their luck at gold mining and there was a desperate shortage of workers to maintain the market gardens and supply food to the ever increasing population of Melbourne.This gold prospector's 'cradle' is hand made and typical of those used by many hopeful Moorabbin Shire pioneers as they abandoned their market gardens to try their luck at finding gold in the Ballarat and Bendigo minefields c1850This gold miner's rocker is very old, and very well-used. In 1840 Henry Dendy, a farmer in Surrey, England acquired a "Special Survey" from the Commissioners for Land and Emigration which gave Dendy the right to choose land in Port Phillip for the "bargain basement" price of only £1 per acre for 5120 acres, (an area of 8 square miles). The Special Survey also included the right to "the shipment of a worker for every £20 spent on land, whose free passage was paid by the Crown, equalling a total of 100 workers ". Accordingly Dendy sold his English holdings and paid the required £5120 and arrived in Melbourne in February 1841. However by this time land in the new colony was selling for £5 - £40 per acre. Because Henry Dendy possessed the order from the Colonial Office in London he was able to successfully oppose Super-intendant LaTrobe's attempts to alter the price of the land. Dendy appointed Jonathan Were, (an entrepreneur, who had arrived in 1839), as his Manager and who later became a partner. Together, Dendy and Were decided on an area 5 miles south from Melbourne, bounded by North Road, East Boundary Road, South Road and to the west by Port Phillip Bay. Were and Dendy pitched their tents in the area now known as ' Park St, Brighton' and sank a well near the corner of 'St Andrew's St and Wells St'. By 1845 J.B Were and Company had bought almost half of Dendy's land and Were built himself "Moorabbin House" in Were St Brighton made from stone, quarried from local cliffs. On 18th January1859 Brighton was proclaimed a Municipality and a Borough by October 1863. Meanwhile, following a Petition, the area of East and South Brighton, incorporating Mordialloc, Cheltenham, Mentone, Sandringham and Oakleigh separated from Brighton to form the Moorabbin District Roads Board becoming the first Local Government Authority. Col. William Mair was elected as the first Chairman of the Moorabbin Roads Board. Moorabbin Shire 1871 developed further and was declared a City in1934. The historic Victorian ‘couta boat “Viator” was built by renowned boat builder J.R. Jones of Williamstown in Melbourne, between 1890 and 1920. He was one of the early builders of this design. The features of Viator - carvel planked, open cockpit, vertical stem and straight keel, single mast and a pivoting centreboard - are all characteristics of an early Bass Strait ‘couta boat. This has been confirmed by experienced Victorian ‘couta boat restorer Tim Phillips. Viator served as a ‘couta fishing boat in the Warrnambool area until the mid-1930s, then some say she served as a mail ferry across to Portland. Later it was used as a fishing and recreation boat for local families. For years Viator sat in a paddock in East Warrnambool until purchased in 1975 and donated to Flagstaff Hill. ‘COUTA BOATS - The ‘couta design for vessels is believed to have originated at Port Phillip, Victoria, for the purpose of the Barracouta (‘couta) fishing industry, being both fast and seaworthy. , The 'couta fish was an important food fish in Australian waters, supplying Melbourne with plenty of inexpensive fish. VIATORY’S OWNERS - Some of Viator’s history is known: - 1940, registered Port Fairy and owned by G.J. Richards. - 1941-1945, registered in Port Fairy and owned by Jens “Peter” Petersen. - 1950’s “Brusher” Richards of Warrnambool and Port Fairy used it for fishing. - Peter Watson and his son also went fishing in Viator. - Frank Ferrier, boat builder, was an owner (son of ‘La Bella’ hero, William Ferrier) - Arthur Rogers owned Viator too, then sold it to Terry Pridmore and Wayne Moorefield - The Viator was stored in a paddock, unused, in Fairmont Avenue, Warrnambool, where it was gradually deteriorating. - 1975 Viator was purchase at a very reasonable price from Pridmore, then donated to Flagstaff Hill Maritime Village. RESTORATION - Shipwright Erik Mikkelsen soon started restoration on the Viator after it arrived at Flagstaff Hill in 1975. In 2006 the Maritime Museums of Australia awarded a grant to Flagstaff Hill Maritime Village to assist with the restoration and renovation of the Viator. Viator received Heritage status with the Australian Maritime Museums Council and is listed on the Australian Register of Historical Vessels in 2006 (ARHV Number: HV000561). Viator was built in Victoria in the early days by renowned boat builder J.R. Jones, and sailed by fishermen for many years, both local and on the coastal waters of Victoria, and was possibly used for the mail service. Angus & Co. was a large ink, gum, and paste manufacturing company established in Melbourne in 1896 by Joseph Armstrong Angus (1860-1936.) The company's premises included a bottle works to supply bottles for its many products. The company supplied various inks, gums, and paste too many business and domestic customers. Mucilage is a thick, gluey substance produced by nearly all plants and some microorganisms. These micro-organisms include protists who use it for their locomotion. The direction of their movement is always opposite to that of the secretion of mucilage. It is a polar glycoprotein and an exopolysaccharide. The mucilage in plants plays a role in the storage of water and food, seed germination, and thickening membranes. Cacti (and other succulents) and flax seeds are especially rich sources of mucilage. Mucilage is edible. It is used in medicine as it relieves irritation of mucous membranes by forming a protective film. It is known to act as a soluble, or viscous, dietary fiber that thickens the faecal mass, an example being the consumption of fiber supplements containing Psyllium seed husks. Traditionally, marshmallows were made from the extract of the mucilaginous root of the marshmallow plant (Althaea Officinalis). The inner bark of the slippery elm (Ulmus rubra), a North American tree species, has long been used as a demulcent and cough medicine and is still produced commercially for that purpose. Mucilage mixed with water has been used as a glue, especially for bonding paper items such as labels, postage stamps, and envelope flaps. Differing types and varying strengths of mucilage can also be used for other adhesive applications, including gluing labels to metal cans, wood to china, and leather to pasteboard. An early item from the late 1920s for office use as a glue by a well-known Melbourne manufacturer of office supplies of inks, glues, rubber stamps, and mucilage gums, etc.Bottle of Mucilage. This wagon was used in towns across south-west Victoria during the first half of the twentieth century by Pooran Singh, an Indian-born immigrant. Singh arrived in Australia alone in 1899 at the age of 30. The following year, at the Colac Licensing Court in western Victoria, he was one of 78 hawkers granted a Hawker’s Licence. According to the Colac Herald, all but two of the applicants appeared to be Asian. While some hawkers registered horse-drawn carts, Singh was one of nineteen licensed to trade on foot, selling door to door. Applicants were encouraged to contribute to a collection for the Colac Hospital. Over time, Pooran Singh came to own his own wagon—a top-of-the-range light delivery vehicle—and a horse named Prince. His work often took him along rough country roads, and for a period, he worked in the Corryong district of north-eastern Victoria, an area popular with hawkers. In September 1909, near Thowgla, he was thrown from his wagon while attempting to navigate a deep rut and was run over by one of its wheels. Although he suffered bruising to his chest, his injuries were not serious. The following year, he was granted a Hawker’s Licence in Corryong. By 1916, Singh was living and working at Garvoc in western Victoria, where that year, he lost his paper licence on Cooramook Road, and he placed a notice in The Standard. In 1918, at the Warrnambool Petty Sessions Court, he was one of four applicants granted renewal of their hawkers’ licences, and each donated ten shillings to Warrnambool Hospital. Throughout these years, Singh became well known to farmers and their families as he travelled across Victoria’s Western District, living and working from his covered wagon. In his later years, Pooran Singh formed a close friendship with John Jandes Moore and his wife, Vera, of Russells Creek, Warrnambool. They offered him the use of their property as a base for his travels and cared for him during his final illness. John Moore was later appointed one of the two executors of Singh’s will. Pooran Singh died in Warrnambool on 8 June 1947, aged 77. His final wish was to be cremated and for his ashes to be returned to India for immersion in the Ganges. The cremation was arranged by Guyett’s Funerals in Warrnambool. Having never married, Singh left his estate to his four nephews, enabling them to buy land and build homes; one later installed a memorial plaque in his honour. In the late 1980s, Guyett’s Funerals placed his ashes in the niche wall at Warrnambool Cemetery as a memorial, while continuing to hope that family instructions might eventually arrive. Nearly 63 years after his death, renewed enquiries brought public attention to the long and respectful care given to his ashes. As a result, the renowned Indian cricketer Kapil Dev travelled to Warrnambool to collect them and escort them to India, helping to fulfil Singh’s final wish. He was joined by one of Singh’s grand-nephews, Harmel Uppal, who had travelled from England. At a formal ceremony on 25 July 2010 commemorating Singh’s life, the ashes were handed to Dev and Uppal, and local resident Avis Quarrell, who had known Singh as a child, read a poem she had written in his memory. She still owned a shell necklace that Singh had made for her mother. Some Warrnambool locals who had been closely involved also travelled to India, where they joined Uppal’s family from the village of Uppal Bhopa, near Jalandhar. On 31 July 2010, Pooran Singh’s ashes were immersed in the Ganges, fulfilling the wish he had expressed more than six decades earlier. After Pooran Singh’s death, his horse and wagon remained on John Moore’s property. When Prince died, he was buried on the beach at Warrnambool. The wagon remained with the Moore family and was occasionally used as a cubby house. In about 1997, John Moore, the son of John Jandes Moore, donated it to Flagstaff Hill. After restoration, the wagon became an attraction in the village, where volunteer Pat and his Clydesdale horse, Duke, offered visitors rides around Flagstaff Hill’s lake. This wagon is significant for its association with an Indian emigrant who used it to earn an income in Australia. It also reflects the vital role of hawkers, who travelled through rural and regional communities in the late nineteenth and early twentieth centuries, supplying food, goods and news. The wagon is also historically significant as a former Flagstaff Hill attraction, offering visitors the experience of horse-drawn rides around the lake.Wagon: a light delivery vehicle once used as a hawker's wagon. It is a four-wheel, horse-drawn vehicle with iron tyres, brakes, spoked wheels painted red with decorative yellow strips on the hubs, a timber shaft, and springs on the undercarriage. It was once a covered wagon, fitted with green, wooden sideboards, a front seat with leather-padded backrest and mounting steps. The address on the flour bag is for the warehouse (wholesale depot) of the business which was a significant building in Brunswick St, Fitzroy.The flour bag provides a snapshot of packaging for a well known grocery store of the early twentieth century. Martini-Henry Artillery Carbin rifles were made by the Royal Small Arms Factory at Enfield, Britain, from 1877 until 1900. Many were distributed to the British Colonies, including this pair, which was allocated to the Woodford Police, Victoria Police District of Warrnambool, Southwest Victoria. The Carbine model rifles were shorter than the standard rifles and more suited to mounted police and troopers. It is likely that in the early 20th century, Victoria Police replaced the two carbines with more modern firearms, and the outdated guns were stored in the stables. The rifles were left there and likely forgotten about due to changes in police staff. In 1915, police authorities announced that they would be replacing patrol horses with bicycles and would also close some smaller police stations. This affected Woodford Police Station, which closed in 1917. The forgotten firearms remained in the stables and were noticed by schoolboy Robert Jellie in 1940 and seen again in 1946. In 1995, the property was sold by the Education Department to a private owner. The Woodford Community donated the pair of Martini-Henry Carbines to the Victoria Police Museum in the late 1990s for mounting and display, which was funded by the Victoria Police Historical Society Inc. The decorative wood and glass display case and frame were designed to preserve the significant history of the guns. On November 1st 1999, the display was presented to Warrnambool Police and the local community due to the historical significance of the Woodford Police Station. In 2025, these items were formally deaccessioned by the Victoria Police Museum, and ownership was transferred to the Warrnambool Police Station. On March 10th, 2025, the display was transferred to Flagstaff Hill Maritime Museum and Village, where the historical story of the Martini-Henry Carbines could continue to be preserved and accessed by local families, the community, visitors to the area, and online visitors. WOODFORD POLICE: - The small settlement at Woodford was established in the 1840s around the Merri River where there was a ford across the water and a bridge from 1848 to 1851. The area was settled very early in Victoria’s history, and the river crossing provided travellers with access to the early route between Port Fairy (named Belfast at that time), Warrnambool and Melbourne. Occasionally, a Warrnambool police trooper would ride through Woodford and the district. In December 1854, Woodford Police barracks and stables were built on the hill by the Merri River on Bridge Road east, where Jubilee Park now stands. A local mounted trooper kept law and order in the area. In 1856, a lock-up was installed, and the first Woodford Police Station was in action in 1857. By 1871, the police station had been moved from the hill to land across the Merri River bridge, on the southern side of Bridge Road west, near Mill Street. In 1890, the police residence there was replaced by a stone Edwardian-style building with the stables and lock-up behind it and the old police station at the rear. The police continued to have a presence in Woodford until it was closed by the Police Commissioner in July 1917 for economic reasons. The residence was used for government housing until 1923, when it was taken over by the Education Department for the school teacher’s home. In 1995, it became privately owned. THE MARTINI-HENRY ARTILLERY CARBINE: - The Martini-Henry rifles were made in Britain from 1871 at the Royal Small Arms factory at Enfield and were stamped with the symbol of the Royal Cipher (Crown over VR) over ENFIELD to identify their origin. They were named after two of several people who helped design this method: Swiss Friederich von Martini and Scotsman Alexander Henry. The design was breech-loaded, and the inner barrel was rifled. A thumb rest was incorporated into the top right of the bullet receiver’s chamber. The small teardrop lever on the right side of the rifle showed whether the rifle was ready to be shot. In 1877, the shorter, lighter-weight Carbine version of the firearm was produced for mounted troops and artillery. Its official name was “Carbine, B.L., Rifled, Martini-Henry.” The bullets were slightly lighter in weight than those used for the longer rifle. The sight position was adjusted for the shorter gun, and wings were added to the sight on the tip, making it easier to slide the rifle back into a saddle bag. Some of the later Carbines also had leather sight covers screwed to the stock to prevent them from catching on the saddle bags. The Carbines had accessories available, such as barrel extensions with bayonets and swivels for adding slings. The Martini-Henry Carbine designs were later modified to fire the British .303 ammunition. Eventually, by 1900, the Martini-Henry Carbines were replaced by the Lee Enfield gun design. The pair of Martini-Henry Carbine firearms represents policing in the early pre-1900 days of colonial settlement; Woodford was one of the first townships settled in Victoria, and it had a police presence from 1854 until 1917. The rifles and display provide a historic connection between the location of Woodford and relatives and associates. The carbine rifles show a stage in the evolution of weapon design, adapted to suit mounted troops, and adding features to streamline use and storage. The ammunition was also improved during this progression. The carbines are important for their connection to policing law and order in a remote area. They are significant for their association with the township of Woodford, which was important to travel in the southwest Victoria district, providing access across a river for a road between Port Fairy and Melbourne, and later Warrnambool, and supplying food, goods and accommodation for the travellers. A pair of mounted rifles is mounted behind glass in a timer case, accompanied by a framed display of two photographs and an account of the rifles’ history. The case and display each have a horizontal board with a gently curved edge and carved decorations added. The identical firearms are British-made Martini Henry Carbine breach-loaded rifled guns, supplied by Britain to its Colonial troops from around 1877. The rifles are lever-action, single-shot .500 calibre weapons. They have a teardrop lever on their right side. They were used by Victoria Police mounted troops at the Woodford Police Station, Victoria. The black and white photographs were taken in 1946. The left photograph has a circled area; the right photograph is an enlarged view of the circled area, showing the Woodford Police Station in detail. The printed text is on textured paper with the Victoria Police watermark. It gives a summary of the rifle’s history. There is an inscription on the left photograph. Left photograph, handwritten in white pen: “WOODFORD” Document’s print: “During the late 1840s the small town of Woodford grew around the crossing of the Merri River on the Melbourne/Port Fairy Rad. Woodford was proclaimed a township in 1854 and a police quarters was established there in 1857. The police station remained until 1917 when it was closed and police service from then on was provided from Warrnambool. The building was then used as a school residence and is now privately owned. In !940 Robert JELLIE, then a schoolboy, observed two rifles mounted on the wall of the disused stable at the rear of the old police building. Following the devastating flood of 1946 (see photograph above) the rifles were again seen in the room next to the stable but were not seen again until the building was sold by the Education Department many years later. It was a recognition of the historical value of the rifles which led to their donation to the Warrnambool Police Complex. The rifles have been authenticated by the Victoria Police Armoury as being Victoria Police issue some time before 1900. The rifles are an identical pair of the famous British-made Martini Henry, a .500 inch calibre military weapon widely used by British Colonial troops. Victoria Police and the wider community of Warrnambool are indebted to the members of the Woodford community for their fine gesture in donating the rifles for mounting so that their historical importance can be preserved and they can be displayed for generations to come. AMF Operational Ration This ration pack was developed by Sir Stanton Hicks. It contained three meals, each waterproofed (a vital consideration for the tropics), which offered a balanced selection of meat, vegetables, fruit and vitamin supplements. Before the development of this ration pack, Australian soldiers were supplied with quantities of preserved food that were difficult for a man to carry and divide, and which often did not provide a nourishing diet. Sir Cedric Stanton Hicks (1892-1976), university professor and army catering officer, was born on 2 June 1892 at Mosgiel, New Zealand. University of Otago (B.Sc., N.Z., 1914; M.Sc. Hons, 1915; M.B., Ch.B., 1923) 1916-18 Hicks served as a non-commissioned officer in the New Zealand Expeditionary Force and he assisted Professor J. K. H. Inglis in the synthesis and production of Chloramine-T for use against meningitis among the troops. Hicks was appointed government analyst in 1918. On a Fellowship 1923, he travelled to England and studied at Trinity College, Cambridge (Ph.D., 1926) and caried out research in Switzerland, Germany and the United States of America. 1927 he was appointed to the new chair of physiology and pharmacology at Adelaide University, which he was to hold until 1957. During the Depression he studied the dietary patterns of five hundred families receiving relief. 1940 Hicks was appointed temporary captain, Australian Military Forces, and performed part-time duty as catering supervisor. Moved to Melbourne as chief inspector of catering, he began a campaign for applying scientific principles to the feeding of troops. 1943 the Australian Army Catering Corps was formed. Hicks altered the basis of the allowance for military rations from a monetary to a nutrient entitlement, improved the pay and promotion opportunities of cooks, established schools of cooking and catering, devised new methods for preparing food, supported the service's adoption of the Wiles steam-cooker, and designed jungle-patrol, emergency and air-drop rations. His 'Who Called the Cook a Bastard?' The invention of the Coolgardie Safe is credited to Arthur Patrick McCormick, a contractor in Coolgardie, and later the Mayor of Narrogin. Coolgardie is in the Eastern Goldfields region of Western Australia. Gold was first discovered there in 1892; the townsite became a municipality in 1894, and by 1898 its population of 15,000 made it the third largest town in Western Australia after Perth and Fremantle. In the last decade of the 19th century, Coolgardie was the capital of the West Australian goldfields. Being 180 kilometres from the nearest civilisation, food supplies were initially scarce and expensive. As fresh food was a valuable commodity there was incentive to preserve it, and keep it out of reach of scavengers such as birds, dingos, dogs, ants, and flies. It was in an effort to do this, in the extreme heat of the Australian Interior, that McCormick came up with his design for the Coolgardie Safe. McCormick noticed that a wet bag placed over a bottle cooled its contents. He further noted that if this bottle was placed in a breeze, the bag would dry out more quickly, but the bottle would get colder. What McCormick had discovered was the principle of evaporation: ‘to change any liquid into a gaseous state requires energy. This energy is taken in the form of heat from its surroundings.’ Employing this principle, McCormick made a box for his provisions which he covered with a wet hessian bag. He then placed a tray on top, into which he poured water twice daily. He hung strips of flannel from the tray so that water would drip down onto the hessian bag, keeping it damp. As the water evaporated, the heat dissipated, keeping the food stored inside cool and fresh. The success of McCormick’s invention would not have worked without a steady supply of water. Fresh water was scarce in the eastern goldfields at this time but the demand for water from a steadily growing population encouraged innovation. The solution was to condense salt water. Heating salt water in tanks produced steam that was condensed in tall cylinders, cooled and then collected in catchment trays. By 1898 there were six companies supplying condensed water to the goldfields, the largest company producing 100,000 gallons of water a day. In the early 20th century, Coolgardie Safes were also manufactured commercially. These safes incorporated shelving and a door, had metal or wooden frames and hessian bodies. The feet of the safe were usually placed in a tray of water to keep ants away.
