Born in Balmoral Victoria, he came to Warrnambool in 1932 to study at the Warrnambool Technical School. He worked for forty years in the laboratory as a microbiologist in the Kraft Cheese Factory based at the Warrnambool Cheese and Butter Factory in Allansford . His research work here formed the basis of the Department of Agriculture guidelines for dairy production in Victoria. He was a noted Warrnambool historian and was President of the Warrnambool and District Historical Society for forty years.This item is a memento of Les O Callaghan a prominent 20th century identity in Warrnambool.A sheet of white paper folded in two to make four pages. This is the story which accompanied the gift. 'This penny has been in my possession since 1946. Was obtained at Koroit Races that year -Royal Gem winner of the Caulfield Cup. This penny was wrapped in silver paper and was accepted by the bookmaker Mr Harold James whom I clerked for as a wager. I in turn payed [sic] my wages for working for this bookmaker and received same. Incidently [sic] the custom of this bookmaker in those days was the clerk usually was paid with silver, which was left in the bag as he did not wish to carry the silver home as he lived in Melbourne.Circular coin -obverse has name of company (William Bateman) in an inner circle with the word Victoria across the centre; within outer circle the type of trade engaged in and the year minted. Les O'Callaghan Warrnambool historian.... and re-assembled in the 1980s by Les O'Callaghan, a Warrnambool... in the 1980s by Les O'Callaghan, a Warrnambool historian and President ...This spinning wheel was recovered in pieces from N.S.W. and re-assembled in the 1980s by Les O'Callaghan, a Warrnambool historian and President of the Warrnambool and District Historical Society for many years. The spinning wheel is believed to have belonged to Alice Allan (nee Mullaly) who married William Osborne Allan in 1844. They had three sons. William Allan was a pioneer settler who, in 1839/40, established, with his brothers, a property (Allandale) east of the Hopkins River in the area known today as Allansford. During the 1840s the property was divided with William taking up the Allandale section and his brother John taking the Tooram section. William died in 1860 and Alice continued to manage the property with the assistance of her sons until her death in 1887 when the Allandale estate was sub-divided. A spinning wheel such as this would have been an important item in a pioneer settler's home with the wife needing to spin wool or sometimes flax to produce cloth for clothing and furnishings. This spinning wheel is of considerable significance as it is believed to have belonged to Alice Allan, a pioneer settler in the Warrnambool district. This would make it one of the oldest and most interesting items in our collection.This is a spinning wheel made of metal and wood. ... les o’callaghan, warrnambool ...This book was a text book used by Arthur Gregory, the test room technician at Warrnambool Cheese and Butter Factory in the 1930s. He tested the suppliers’ milk and cream for butterfat percentage in order to determine the payment to the suppliers. Arthur Gregory later became the manager of Jays Laundry in Fairy Street. In the 1930s Arthur Gregory boarded at 28 Spence Street in Warrnambool. This boarding house was run by May Taggart, the wife of Sam Taggart, a Warrnambool tailor. Les O’Callaghan was also a boarder there and it was through his contact with Arthur Gregory that he obtained the position of laboratory technician at the Warrnambool Cheese and Butter Factory. Les O’Callaghan remained for over 40 years at this factory (leased at that time by the Kraft company) and was very important in the development of laboratory techniques used in the dairy industry. The Warrnambool Cheese and Butter Factory was established at Allansford in 1888 and is still in production today, operated by the Canadian firm of Saputo. This book is of interest because of its connection to Arthur Gregory, a test room technican at the Warrnambool Cheese and Butter Factory in the 1930s and to Les O’Callaghan, the Laboratory Manager and Microbiologist at Warrnambool Cheese and Butter Factory for more than 40 years. This is a hard cover book of 822 pages. It has a blue cover with gold lettering on the spine. It has 29 chapters, an appendix, a bibliography and an index. It has many black and white illustrations and drawings. The spine is slightly scuffed. Les O’Callaghan History House, Warrnambool ...These two bottles were found by workmen building a new retaining wall on the north side of the Les O’Callaghan History House building in Gilles Street Warrnambool. The wall replaced one damaged beyond repair following a car accident in 2019. The building was erected in 1889 as the caretaker’s cottage in the Warrnambool Sea Baths complex (for most of its existence it had two swimming pools, a hot sea water baths building and a caretaker’s cottage). The water in the baths were pumped up from the ocean and, for the hot baths, heated on site. These baths were the municipal baths until the mid 1950s. The bottles may have originated from the one of the families residing in the cottage or from passers-by in the adjoining Merri Street or from patrons of the baths. They appear to be over 100 years old but there is no way the ownership of the bottles can be established.These bottles are of interest as archeological finds after repair works to the Les O’Callaghan History House. .1 A dark green (or black?) glass bottle with a hollowed out concave base, no stopper and a slightly chipped rim on the top. There are Les O'Callaghan handwritten notes and some typed material ...Clifton Banks is the name given to a bank on the Hopkins River Estuary, about one kilometre upstream from Proudfoots Boathouse. It is at the foot of the property, Clifton, which dates from 1850s. There are several works of art and photographs of Clifton Banks dating from the late 19th and early 20th centuries. Mary Norman (later known as Mary Norman=Bail) came to Warrnambool in 1901, residing with Canon and Mrs McGeorge. She studied art with Samuel Pearce Fuller and later taught art at Fuller's studio and at a local private school. She produced several seascapes and landscapes while she was in Warrnambool, leaving the town in 1905. She devoted the rest of her life to art as an artist and teacher. In 1922 she married Jess Bail. This art work of Clifton Banks won first prize at the 1902 Annual Ararat Art competitions. It was reported at the time that the work was not a copy but had been drawn from nature. The Warrnambool and District Historical Society has five of Mary Norman-Bail's art work.This is a most significant item as it is one of Mary Norman's art works and she was known in the early 20th century as a competent artist and a member of the Victorian Artists' Society. This art work also has historical significance as one of a number of Clifton Banks representations still surviving. Mary Norman also had an impact on the cultural life of Warrnambool during her short stay in the town. She also returned to teach in the town several times for short periods during the summer vacation times.This is a water colour mounted on art board and with a gilt framed and three outer layers of wooden gilded ornamental frames. The sides of the frames are broken in places and the guided material is somewhat discoloured. There are Les O'Callaghan handwritten notes and some typed material on the back giving information on Mary Norman and the art work. Les O'Callaghan commenced work ...Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw. It is thought ...An unknown couple on their wedding day, photographed by Warrnambool photographer, Alex Wilkins. Alex was popular as a photographer and produced a large volume of work. This photograph was purchased by Les and Elizabeth O'Callaghan at a cost of $5. It is thought to be members of the Cassady family.The photo depicts styles of wedding dress popular in the 1940’s. Alex Wilkins commenced his photographic career working for a local chemist and worked for some time from a studio at 151 Fairy Street Warrnambool and in 1938 purchased the studio of Arthur Jordan and moved to Liebig Street. The business was sold in 1961 and for some time after he operated in a small studio and worked shooting film for local TV channels. Alex died in 1972 after a short illness. 'Les O'Callaghan History House' This door plate with its ...This door plate was found at 28 Spence Street, Warrnambool by the builder Ray Hollingsworth, when he was renovating the building for the Warrnambool Presbyterian Church in June 2019. He realized that the inscription had been placed there by Leslie O'Callaghan, probably when he left the premises in 1942 after boarding there for some years. Leslie O'Callaghan (1918-2014) was born in Balmoral and left there at the age of 13 with a scholarship to study at Warrnambool Technical School. He became an industrial chemist, working at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese and Butter Factory). His experimental work in cheese cultures over a 45 year period was regarded as cutting edge work in the Victorian dairying industry. Known as 'Mr History', Leslie O'Callaghan was also an important Warrnambool historian, serving as president of the Warrnambool and District Historical Society for 35 years. In later life Les wrote about his time in 28 Spence Street, noting the lay-out of the early building and other boarders at the time. He never mentioned the interesting memento of his time there that he left on the back of a door plate. The Warrnambool and District Historical Society Archives Centre is called 'Les O'Callaghan History House'This door plate with its inscription was found 77 years after the inscription was written. It is of considerable interest because the writer of the inscription was well-known in Warrnambool as a bacteriologist and an historian. He left his own personal historical message and by sheer chance it was found years later. (All the old door plates at the time of the renovation were thrown out and it was fortunate that the builder happened to see the writing on one of them and to recognize who the writer was.)This is a cream-coloured ceramic door plate. It is rectangular-shaped with curved edges at the top and bottom. It has been painted white and has two holes at the top and bottom for the insertion of screws for a5taching the plate to the door. ... to one of the users of the machine, Les O'Callaghan, president... it was passed to one of the users of the machine, Les O'Callaghan ...This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate.
