"Every Sunday until I was about 12 (mid-1950s), there would be roast lamb with all the trimmings, good homemade mint sauce, roast potato and pumpkin, parsnip, tomato and onion pie with breadcrumb topping, fresh green peas and gravy. Monday night was Shepherd’s Pie, and I looked forward to it. The cold meat was cut up and fed through the mincing machine fastened to the table at Riversdale Rd. I don't remember it ever coming out at Walsh Street. Maybe Patricia was over cold roast lamb at that stage. I loved turning the handle and watching the meat squidge out, could hardly call it mince, some onion and lastly a slice of bread to push the bits through. Then the mincer all came apart, was washed and put away until next Monday. The meat and onion tossed with leftover gravy, mash on top, loads of butter, etched with a fork tine and baked in the oven. Wood throughout the ages Since the dawn of time, wood has been one of the most available materials used by mankind to build tools and lodgings, so it’s not really surprising to know that wood has been used in the preparation of food since the prehistoric ages. Of course, back then, cavemen probably used an unpolished slab of tree trunk to cut the kill of the day on and they probably didn’t think twice about saving it once the meal was over. Chances are they probably threw it in the fire with the rest of the wood needed to kindle it. Advances in technology Throughout the centuries, mankind evolved and started creating machines from steam, electricity and metal. When the circular saw was invented, nicer, cleaner slabs of wood were cut and used as cutting boards. Since soft wood was the most available type of wood at the time, it was the material of choice for to be used for cutting boards. Boards were made smaller since the slab of wood could now be cut to any desired size. Since they were made smaller, they were also used to eat off of and some people referred to them as trenchers. Trenchers were originally pieces of stale hard bread that were used as substitute plates. Wood trenchers quickly became the replacements of the eatable dinnerware. The butcher block: the cutting board’s larger cousin In the industrial ages, many industries rapidly developed, and the butchery industry followed this trend as well. Before the invention of the cutting board, butchers used tree rounds to carve their meat on. The rounds were often too soft and they rapidly became unsanitary. Hard maple wood butcher blocks were the preferred choice of the industry. They were made to be extremely thick and durable, so durable in fact, that a butcher could use the same block for almost his entire career. Cutting boards around the world As cutting boards began to be more and more used in kitchens around North America, the rest of the world crafted such boards from different materials. The East used thick bamboo as their material of choice. Despite its frail appearance, bamboo is quite strong and made durable cutting boards and butcher blocks. Europe used maple in the crafting of their cutting boards while Persia used flat pieces of polished wood in their kitchens. Meat hooks are used to hang up livestock that has been killed and is ready to be cut up for human consumption. The hooks vary in strength and size.The 'handle' enables the meat to slide along a rail. This item was used by Helena Warren (nee McKeown), a well known photographer and local press correspondent. She lived at Newmerella. The meat mincer was a particularly popular kitchen gadget. By means of the mincer left overs and off cuts could be transformed into shepherd's pie or mince steak. Gadgets like this Universal food chopper are typical of domestic inventions designed to reinforce the principles of thrift and labour-saving. Many of these gadgets were imported from the United States. A cast iron metal hand mincer with a long metal body with an opening at one end, inside which is a circular spiral blade and a screw clamp attachment at the other end. On one side of the mincer is a curved metal handle held in place by a metal nut and a wooden bulb shaped knob at the end. World War 2 commenced in 1939 in Europe. The first controls over the production and distribution of products in Australia were introduced in 1940, partly due to disruption of shipping. In 1942, after Japan entered the War, comprehensive rationing was introduced to manage shortages and control civilian consumption. After the War, rationing was gradually phased out. Clothing rationing was abolished on 24 June1948. The last rationed product was tea, which ended in July 1950.Many young men from the City of Moorabbin volunteered for active service during WW2 .The market gardeners had to manage their farms with reduced labour. Farms and businesses over the whole country were affected so rationing was introduced to control the civilian use of commodities. It aimed to curb inflation, reduce total consumer spending, and limit impending shortages of essential goods. The broad reasoning behind the introduction of rationing was to ensure the equitable distribution of food and clothing. It was also hoped that a cut on consumer spending would lead to an increase in savings, which in turn could be invested in war loans. Australians were never as short of food nor rationed as heavily as civilians in the United Kingdom. Rationing was enforced by the use of coupons and was limited to clothing, tea, sugar, butter, and meat. Australians were never as short of food nor rationed as heavily as civilians in the United Kingdom. Rationing was enforced by the use of coupons and was limited to clothing, tea, sugar, butter, and meat. From time to time, eggs and milk were also rationed under a system of priority for vulnerable groups during periods of shortage. Rationing was administered by the Rationing Commission. The basis for policing food rationing was through the surrender of coupons before rationed goods could be supplied. This had to occur between traders as well as consumers. Coupons were passed back from consumers to retailers, from retailers to wholesalers, and in many cases from wholesalers to producers, who were requested to return them to the commission. Breaches of rationing regulations were punishable under the general provisions of National Security Regulations by fines of to £100 or up to six-months imprisonment. Responding to the complaint that these penalties were inadequate, the government passed the Black Marketing Act at the end of 1942.
