Significance
The Dutch traditionally ate large quantities of potatoes. These would be peeled ahead of time by available labour (e.g., mother, children, visiting relatives) and kept under water till it was time to cook them.
Vegetables were similarly prepared and kept under water to prevent browning before cooking.
