Historical information
Lavers Hill Cheese Factory operated from 1906 until about August 1913. It consisted of a factory and a residence, with the managers B. Philbrick, D. McRae and D. McDonald. The ledger, covering the period 1910 until 1913 when the factory closed, deals with cheese sales, local sales, milk purchases and journal entries for this period, as well as wages, cartage and other operating expenditure. The Lavers Hill Cheese Factory closed when it became more advantageous to send their cream into Colac.
