This mincer was donated to the Slab Hut (Visitor Information Centre) as a display item.This domestic kitchen appliance is typical of the period when food processing was done at home. It would have been before the time of mass food processing factories.A cast iron food mincer with a wooden handle. It has a funnel shaped cup at the top through which the pieces of meat are pushed to come out of the side. The wooden handle is turned to help this action. It has one blade. Willow started business in 1887 as a metal working company based in Melbourne Australia, making tinned biscuit and tea canisters. The outbreak of the First World War saw their manufacturing change to making armaments and essential packaging for the war effort. In the early 1920’s, the Willow brand was established. Making tin plated canisters and baking pans with the well-known Willow pattern, imprinted on them. Some other items in production at this time include billies, boilers, basins and Coolgardie safes. In the late 1950’s, the company ventured into plastics production. Stepping away from its very successful tin plating industry of more than 50 years. In 1965, the company name changed to Willow Ware Pty Ltd, to be more closely linked to its Willow brand. Willow Ware is still in business today. A food safe known as a “Coolgardie” meat storage made by an emerging Australian company no longer in bushiness. This item gives a snapshot into early Australian manufacturing specifically aimed at the Australian market. Functional object - Mincer, late 19th or early 20th Century
A meat grinder, commonly known as the meat mincer, is used for chopping meat into fine pieces. Alternatively, it can be used for the mixing of raw or cooked meat, fish and vegetables. It is the best way to process meat, and is a widely used piece of equipment by butchers and in the home.. Butchers have been known to use either mincing knives or meat cleavers in the kitchen for years to produce a quantity of minced meat. This was a slow and laborious process. The advent of the meat mincer has not only made the mincing process easier but also faster. The meat mincer has slowly evolved over the years into what it is today. The first meat mixer or meat mincer was invented in the 19th century by a German inventor named Baron Karl Drais. Although some versions of the device date back to much earlier. The oldest form of meat mincer was hand cranked which forced meat through a metal plate with several small holes in it, which resulted in long and thin strands of the meat. The meat was fed into the funnel that was placed at the top of the mixer. This meat would pass through a hand cranked screw conveyor that would squash and mix the meat before passing it through the metal plate. Needless to say, this was again a slow and laborious procedure to follow to produce large quantity of meat. With passage of time, this hand cracked machine became powered by electricity. The meat mincer has a great adaptability and efficiency now. The huge variety in mincer plates allows a butcher to produce different types of minced meat in any shape desired. However, traditional manual meat mincers have not really changed a lot. They are manually operated and made of cast iron, as earlier. They are similar to the original mincer designs, dating back to the early 1900s. Some butchers still prefer using a variety of mincer knives. Ceramic - Pie Funnel, 20th Century
Pies with top crusts need to be vented, to allow steam to escape. Funnel-style steam vents have been placed in the centre of fruit and meat pies during cooking since Victorian times. Pie funnels were used to prevent pie filling from boiling up and leaking through the crust by allowing steam to escape from inside the pie. They also supported the pastry crust in the centre of the pie, so that it did not sag in the middle, and are occasionally known as 'crust holders'. Older ovens had more problems with uniform heating, and the pie funnel prevented boil-over in pie cooking. The traditional inverted funnels, with arches on the bottom for steam to enter, were followed by ceramic birds; and from the 1940s they have been produced in a multitude of designs. Creigiau Pottery of South Wales produced a 'Welsh Pie Dragon' in copper lustreware. This trend has been particularly noticeable in recent times, due to their increasing popularity as gifts and collectors' items rather than simply utilitarian kitchen tools. This is a food cover, most commonly used in homes in the days before refrigeration and plastic containers. It usually contained food, mainly meat, to protect it from flies, heat or draught while allowing the air to circulate around it and it could be hung in sheds, kitchens, cellars etc. This food cover is retained as a memento of domestic objects used in the past and will be useful for display purposes.This is a food cover made of metal with a circular base and decorative sides, finely pierced to create a mesh pattern. Cooking Bowl, Quick Cooker, Early 20th century
This item is an early type of cooker and would have been used to cook meat and puddings in the first two or three decades of the 20th century. It has no known local provenance but may have been a display item from the old Warrnambool Museum which was established in 1883 and was dismantled in the 1960s. This item, although incomplete, is of interest as a cooking bowl from the past and is retained for display purposes. This is a circular-shaped white china bowl. The base has a hollow tube protruding up through the centre of the bowl. There is printing on the outside of the bowl and on the top inside section. The lid of the bowl is missing. Meat Safe, Household, Early 20th century
This meat safe has no known local provenance but it would be typical of the safes used in a domestic situation to house fresh meat. Usually the safe was hung in a house corridor or verandah or outside in a cool place where there was a breeze that passed through the mesh and kept the contents cool. The mesh also prevented flies and other insects from getting into the safe. Meat safes were widely used in Australian homes in the 19th century and early to mid 20th century, sometimes in conjunction with ice chests, until they were replaced by refrigerators. This item is retained for display purposes as an example of domestic food preservation in Australia 80 to 100 years ago.This is a metal box with a rectangular-shape base and a semi-circular top. All sides except the top and the bottom are made of fine metal mesh. The front is reinforced with metal strips and has a metal clip. The curved top is ridged and has a metal clip.The safe is somewhat rusted and damaged. He is paying four kronor a night for a shared room in the Pension whereas he was paying $4 a week for a room in New York. Dish Platter Meat, Circa 1914 to 1925
This serving meat plate/platter dates to the 1914 to 1930's period in time. This was a period when fine bone china and crockery was imported from England or Europe (mainly Germany). It was highly regarded not only as good crockery but also a linkage to "mother" England and showed a that the family was "well to do". This plate has important relevance to the socio- economical "atmosphere" of rural life (Kiewa Valley) in the early 20th Century. The quality of good English merchandise and the "British best" attitude of the Australian psyche of this period, especially in rural regions, was strongly entrenched into the population. However after World War II this psyche changed drastically as European refugees from war torn Europe "invaded" the mainly "British" based cultural mores. This was the beginning of cultural diversity and rolled out onto multi-culturalism of the latter 20th Century. This large bone china oval shaped serving plate has a green floral pattern around the the base extending up the sides, similar to the "Brussels" pattern. The top edge is delineated with a swirling pattern emphasised with gold leaf. Mincer Meat, mid 1960's
This meat mincer was born in a period where hand operated mincing and blending machines were only available for household mincing meats and blending ingredients up to the 1960's. Electrical kitchen based whitegoods were rare in areas where the connection to electricity was intermittent or not at all.This kitchen aid is a very significant item in the Kiewa Valley before suitable electrically operated mincers became available and constant reliable electrical connections were installed. The Kiewa Hydro Electricity Scheme provide the stable supply of electricity which made most of the hand operated mincing machines obsolete. However large mincers for bulk supplies were still required eg. kitchens for SEC workers during the 50's and 60's.This heavy industrial type meat mincer(cast iron) has a top "rounded feeder cup" with a mincer screw blade at the bottom. A winder handle rotates the screw like mechanism to mince and express solid pieces of meat at the other end. There is a clamp below the main structure which permits the fastening of the hand driven mincer to a table or solid ledge. The disc-shaped design of these 1LB and 2 LB metal weights enables them to be stacked one on top of the other. The weights are used with a balance scale to accurately weigh the mass of items such as grain, sugar, meat or potatoes. They could have been used in retail or wholesale businesses like a general store or a grain merchant’s premises. The user would place either one or both of these weights on one side of a balance scale. Goods would then be placed onto the other side of the scale until the beam between both sides of the scale was level, showing that the weight of the goods was as heavy as the weight or weights on the other side. These two weights are marked in Imperial units. An Imperial Standard 1LB is equal to 453.592grams. The British Weights and Measures Act of 1824 defined official standards for weights and measurements. This ensured that uniform measurements would be used for trade throughout the Empire. Towns and districts would have an official set of Imperial Standard Weights and Measures. Inspectors periodically used this official set to check the accuracy of traders’ own weights and measures. There would be penalties such as fines or imprisonment for people who broke these laws. The State of Victoria had its own Weight and Measures Act in 1862 and a decade later the inspectors in local councils used their local set of weights and measures to test the local businesses measuring equipment. In the nineteenth century the Victorian Customs Department carried out this role but this was handed over to the Melbourne Observatory at the beginning of the twentieth century. The Measures Branch then followed on with this task from the 1940s until 1995. Australia began converting to the metric system in the 1960s, beginning with its money. The conversion from imperial to metric units of measurement in Australia took place from 1970 and was completed in 1988 when metric units became the only legal unit of measurement. Domestic object - Can Opener, Bottle Opener & Corkscrew
It took 15 years to invent the can. It took 100 more to invent a standard way to open it. In the 19th century, decades after the invention of canning, there were virtually no can openers. Canned food, such as sardines, came with its own "key" to peel back the tin lid. Birth of the can One of the oddest things about the can opener is that the can predates it by almost 150 years. Though common today, cans were once military-grade technology. In 1795, Napoleon, to whom the phrase "an army marches on its stomach" is attributed, offered 12,000 francs to anyone who could find a way to preserve food. Without any knowledge of bacteria or their role in food spoilage, scientists didn't even know where to begin. It took 15 years before a chef named Nicholas Appert claimed the prize after successfully jarring food. Soon after that, his countryman Philippe de Girard came up with a variant on Appert's method—metal tins—and sold the idea to the British. Spoiled food, and the sickness it caused, was a widespread problem. The public would have benefited from canned food, but for decades cans were almost exclusively for the army and the navy. The canning process, with its hours of boiling and steaming, its scrupulous cleanliness, its heated metal, and its need for a great deal of disposable material, made canned food far too expensive for anyone but the military. No can openers were needed or even possible. The metal of early cans was too thick to make openers practical. Soldiers and sailors had plenty of sharp objects on hand and made ample use of them when they wanted to eat. During the 19th century, the process of canning was refined and mechanised, and the metal wall of the average can slimmed down enough that a civilian could get it open—if that civilian had the right tool. No one had that tool yet, so early cans had to open themselves. In other words, they came with built-in openers. The result was a confusing but pleasing free-for-all, in terms of product engineering. Each type of food came with its own kind of can, and each kind of can came with its own kind of opener. Tinned fish and meat were often sold in rectangular cans. These cans were fitted with a "key" that would roll down the top of the can. Coffee, beans, and other types of meat were packaged in cylinders with metal strips that could be peeled back with their own kinds of built-in keys. Cans of milk, which didn't need to be completely opened, came with puncture devices. As tinned food became more common, its containers became more regular. A nice cylindrical can became the norm, and, as these cans filled kitchens, more engineers put their minds to finding a convenient way to open all of them. The first standalone can opener worked on a simple principle: point, stab, and pull. From the mid-19th century to the end of World War I, the typical can opener looked roughly like a wrench, if the lower 'jaw' of the wrench were replaced with a blade. People used the blade to puncture the top of the can near its edge, push the upper jaw against the side of the can, and drag the blade through the metal along the rim. Because meat was the first and most popular canned substance, these can openers were often shaped to look like cows and given the nickname 'bully beef can openers'. The bully beef can opener, popular in the mid-19th century, resulted in many lost fingers. Later, a corkscrew was added that was seated in the handle, and could be pulled out for use. It was patented in 1931 by the Bunker Clancey Company of Kansas City, who had already been sued by the Star Can Opener Company for trying sell a double-wheeled can opener like the Star model (the case was dismissed). The electric can opener must have seemed like the wave of the future and a sure-fire seller, but it proved to be too far ahead of its time. In 1931 not that many households had electricity, and those that did weren't interested in buying can openers. The Bunker Clancey Company was subsequently bought by the Rival Company, which still makes small appliances like can openers today. It took another 25 years for electrically powered can openers to become practical. In the 1950s, Walter Hess Bodle and his daughter, Elizabeth Bodle, developed an electric can opener in the family garage. Walter came up with the opener's blades and motor, and Elizabeth sculpted the outside. Their can opener was a free-standing unit that could sit on the kitchen counter. The Udico brand of the Union Die Casting Company put it on the market in time for Christmas in 1956 and had great success with it. Over the next few years it came out in different styles and colours, and, like the bully beef can opener, has become a collector's item. Also like the bully beef model, Udico can openers often still work. They don't make 'em like they used to. Although there have been some design changes and refinements over the last sixty years, there have yet to be any more leaps forward in can opener technology. If you're resentfully opening a can, you are almost certainly doing it using the Star design, manually forcing the can between two wheels, or the Bodle design, clamping the can into a free-standing electrical opener. Whether or not you enjoy your holiday meals, at least you can be happy that you are not getting poisoned by your own food or cutting open your hand with the blade you use to get at it. It took 15 years to invent the can. It took 100 more to invent a standard way to open it. In the 19th century, decades after the invention of canning, there were virtually no can openers. Canned food, such as sardines, came with its own "key" to peel back the tin lid. Birth of the can One of the oddest things about the can opener is that the can predates it by almost 150 years. Though common today, cans were once military-grade technology. In 1795, Napoleon, to whom the phrase "an army marches on its stomach" is attributed, offered 12,000 francs to anyone who could find a way to preserve food. Without any knowledge of bacteria or their role in food spoilage, scientists didn't even know where to begin. It took 15 years before a chef named Nicholas Appert claimed the prize after successfully jarring food. Soon after that, his countryman Philippe de Girard came up with a variant on Appert's method—metal tins—and sold the idea to the British. Spoiled food, and the sickness it caused, was a widespread problem. The public would have benefited from canned food, but for decades cans were almost exclusively for the army and the navy. The canning process, with its hours of boiling and steaming, its scrupulous cleanliness, its heated metal, and its need for a great deal of disposable material, made canned food far too expensive for anyone but the military. No can openers were needed or even possible. The metal of early cans was too thick to make openers practical. Soldiers and sailors had plenty of sharp objects on hand and made ample use of them when they wanted to eat. During the 19th century, the process of canning was refined and mechanised, and the metal wall of the average can slimmed down enough that a civilian could get it open—if that civilian had the right tool. No one had that tool yet, so early cans had to open themselves. In other words, they came with built-in openers. The result was a confusing but pleasing free-for-all, in terms of product engineering. Each type of food came with its own kind of can, and each kind of can came with its own kind of opener. Tinned fish and meat were often sold in rectangular cans. These cans were fitted with a "key" that would roll down the top of the can. Coffee, beans, and other types of meat were packaged in cylinders with metal strips that could be peeled back with their own kinds of built-in keys. Cans of milk, which didn't need to be completely opened, came with puncture devices. As tinned food became more common, its containers became more regular. A nice cylindrical can became the norm, and, as these cans filled kitchens, more engineers put their minds to finding a convenient way to open all of them. Willow started business in 1887 as a metal working company based in Melbourne Australia, making tinned biscuit and tea canisters. The outbreak of the First World War saw their manufacturing change to making armaments and essential packaging for the war effort. In the early 1920’s, the Willow brand was established. Making tin plated canisters and baking pans with the well-known Willow pattern, imprinted on them. Some other items in production at this time include billies, boilers, basins and Coolgardie safes. In the late 1950’s, the company ventured into plastics production. Stepping away from its very successful tin plating industry of more than 50 years. In 1965, the company name changed to Willow Ware Pty Ltd, to be more closely linked to its Willow brand. Willow Ware is still in business today. A food safe known as a “Coolgardie” meat storage made by an emerging Australian company no longer in bushiness. Made and imported by Swedish company, Husqvarna, this machine was used to mince larger pieces of meat. The grinder was clamped securely to a table, and meat was then fed into the machine through the funnel at the top. The wooden crank handle was turned, moving the spiral grinding mechanism, and pushing the meat through the sieve-like fitting at the end. While hand mincers were ubiquitous in the late nineteenth and early twentieth-century kitchens, and was responsible for reducing food waste and promoting frugal ideals, the Husqvarna brand sold over 12 million worldwide.Hand operated mincing machine, larger than usual, with multi small holed attachment in place.
