Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. These two bottles have contained milk sold by the Warrnambool firm of Antarctic Ice Pty Ltd. in the mid 20th century.In the 1930s a pasteurizing plant was set up in Warrnambool in conjunction with an ice works in Kepler Street known as Antarctic Ice (Good and Stevenson). This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These discs come from the Warrnambool Cheese and Butter Factory at Allansford and promote the butter manufacture. The Warrnambool Cheese and Butter Factory was established in 1888 and was one of the first co-operative butter factories in Victoria. Cheese making started at the factory in 1892, with the Kraft Food Company leasing the factory in the 1930s and continuing for many years to operate the cheese production area. These discs are of some interest as ones used by a premier factory in the Warrnambool district. Dairying in the Warrnambool district is of major significance.These metal discs, four in number, are in the shape of a shield and have gold, brown and green enamelling on the front. There is an image of a cow with a boomerang shape underneath. Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. The certificates were passed to Cheese World Museum by the factory management.A blue background full colour certificate and a cream cartouche with a darker banner across it and the insignia of the Royal Agricultural Society of Victoria; in the lower right hand corner of this section is the Australian coat of arms; around this are grasses, grapes and wheat. This book contains information on milk and cream bottles and other dairy-related items. It includes photographs of local milk and butter factories – Warrnambool (Allansford), Grassmere, Koroit, Garvoc, Glenormiston and Byaduk and references to Warrnambool milk suppliers – Antarctic Ice, Tooram and H Lindsay. No details have been found on H. Lindsay, selling milk in the 1920 to 1940 period. Antarctic Ice had a pasteurising plant in Kepler Street in the 1930s and sold to Warrnambool Cheese and Butter and Kraft in partnership and milk was sold under the new label, Sungold Dairies. They then purchased the Kaye Ryan pasteurizing plant in Verdon Street. Kraft moved out of the partnership with Warrnambool Cheese and Butter and Sungold Dairies relocated to the Allansford factory site where they still operate today. Tooram was the name of the property established in the Allansford area by the pioneer settler, John Allan. By the 1860s Tooram had becme well-known for its cheese making and in the 1880s Tooram, owned by Thomas Palmer, had what was described as the finest dairy farm in Victoria. This book is of interest as it contains information on milk and cream bottles and dairy-related items and Warrnambool is the centre of an important dairying industry with the Warrnambool Cheese and Butter Factory in Allansford being the oldest existing dairy product factory in Australia. The book will be very helpful to researchers. This is a soft cover book of 224 pages. This is the funeral Order of Service for Les O' Callaghan. Born in Balmoral Victoria, he came to Warrnambool in 1932 to study at the Warrnambool Technical School. He worked for forty years in the laboratory as a microbiologist in the Kraft Cheese Factory based at the Warrnambool Cheese and Butter Factory in Allansford . His research work here formed the basis of the Department of Agriculture guidelines for dairy production in Victoria. Cyril Percy Callister, a chemist by training, became a food technologist and the inventor of the well known spread 'Vegemite'. A Ballarat School of Mines (SMB) student around 1910, Callister then went to Melbourne University where he obtained his B.Sc. in 1914, M.Sc. in 1917 and D.Sc. in 1931. With Sir David Rivett in 1931 he secured the royal charter for the Royal Australian Chemical Institute, becoming president of the Society of Chemical Industry of Victoria in 1935-36. Vegemite, a yeast based spread, and perhaps one of most famous trademarks in Australia, was discovered around 1922 by Cyril Percy Callister. He was hired by the Fred Walker Company (a Melbourne based manufacturer later known as Kraft) as a laboratory assistant to develop a yeast extract spread. It took some years but by 1954 the special Vegemite song 'Happy Little Vegemites' demonstrated the popularity of the spread. Callister was also known for packing cheese in a can to preserve it and developing Kraft processed cheese. he son of a school teacher and postmaster he was born at Chute on 16 February 1893 and died on 5 October 1949. She had taught Bill at school and said he was one of her brightest students at Dandenong. Bill later became Chairman of Kraft Foods. We were reminded of our wanderings in the cemetery at Worthing, England, where we discovered Pelling graves when hunting for Henty ones. This book was a text book used by Arthur Gregory, the test room technician at Warrnambool Cheese and Butter Factory in the 1930s. He tested the suppliers’ milk and cream for butterfat percentage in order to determine the payment to the suppliers. Arthur Gregory later became the manager of Jays Laundry in Fairy Street. In the 1930s Arthur Gregory boarded at 28 Spence Street in Warrnambool. This boarding house was run by May Taggart, the wife of Sam Taggart, a Warrnambool tailor. Les O’Callaghan was also a boarder there and it was through his contact with Arthur Gregory that he obtained the position of laboratory technician at the Warrnambool Cheese and Butter Factory. Les O’Callaghan remained for over 40 years at this factory (leased at that time by the Kraft company) and was very important in the development of laboratory techniques used in the dairy industry. The Warrnambool Cheese and Butter Factory was established at Allansford in 1888 and is still in production today, operated by the Canadian firm of Saputo. This book is of interest because of its connection to Arthur Gregory, a test room technican at the Warrnambool Cheese and Butter Factory in the 1930s and to Les O’Callaghan, the Laboratory Manager and Microbiologist at Warrnambool Cheese and Butter Factory for more than 40 years. This is a hard cover book of 822 pages. It has a blue cover with gold lettering on the spine. It has 29 chapters, an appendix, a bibliography and an index. It has many black and white illustrations and drawings. The spine is slightly scuffed. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. The Allansford Artificial breeders was commenced in 1960 As a business its main focus was on the improvement of local herds for local farmers.As a result of 32 district farmers meeting at the Allansford Mechanics Hall, the Allansford & District Artificial Breeders Co-operative Society was formed. The subscription for membership was £7 10s. The meeting was instigated through the efforts of Noel Garner, a Hopkins Point farmer, who was manager of No.1 and No.2 Warrnambool Herd Testing Associations, and Gethan Fenton, a field officer with the Warrnambool Herd Testing Association. Bill Quinlan, who had been a herd tester under Noel Garner’s management, became the first employee of the Artificial Breeders. WCB support was available from the beginning as a room was provided behind the factory offices and the AI fees were collected by the factory from suppliers’ milk cheques. In the first 12 months Bill worked alone with some assistance from Russell Learmonth and Roger Walsh, both Kraft employees. Both factories realised the benefits of herd improvement in view of their overall increased production so membership was encouraged. Semen from the best sires in Canada and New Zealand were made available and farmers also could soon see the benefits. The initial board of directors, unlike WCB beginnings, consisted entirely of farmers. These included Michael Melican (Wangoom), Gerald Mugavin (Wollaston), Noel Garner (Hopkins Point), Jim Halford (Naringal East) and Grant Warnock (Southern Cross). Membership grew rapidly and after one year there were 164 members with another 100 joining the following year. After a year of coping alone Bill was joined by Ray Eccles from Purnim and then Pat Gleeson, later a Warrnambool car dealer. John Fitzgerald became a part-time technician. These signs were attached to the entrance gates of users. In the mid 1970s it became known as the Warrnambool Co-operative and while it maintained a strong rural and farming focus a opened a retail store in Warrnambool in Timor Street in the 1970's which became the largest trading department store in the district. By the late 1990s they had 8000 members and employed 84 full time and 120 casual staff. It met a sorry end in the 2000's.This sign is a link to a business which had a large exposure in the latter part of the 20th Century. As such it has social and historical significance. Painted for the Shire of Eltham Historical Society by Audrey Cahn, a member of our Society for many years and Vice President till 1978. Audrey was the sister of the late Charis Palling, founding president of our Society. She had remained a member for many years although she had moved from her family home at Warrandyte to live with her daughter in New South Wales. Audrey had been blind for some years but maintained a local interest by having our Newsletter read to her. Audrey's associations with Warrandyte started because her father Professor Osbourne had bought 60 acres in 1904. " Gold mining was beginning to die out and Warrandyte was a decaying area. Land was cheap because of the lack of transport and the soil was poor for farming” Audrey said. Audrey first attended school in the city at the Church of England Girls Grammar School and was always a bit rebellious. “If I felt some restrictions were unfair or some judgement unjust, I resented it”. Audrey got into Agricultural Science at Melbourne University and in 1928 was the second women to get such a degree. Audrey married in 1926, and later divorced Leslie Cahn an architect. They had twin daughters whom she left with her parents in Warrandyte while she studied dietetics during the depression. She found employment as a microbiologist at the Kraft/Walker Milk and Cheese Factory in Drouin - she drove home at weekends to see her daughters who were then at boarding school. During the war Audrey was in charge of catering at the Heidelberg Military Hospital – again the appointment of a women caused some unrest. She was in the army for more than 4 years and achieved the rank of General which-made her the most highly-ranked-woman at the hospital. After the war she became a senior lecturer in Dietetics at Melbourne University, again being aware of the limitations her gender brought to promotion possibilities. During her time at the university, she undertook a series of studies in nutritional biochemistry. Of especial note is the analysis of common dietary foods so that the composition and calorific value, the data that was needed for inclusion in Food tables - that professional sports people and weight-watchers so avidly follow today! She was an early proponent of the need to reduce fat intake and to substitute saturated fats with polyunsaturated fatty acids. In the 1950's Audrey and fellow workers established norms for the growth of Australian children to be compared with British and American children. Over 17 years they concluded that Australian children were overweight and inactive - what is new! She bought a cottage in Warrandyte as her home. In 1968 she retired to further develop her other interests as a potter and painter. Audrey was a foundation member of the group of potters that set up Potters Cottage. Audrey died in 2008 aged 102.
