The photographs show the Butter Factory at Orbost in 1892 and 1906. The postcard is addressed to Miss N. Cameron C/- Mrs H. Nixon of Picnic Point Bairnsdale. The Orbost Butter and Produce Co. Ltd was registered on June 1st 1893 and was an important source of income to the Orbost district. The first shipment in about 1893 to England went rank and was only good for axle grease on wagons and carts.The milk was brought to the factory by horse and dray.Most people would take the whey home for their pigs,which were abundant on the farms in the Orbost district. These four tins were used to make the ANZAC Day rum and coffee at the Soldiers Memorial Institute Hall to be served after the Dawn Service. (Bendigo RSL Sub - Branch) It was brewed on the electric stoves in the old kitchen on the side of the building. It was made from Chicory Essence coffee, milk and a small amount of water, a bottle of Rum was added to each when near ready. These were used for many, many years up until about 2006 when new containers were used. Before 1941 "Hillside", McCartney's Road was associated with the Carroll Family. Patrick Edmund Carroll, his wife Mary Matilda Fitzgerald, and children Kathleen, Ronald and Rosemary were the last members of the family to live at and work "Hillside". Stanislaus Kelly and his wife Margaret (nee Gorman) bought the farm from the Carroll family. The couple raised six children on the land: May, Mary, Leo, Ray (Lofty), Daniel (Tich) and Bernadette. The family grew spuds and onions on the hill and milked cows, with the little dairy located on the eastern side of the house. A butter churn is a device used to convert cream into butter. This is done through a mechanical process, via a crank used to manually turn a rotating device inside the barrel shaped churn. The agitation of the cream, caused by the mechanical motion of the device, disrupts the milk fat. The membranes that surround the fats are broken down, subsequently forming clumps known as butter grains. These butter grains, during the process of churning, fuse with each other and form larger fat globules. Air bubbles are introduced into these fat globules via the continued mechanical action of the churn. The butter grains become more dense as fat globules attach to them while the air is forced out of the mixture. This process creates a liquid known as buttermilk. With constant churning, the fat globules eventually form solid butter and separate from the buttermilk. The buttermilk is then drained off and the butter is squeezed to eliminate excess liquid and to form it into a solid mass. Then rinsing could be done simply by washing in water, followed by draining, salting and working or "kneading" the butter with a pair of wooden butter pats, or with bare hands. This is a paddle churn, a barrel that contains a paddle, which is operated by a handle. The paddle churned the butter inside the container when the handle was turned. The Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992 after which the property was sold. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. The collection of items from their property was put into store for a number of years before being given into the care of the Cheese World Museum. The family often re-used, recycled and repaired items and examples can be seen in the museum. This item is part of the collection of items given into the care of the Cheese World Museum. The Warrnambool and District Pig Breeders', Agents and Buyers' Association was responsible for inspecting pigs. During the early 20th century the pig industry was included as part of the dairy industry. After milk was separated the cream went to the factory and the skim milk went back to the farm to feed the pigs. Early newspaper reports include information relating to the price of bacon in the list of dairy goods. Warrnambool Cheese and Butter Factory commenced a bacon factory in the early 1900s but it was a short-lived operation. Holdenson and Nielson Fresh Food Pty Ltd was founded in 1903 by Poul Jorgenson Holdenson and Andrew Nielson, after acquiring the Fresh Food and Storage Co, which had plants throughout Australia, including Albury. The plant was moved to Wodonga that year. Cream was collected from all areas of North East Victoria and the Riverina, with contractors carting it to the railway stations for rail travel to Wodonga. The Butter Factory was built on the Lincoln Causeway in 1926, and the Cheese Factory in 1942 as a wartime emergency project. At the same time, a pasteurising plant was installed in the complex, and so whole milk was collected from dairy farmers, rather than just cream. The company was bought out by the North Eastern Dairy Co-operative in 1962. It became a retail milk depot also involved in ice-making and cold storage. In 1985, Goulburn Murray bought the complex and as the site was surplus to requirements, it was sold to Wodonga Council. The buildings were adapted for other uses. The Butter Factory was modified and extended and for some time was occupied by the Albury- Wodonga Visitor Centre. The Creator's Gallery was established in the engine room, and the loading area and ice-making works were extended and modified for use as the HotHouse Theatre. The Cheese Factory was adapted for use as a theatre and jazz venue, and housed the HotHouse office. Remains of the old Warrandyte Dairy — Originally constructed to store milk for delivery from Mapleoak Dairies, delivered by the Bellinger family, up until the early 1970s. The Warrandyte Dairy closed in 1987 before the land and building was purchased by Melbourne Water in 1988 to reduce flood risk to the community and preserve riverside land from development on the site which sits on the Yarra River flood plain. Used domestically, though any extra butter could have been sold to neighbours. Many families kept a cow or two for milk etc. Cream needed to be at least 2 days old - the thicker the better. The handle was turned until the cream turned to butter,the whey was poured off and the butter washed in cold water until the water ran clear. Generally salt and bicarbonate of soda were added. Two pats were used to form butter into 1lb lots. This butter was most typically meant for consumption by the family, but in some instances it may be taken away for consignment by commercial receivers of dairy produce.
