Table, Cheddar cheese table
Believed to have come from Tooram where it was used for cheese making. Tooram commenced cheese manufacture in the mid 19th century in a purpose-built bluestone factory beside the homestead. It was initially set up by Pierce and a long article in the Warrnambool Standard describes the factory and its processes. Cheese production continued through changes of ownership until the 1930s when the Uebergangs ceased making cheese on site. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw. François Boullier of France and Isaac Hunt of England both took credit for inventing the cheese grater in the 1540s. Ingredient supplies, mainly milk, ebbed and flowed in both France and England, as they have in the United States during this coronavirus pandemic. Boullier originally aimed to use up an overabundance of cheese in Paris. An avoidance of meat led French farmers to convert their meat herds (often boys) to dairy-producers (girls), which led to more milk and even too much milk, which led to a market flooded with cheese. Boullier made his first cheese grater out of pewter to grate hard, sometimes dried out cheeses, which turned them into a sort of condiment. Pewter is known as a rather soft metal, and Boullier’s original grater is reportedly on display in a museum in Le Havre, France. Isaac Hunt wanted to stretch cheese due to a shortage in England, so he grated and melted it for Welsh rarebit and other dishes. Grating cheese allowed more even distribution of the cheese to melt it in cooking and still does. During the Great Depression of the 1930s, Philadelphia cheesemonger and entrepreneur Jeffrey Taylor also wanted to stretch cheese for to bulk up cheese features, including vegetables, to make them look like more filling food during difficult economic times. Taylor read about Boullier’s invention and made his own by sharpening the holes of a metal shower drain. For the last century, many companies have tried to improve the cheese grater and invent a new “latest” one that we all must-have. Graters are now made of all sorts of materials including bamboo, wood, and various metals. Some are decorated with clowns’ heads, some are shaped like plastic frogs, while others bear knuckle protectors. They vary in size, shape, and function. Grating slots come with different angles and shapes of slots and can grate everything from zucchini, onions and cheese, to cooked eggs, coconut, potatoes, cabbage, and lemon and orange peel, and possibly even create wood shavings. Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. The certificates were passed to Cheese World Museum by the factory management.A blue background full colour certificate and a cream cartouche with a darker banner across it and the insignia of the Royal Agricultural Society of Victoria; in the lower right hand corner of this section is the Australian coat of arms; around this are grasses, grapes and wheat. On the left hand side and across the bottom are images in various shapes. Fred Walker 1884 – 1935 was an Australian businessman and founder of Fred Walker & Co. first in Hong Kong, then in Melbourne as the Fred Walker Company. He also set up Kraft Walker Cheese Co. in partnership with American businessman James L. Kraft in 1926, to market Kraft's patented method of processing cheese in Australia. Fred Walker & Co. is best known for creating Vegemite, a yeast extract-based food spread and Australian cultural icon. Kraft Walker Cheese Co. Is best known for manufacturing a cheese known as Red Coon around 1931, which later became known as Coon cheese. He founded the Fred Walker Company at 54 William Street and later moving to Flinders Street in 1911. This company specialised in canned foods, especially dairy products, exporting them to Asia. It manufactured Red Feather canned foods including butter and cheese from around 1910. He also went on to created Cresco Food Co. for his younger brother, which was the first factory to manufacture "flaked food" or dehydrated food products in Australia.A significant item that catalogues the start of dehydrated food production and sale in Australia was initiated by an Australian businessman and well-known entrepreneur. Used in kitchen to cut carrots, cheese slices, onions. boiled eggs, etc.Painted black guillotine on a wooden stand. An iron pole keeps the guillotine in vertical position at one end of the block. Driven by two wheels when a handle is turned. A tilting beam moves the guillotine up and down to cut vegetables, etc. Blade 18cm long by 6.5cm wide. Metal plate missing under blade. A rotatable drum to contain the food to be chopped, which is rotated by a cog at the base (also missing) turns the container. The upright holding chopper blade e is a modification made because of the missing container.|The following description is from Ken Turner Booklet referred to under 'Reference'. ----|The Starrett food chopper would certainly have to be considered one of the more interesting inventions, which incidentally is now considered the ultimate in kitchen collectables. Laroy Starrett in later years' told of how the design of his food chopper was inspired by the action of the walking beam engine used on the Mississippi steam boats. When the crank handle of the chopper is turned, this sets in motion a mechanism which is just fascinating to watch. The crank activates a flywheel which in turn, by a series of cogs and levers, simultaneously rotates a food holding container and raises and lowers within the rotating container, a guillotine like 'chopping blade - the action does not only look like that of a beam steam engine, it even in a way sounds like one, although somewhat noisier. Starrett produced seven different models of these choppers, ranging in size appropriate for domestic use to heavy duty models for butchers, restaurants and for hotel use. The small model was capable of chopping 3lbs in three minutes, and the largest had a capacity for chopping something like 100 lbs in an hour. The mechanical chopper, which became affectionately known as the 'hasher', was the first of some one hundred of Starrett's inventions, and these include a washing machine patented in 1865 which had a similar action to his food chopper, a food press patented in 1873, and a device for lacing shoes he patented in 1886.domestic items, food preparation -

Croquet Mallet, 1950's
This croquet mallet was presented to Mrs Huffer when she was the champion player at St. John’s Presbyterian Church Croquet Club in Warrnambool in 1957-8. Croquet has been a sport played particularly by women since the second half of the 19th century. It was popular in Warrnambool and was a competition sport with several clubs from the beginning of the 20th century. St. John’s Club was operative in the 20th century but no longer exists. Mrs W. Huffer was the wife of William Huffer who was an employee and then the manager of the Grasmere Butter and Cheese Factory from 1940 to 1963 when it closed. His father before him had been the manager of the factory from 1918 to 1944. The Huffer family had come to Warrnambool from Gippsland. Bottle, Antarctic Ice Milk Bottle, Mid 20th century
These two bottles have contained milk sold by the Warrnambool firm of Antarctic Ice Pty Ltd. in the mid 20th century.In the 1930s a pasteurizing plant was set up in Warrnambool in conjunction with an ice works in Kepler Street known as Antarctic Ice (Good and Stevenson). This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These lids are missing.The bottles have lettering impressed into the glass. ‘This bottle contains milk bottled for sale by Antarctic Ice Products Pty Ltd Warrnambool and always remains their property.
