This nut roll tin was used in a period before 1959(when plastic containers started being used). It was a period when "home" cooking(desert & cakes) was the only method of having cakes and other pastry dishes in rural areas. The utensils available for this home cooking had to be strong and reliable and low maintenance. This nut roll can is very significant(in rural Australia) because it highlights a period in time when the majority of cakes and other pastry dishes were cooked in the family kitchen and not purchased from a shop. This was a period of self sufficiency especially in semi remote rural areas such as the Kiewa Valley. The Hughes’ Family Scale No. 48 is a spring balance scale. It uses the Imperial measurements of ounces and pounds. There are 16 ounces (OZ) in one pound (LB), and each pound equals approximately 454 grams in Metric measurements. Scales have been used to measure and compare items for value for centuries. A weight was placed on one side of a balance and the object was placed on the other. Adjustments were made to either the weight or the object until the balance was horizontal, which meant that each side was the same weight. The Salter family business began in 1760 with spring makers, Richard and William Salter. In the late 18th century, Richard Salter invented the spring scale, where the weight of an object on the tray of the scale causes pressure on a spring in the scale. The pressure caused by gravity was then measured to calculate the weight of an object. Spring scales are still used today along with the more recent and accurate digital scales. The company began manufacturing in West Bromwich, England, in 1770. The firm was taken over by William’s sons, John and George. In 1824, after the death of John, the firm became George Salter & Co. Of course, back then, cavemen probably used an unpolished slab of tree trunk to cut the kill of the day on and they probably didn’t think twice about saving it once the meal was over. Chances are they probably threw it in the fire with the rest of the wood needed to kindle it. Advances in technology Throughout the centuries, mankind evolved and started creating machines from steam, electricity and metal. When the circular saw was invented, nicer, cleaner slabs of wood were cut and used as cutting boards. Since soft wood was the most available type of wood at the time, it was the material of choice for to be used for cutting boards. Boards were made smaller since the slab of wood could now be cut to any desired size. Since they were made smaller, they were also used to eat off of and some people referred to them as trenchers. Trenchers were originally pieces of stale hard bread that were used as substitute plates. Wood trenchers quickly became the replacements of the eatable dinnerware. The butcher block: the cutting board’s larger cousin In the industrial ages, many industries rapidly developed, and the butchery industry followed this trend as well. Before the invention of the cutting board, butchers used tree rounds to carve their meat on. The rounds were often too soft and they rapidly became unsanitary. Hard maple wood butcher blocks were the preferred choice of the industry. They were made to be extremely thick and durable, so durable in fact, that a butcher could use the same block for almost his entire career. Cutting boards around the world As cutting boards began to be more and more used in kitchens around North America, the rest of the world crafted such boards from different materials. The East used thick bamboo as their material of choice. Despite its frail appearance, bamboo is quite strong and made durable cutting boards and butcher blocks. Kande Kitchenware was established by Patrick Kavanagh and William English in 1922. The name Kande was formed from their initials, K and E. It had its Sydney factory in Little Collins Street, Surrey Hills. Kavanagh and English, a subsidiary of Kande Kitchenware, became a limited company in 1924, with both founders as directors. Another director was Test cricketer Jack Gregory, an all-rounder who slipped easily into the role of businessman. Gregory enjoyed success in business as on the cricket field, helping the company grow from a tiny operation to a major manufacturer and exporter that employed 80 people in 1931. They produced a wide range of utensils including cake tins, pastry cutters, pans and baking dishes. They managed to survive the difficulties of the Depression and were listed as a public company in 1949. Sadly, the Willow Company no longer has a nut loaf tin among their many cooking tins. A cylindrical nut loaf tin with removable lids at each end. The metal body of the tin has tiny patterned indented squares with only two of the three clips to ensure the tin stays closed. The lids at each end add to this tightening. On the lids there is rusty difficult to read stamping for the Willow brand. The cooked cake can be easily removed when the two lids are taken off. This is a rare tin.Around the edges of each lid is stamped 'NUT LOAF TIN'. In the middle of each lid is a circular shape with 'Made in Australia' around the edge. The F.R.E.D otherwise known as the “F*cking Ridiculous Eating Device” was introduced in 1943 as part of Sir Stanton Hicks' "Operation Ration Type O2," Australia's first military rations that lasted 24 full hours. This F.R.E.D. matches the second iteration of the combination can opener and spoon popularised during the Vietnam War, and belonged to the uncle of Ian Taylor. Ian remembers his uncle telling him about using F.R.E.D. during WWII, primarily to open baked beans. It is claimed in some military histories that, after the F.R.E.D.’s introduction in 1943, Australian soldiers developed a ‘strange attachment’ to the F.R.E.D., keeping the utensils far after their service was up and, in this case, passing them on to future generations as bean openers. Whilst most now use electric and portable gas appliances, these open cooking areas can still be found in the kitchens of many of the old homes on the island. The mortar and pestle and baking dishes pictured are sill used today in the preparation of traditional dishes.Cooking and food is an intrinsic part of Ithacan culture and plays an important role in maintaining identity and traditions for the Melbourne's Ithacan community.
