One hundred years after the founding of the company, a factory in Esslingen began construction. At that time the company had 20 employees. In 1881, company commissioned Germany's first file production machine. In 1889, Friedrich Dick built a new factory in Kollwitz/Fleischmannstrasse in Esslingen, employing 100 people and expanding the product line to include knives for butchers and chefs, cleavers and other specialized tools. The use of "camping cooking utensils were a necessity and not a "weekend" affair. ...The use of "camping cooking utensils were a necessity and not a "weekend" affair. ...This Pie Iron was used in the mid to late 1900's when stock, both cattle and sheep, were grazed on the Bogong High Plains. Providing meals for stockmen over open fires, even in log cabins in the Victorian Alpine region, was usually by a "camp cook" or a stockman designated "cook" from the Valley station/property. The use of "camping cooking utensils were a necessity and not a "weekend" affair. Stockmen could spend up to six weeks on the plains and all their cooking needs required had to "pack horsed" from the valley below. A scientific study started in 1947, to study the impact of grazing cattle on the natural Alpine and sub Alpine vegetation found grazing cattle had an adverse affect on the natural Alpine and sub alpine vegetation, and grazing on the plains was stopped by the Victorian Government in 2005.This item is highly significant to the Kiewa Valley as it demonstrates the kind of cooking utensils that were required for camp drafts in the Bogong High Plains environment. As the control of cattle and sheep in the High Plains was very demanding upon horse and rider, good "tucker" was a pre- requisite for a successful operation. As the time spent in this remote location was governed by the climatic condition maximum utilisation of the very good pastures in the High Plains was crucial to a successful and profitable season.This pie iron has two pie forms in horizontal configuration and both top and base rounded forms are connected at one end (Top) with pop rivet application. This application allows for the "opening" up of the two halves. The bodies are made from cast iron in a "cup" form and a metal rod and wooden handle extend to permit the opening of the two sides. The inner side of the "cups" are smooth which relates to pie requirements and not the jaffle/sandwich irons. His son, Ivor, was Secretary of the Grasmere Cheese and Butter Factory for some time and Secretary of the Warrnambool Cheese and Butter Factory in 1888. David Williams left real estate to the value of £1540 and personal estate to the value of £1075. The chief beneficiary was his eldest son, David but other sons and grandsons also benefited. His wife, Mary, was left £300, a house to live in rent free during her lifetime, two cows and the right to graze them on the farm, six silver spoons, her bed and bedding, washstand and ware, a dressing table, a table in the dairy and ‘all the crockery and cooking utensils she may require’. The lawyer drawing up this document was James Fletcher who had an office in Port Fairy in the 1870s and an office in Koroit Street, Warrnambool, in the 1880s. In the 1890s and early 1900s he was in partnership with George Mackay. This document was in the possession of the lawyer Ernest Chambers who had drawn up the Williams will. It was then passed down to successive lawyers occupying legal premises in Kepler Street until it was located in 2014 in the Kepler Street building last used as legal premises by the firm of Mackay Taylor. This document is of considerable interest as it contains the will and probate details of a prominent 19th century farmer in the Woodford district. It will be useful for researchers.This is a white piece of parchment paper folded in two with typed material on two pages and handwritten material on one page. The pages are ruled with red ink. The pages include the Will and Probate details of David Williams of ‘Morgrugyn’ farm near Woodford. Yet how many of you actually have thought “hey, where do forks come from?” Well, it takes one trip to China and a 3-year-old laughing at your face because of your desperate attempt to eat with chopsticks to finally appreciate something so ordinary such as a fork. So, where do forks come from? The early history of the fork is obscure. As a kitchen and dining utensil, it is believed to have originated in the Roman Empire, as proved by archaeological evidence. The personal table fork most likely originated in the Eastern Roman (or Byzantine) Empire. Its use spread to what is now the Middle East during the first millennium AD and then spread into Southern Europe during the second millennium. Bone forks had been found on the burial site of the Bronze Age Qijia culture (2400–1900 BC) as well as later Chinese dynasties’ tombs.The Ancient Greeks used the fork as a serving utensil. The use varied according to local customs, social class and the nature of food, but forks of the earlier periods were mostly used as cooking and serving utensils. It gained a following in Italy before any other Western European region because of historical ties with Byzantium and continued to get popularity due to the increasing presence of pasta in the Italian diet. At first, pasta was consumed using a long wooden spike, but this eventually evolved into three spikes, design better suited to gathering the noodles. In Italy, it became commonplace by the 14th century and was almost universally used by the merchant and upper classes by 1600. It was proper for a guest to arrive with his fork and spoon enclosed in a box called a cadena; this usage was introduced to the French court with Catherine de’ Medici’s entourage. In Portugal, forks were first used at the time of Infanta Beatrice, Duchess of Viseu, King Manuel I of Portugal’s mother around 1450. However, forks were not commonly used in Western Europe until the 16th century when they became part of Italian etiquette. The utensil had also gained some currency in Spain by this time, and its use gradually spread to France. Nevertheless, most of Europe did not adopt the use of the fork until the 18th century. The fork’s adoption in northern Europe was slower. Its use was first described in English by Thomas Coryat in a volume of writings on his Italian travels (1611), but for many years it was viewed as an unmanly Italian affectation. Some writers of the Roman Catholic Church expressly disapproved of its use, St. Peter Damian seeing it as “excessive delicacy.” It was not until the 18th century that the fork became commonly used in Great Britain, although some sources say that forks were common in France, England, and Sweden already by the early 17th century. This time period was one of accelerated growth both in the physical (housing) sense and the mental (new ideas and inventions) changes in "attitudes". These occurred more rapidly in cities but had its effects on the rural environment. The drinking of coffee was spurred on by easier distribution of imported food and drinks. Advertising by stronger radio links and then by television brought the variety of foods and drinks to semi isolated rural regions. The accessibility through greater information channels becoming available brought with it unbelievable ranges of goods and foodstuffs. Rural regions still relied on bulk supplies and relatively larger storage containers than those in cities. This "bulk" buying and storage "syndrome" was a lingering result of many years of "drought" periods when road transports met delays from flooded roadways in supplying population centres in the Kiewa Valley. The construction phases in building the SEC Vic Hydro electricity Scheme in the eastern sections of the Victorian Alps brought many changes to the quiet rural regions in the Kiewa Valley. Changes in population and social mores. The influx of a varied , mostly temporary, and "European flavoured cuisine" changes the "cuppa tea only" flavour to the have a "coffee break". The subliminal influence of the "American" films changed those children growing up in the post 1950s from the "English tea" to the "American coffee". This "Americanisation process has influenced not only rural Australia but also other areas throughout the world.This "insignificant" coffee tin is very significant as it demonstrates that the Kiewa Valley was becoming more accessible to reliable coffee supplies and general food items.The container was part of a "set" of containers that included tea, sugar,biscuits,flour, rice and other family condiments. This type of kitchen storage containers was brought about through changing patterns in tea and coffee useage and overall consumption. The container is labelled for "coffee" however it has no commercial manufacturer's label to establish that it was bought with coffee ingredients in it. These cast iron scales were made for domestic and possibly rural areas and not for cities where demand for known branded utensils was more an issue. The meals for which quantity measurements are required for domestic cooking is not exact however the use of cup measurements for large dishes is tedious and these scales offer the capacity for a larger mixture and an easier method for the "cook". As the need for accurate measurements of ingrediants for rural domestic meals has in the past been not been critical the requirement of accuracy that these scales do not provide is of no consequence. Domestic kitchens in the Kiewa Valley and the type of meals produced would not have required the accuracy of ingrediants that "modern " international cuisines of the later 1900's require. These kitchen scale were used whenrecipes had the terms "pinch, dollop, squidge and smidgen" were about as accurate as most recipes needed to be.Black cast iron, medium weighing scales, with a two arm cradle. On one side of the cradle is a two half circle holding frame for the retention of the metal container scoop. This light weight steel scoop/dish allows for the weighing of loose grain or similar type material to be contained and held in place for establish its saleable contents. On the other side of the weighing cradle is a flat circular platform to hold various metal disc. All the disks used on this platform have their weight stamped on them. When the produced filled in the scoop balances with the metal weight on the opposite end of the balance match (visual horizontal appraisal) the appropriate quantity required is obtained. This scale does not have any visual markings on the arms to identify a true balance. It is therefore reasonable to assume that these scales were for domestic use only and not for commercial transactions. There are two weights that are useable with these scales, one is stamped "1 lB"(pound) and one stamped "1" and both are made as a solid round piece of cast metal.The smaller disc has a "1 lb" moulded and pressed form within a marked inner circle and a mouled ridge outer circle enclosure. It was a period when "home" cooking(desert & cakes) was the only method of having cakes and other pastry dishes in rural areas. The utensils available for this home cooking had to be strong and reliable and low maintenance. This nut roll can is very significant(in rural Australia) because it highlights a period in time when the majority of cakes and other pastry dishes were cooked in the family kitchen and not purchased from a shop. This was a period of self sufficiency especially in semi remote rural areas such as the Kiewa Valley. This was a time when cooking utensils were either made in Australia or imported from England or Europe. After World War II imports from the USA increased significantly and then followed by cheaper products from Asia.This cylindrical nut loaf tin(mild steel) has a removable lid and base. The size of "camp" kitchens would depend on the amount of "cattle" men required to collect and move the "herd" to and from the "lush" high plains.This "camp fire" hot plate is significant because it was donated by a member of the Roper family (the Roper's of the Kiewa Valley) a "pioneer" family. This particular camp fire hot plate originated in Tasmania however the Victorian Alps are very similar to the Tasmanian mountain regions and this type of cooking utensil was, and still is, used in isolated regions e.g. large cattle properties in the Northern Territory. This Camp Fire hot plate was used on the High Plains at the Roper Hut for approximately 35 years.This open fire hot plate is made from caste iron.
