This is done through a mechanical process, via a crank used to manually turn a rotating device inside the barrel shaped churn. The agitation of the cream, caused by the mechanical motion of the device, disrupts the milk fat. The membranes that surround the fats are broken down, subsequently forming clumps known as butter grains. These butter grains, during the process of churning, fuse with each other and form larger fat globules. Air bubbles are introduced into these fat globules via the continued mechanical action of the churn. The butter grains become more dense as fat globules attach to them while the air is forced out of the mixture. This process creates a liquid known as buttermilk. With constant churning, the fat globules eventually form solid butter and separate from the buttermilk. The buttermilk is then drained off and the butter is squeezed to eliminate excess liquid and to form it into a solid mass. Then rinsing could be done simply by washing in water, followed by draining, salting and working or "kneading" the butter with a pair of wooden butter pats, or with bare hands. This is a paddle churn, a barrel that contains a paddle, which is operated by a handle. The paddle churned the butter inside the container when the handle was turned. Early settlers had to be self sufficient, growing their own vegetables, making tools and clothing and usually had a house cow to produce their milk supplyThis domestic butter churn is an example of the skill of the pioneer craftsman, carpenters and tool makers c1900. To produce these scales, a manufacturer would use the resistance of a spring to calculate weights, which could be read automatically on the scale’s face. The ease of use of spring scales over balance scales is what led most post offices to outfit their clerks with spring postal scales. One of the most common types of spring scales was the kitchen scale—also known as a family or dial scale. Designed for horizontal surfaces, these scales used the weight of goods in a pan at the top of the scale to force the spring down. Such scales were common in early-20th-century households and were sold by Sears and Montgomery Ward. Many had flat weighing surfaces but some were topped by shallow pans. Companies such as Salters, Chatillon, and Fairbanks made both. SALTER HOUSEWARES began in the late 1760 in the village of Bilston, England. At this time Richard Salter, a spring maker, began making 'pocket steelyards', a scale similar to the fisherman's scale of today. By 1825 his nephew George had taken over the company, which became known as George Salter & Co. and later established a large, well equipped manufacturing site in the town of West Bromwich. The business thrived throughout the 1900s, and in 1972 the company was purchased by Staveley Industries Plc. In 2002, the management team at Salter Housewares Ltd, backed by Barclays Private Equity, bought the company out from the group, to concentrate on its consumer businesses. In 2004 was sold to the US-based HoMedics company, and in 2006, Salter Housewares USA and Taylor Precision Products Inc (also owned by HoMedics) merged. Salter Brand No. 44 Household Spring Balance Kitchen Scales made of green painted metal with a large clock face dial marked in 1oz graduations and with a shallow metal bowl placed on the flat top connected to the mechanism. An adjustable screw tightened or loosened the spring to bring the pointer to zero, prior to adding the material to be weighed.. Separation was commonly performed on farms in the past where farmers milked a few cows, usually by hand, and separated by letting milk sit in a container until the cream floated to the top when it could be skimmed off by hand. Some of the skimmed milk was consumed while the rest was used to feed calves and pigs. Enough cream was saved to make butter, and the excess was sold. Manual rotation of the separator handle turns a mechanism which causes the separator bowl to spin at thousands of revolutions per minute. When spun, the heavier milk is pulled outward against the walls of the separator and the cream, which is lighter, collects in the middle. The cream and milk then flow out of separate spouts. Montgomery Ward was founded by Aaron Montgomery Ward in 1872.as a mail-order business in Chicago, Illinois USA. Rural customers were attracted by the wide selection of items that were unavailable to them locally and were also inspired by the innovative company policy of "satisfaction guaranteed or your money back".This milk separator is typical of the type used by early settlers in Moorabbin Shire where every family owned a 'house cow' to supply their dairy needs. Households also kept a few chickens for eggs and developed a vegetable garden with additional fruit trees. Malley retired in 1912. In 1931 there were branches at Parramatta, Hurstville & North Sydney. It advises scalding dairy products and reporting stock illness, even though the disease was viral (discovered by U.S. researchers in 1908), not bacterial. There was little chance of protecting children against contracting the disease as the Salk vaccine was not available until 1955, although medical research into the development of preventative serum was well advanced in the 1940's. Treatment of the disease was primitive and a cure not possible.Infantile paralysis was a fearful disease increasingly prevalent in the early 20th Century. Children under 3 were especially susceptible. It could be said to be forever associated with this part of the Western District as a result of the celebrated author, Alan Marshall (1902-1984) suffering its effects. The original proclamation was read from the Government gazette 13/12/1863 Pg 2958. This follows from being proclaimed a roads district in 1854 which was then partly portioned and proclaimed the Municipal district in 1855. Portion of the shire was again annexed to the city in 1955. The Warrnambool shire covers the area on north east and western sides of the city of Warrnambool covering approximately 600 square miles and has a rich history of farming and dairy products. Malleys Ltd was established in about 1890 by Francis Malley (1863-1932). This firm was located in the Sydney suburb of Alexandria, in McEvoy Street. They manufactured items for use in the dairy industry, as well as for hardware related to building and plumbing. Many of the Malley dairy products were sold under the "Sunrise" name. Malley retired in 1912. In 1931 there were branches at Parramatta, Hurstville & North Sydney. This cream can was designed for domestic home use and was used to fetch cream from a dairy or retailer of dairy products between 1920 to 1950s. M Luscombe Diamond Creek on the nameplate suggests this is the farm dairy that supplied the cream the can would hold and that they were the owners of the can. This dairy no longer exists as the area is now a housing estate.Cream can, round metal container with fitted lid and carrying handle. Can has a short wide neck. Body has embossed letters and an attached metal nameplate that has been soldered. Made by Malleys. Embossed raised letters "MALLEYS". It was made by the Sydney firm of Malleys Ltd from the 1930s until the 1950s and came in 3 and 5 quart sizes. Malleys Ltd was established in about 1890 by Francis Malley (1863-1932). This firm was located in the Sydney suburb of Alexandria, in McEvoy Street. They manufactured items for use in the dairy industry, as well as for hardware related to building and plumbing. Many of the Malley dairy products were sold under the "Sunrise" name. Malley retired in 1912. In 1931 there were branches at Parramatta, Hurstville & North Sydney. Butter churns were machines used to produce butter by the violent agitation of separated cream. Depending on the design of the churn, the agitation would be variously achieved by a repetitive thrashing, centrifugal motion or internal paddles. Churns were typically constructed from wood, glass and cast-iron; with tin or steel commonly used for some fixtures. The subject item gives an insight into domestic life where butter was made in the home.Heavy red cast iron base, with a long handle, wooden grip, connected to a shaft along the base, thence, to a cog wheel, and gear, to a second shaft and paddle in a metal basin. Basin has lid, and hole in base with a screw cap to allow the draining of the butter milk. Designed to be placed on a bench, with the handle over the edge. Dairy was sent from farmers across the district for processing at the factory in Wodonga in the 1890s. Victorian creameries regularly exported frozen butter to London, stock was transported by rail for sale in Melbourne, and of course sold and consumed locally. E.W. Mann, of the prominent local Wodonga family, was a shareholder and was closely involved in the establishment of the Wodonga Butter Company. Many families living on farms also owned their own cow, and had equipment to process their own dairy products at home. This item has strong links to the history of Wodonga and north east Victoria. This churn is representative of the equipment they used to process their own dairy products at home. This churn was made by E. Cherry & Sons which was established in Gisborne, Victoria in 1858. Edward Cherry (1830-1910) arrived in Australia from Hertfordshire, England, in 1855. The business manufactured churns and in 1875 opened a larger factory. On his death, the business was taken over by his son and continued to operate until the 1970s.This item has strong links to the history of Wodonga and north east Victoria. It has interpretative potential in the areas of local agricultural history, and the social history of food and farming.A wooden butter churn with metal turning handle and removable lid. When turned, the lever would activate a disc which would spin the separator bowl at a great speed. Through this use of centrifugal force, the cream would gather in the middle while the milk would be pulled towards the outside walls of the bowl. Once the rotation ceased, the milk and cream would flow out of two separate spouts. Prior to the invention of the separator, gravity was used to naturally separate the cream from the milk. The cream rose to the top and was then skimmed by hand. This process was lengthy and often resulted in sour milk, so the invention of the mechanical separator was popular in the dairy industry as there was less waste and encouraged greater production levels.
