Dimitrios Sofianos and Kalypso Sofianos (nee Raftopoulos) ran a small shop at 391 Camberwell Road Hartwell and worked there together for almost thirty years. They sold fish and chips and potato cakes as well as fresh fish and shell fish. Dimitrios Sofianos, sometimes called Jimmy James, is pictured serving a customer. On the counter there are two piles of paper for wrapping the fish and chips. The white greaseproof paper on the LHS was the first wrapper used to wrap the fish and the single sheets of newspaper on the RHS were used for the outer wrappers. The takings went into the embossed metal cash register on the counter and the metal scales on the far RHS weighed the goods to be purchased. The fish and chips were cooked in the metal vats where Dimitri is standing. Potted plants and framed pictures of sailing boats were used to decorate his shop. Many Greeks ran fish and chips shops. Coming from an island Ithacans were often keen fishermen and knew how to cook fish expertly. The Ithacan families who set up their businesses were very conscious of the presentation and attractiveness of their venues and some of the added decorative touches often reflected their interests. Panayotis Raftopoulos is standing outside his fish shop and café, the Leura Café in Camperdown. He was one of a number of Ithacans who moved into a regional area in that state and opened a retail food business.While a lot of the Ithacans who settled in Victoria established themselves in fruit retailing and/or cafes, some worked in fish wholesale and retail businesses and a number of them moved out into the regional towns in that state and opened shops and cafes in those towns. Dimitrios Sofianos is in his his fish and chip shop at 391 Camberwell Road, Hartwell which he ran with his wife, Kalypso Sofianos. The wire basket which he is holding was used to strain the fat from the chips before they were wrapped in the white greaseproof paper for the customer. Many of the Ithacans who settled in Melbourne between the two World Wars ran retail food businesses such as fish and chip shops, fruit shops and milk bars. Some were located within the CBD area while others were to be found dotted around the suburbs. Was also a Chinese Restaurant, Silver Sampan, mid - late 1970's, run by Liz and Warwick. Faye Lancaster and Heather Costigan ran it as a Fish and Chip shop around 1982. Anastasios Papadopoulos is pictured on the left. The gentleman on the right was know as 'Nikolaos Kefalonitis'. Anastasios migrated to Western Australia from Ithaca in 1912 where he found work in Kalgoorlie. Following the race riots of 1916 he left W.A. together with his brother John and they hitchhiked across the Nullarbor travelling by camel train, van and on foot to reach Melbourne where they both settled. Anastasios a fish and chips shop in Chapel Street South Yarra. Commemorative object produced by Simplot Food Service and presented to the City of Greater Bendigo on the occasion of the 50th anniversary of the creation of the Chicko Roll by Bendigo born boiler maker, Frank McEncroe. The Chicko Roll has been an Australian icon since the 1960's and 70's. Inspired by the Chinese spring roll and first sold in 1951 as the "Chicken Roll" despite not actually containing chicken. The snack was designed to be easily eaten on the move without a plate or cutlery and is typically deep-fried in vegetable oil. By 1965 the ubiquitous Chicko Roll was sold in every fish and chip shop throughout the country and at the height of their popularity in the 1970s, 40 million Chiko Rolls were being sold Australia-wide each year and more than one million were exported to Japan.(Wikipedia https://en.wikipedia.org/wiki/Chiko_Roll). Advertised with the slogan 'Grab a Chiko', 'Hit the Hot Spot' and 'You Can't Knock the Roll' the marketing around the Chicko Roll was aimed towards the male population with women perched on Harley Davidson's prevocatively preparing to bite into a Chicko Roll. In 2008 with a push towards healthier eating, Chicko Roll reviewed its advertising and although it continues to target young men, it switched to using a 'fun, active' young women, riding a retro pushbike near the beach to improve its image. In 1995 J.R. Simplot, an American company who also own Leggo's, Birds Eye, Edgell and John West acquired Chicko Roll to sure up their foothold in the Australian market. Maidstone was originally part of the former Shire of Braybrook and later the City of Sunshine. However, in 1994, Victoria underwent council amalgamations, which resulted in Braybrook being incorporated into the City of Maribyrnong. The suburb of Maidstone continues to attract considerable attention from the residents of City of Brimbank, particularly its historical features, the old buildings and distinctive streetscapes that characterise the area.To capture the essence of Maidstone in 2021, a series of photographs were taken.
