Mix Master
The Kiewa Hydro Electric Scheme (KHES) produced electricity for the people living in the Kiewa Valley and beyond to many parts of Victoria. The people and their families working on the scheme were encouraged by their employer the State Electricity Commission of Victoria to purchase and use electrical appliances. The mix master was popular for mixing food for baking and for making juice drinks. Ron White owned this 1950s vintage Sunbeam model 9 mixer with stand, milk glass bowls and complete juicer. Ron was a senior member of staff during the construction and operation of the KHES.This mix master was owned by Ron White who was appointed Area Operations Engineer Kiewa in June 1956. Ron was later appointed General Superintendent and then in 1974 to principal Hydro Engineer of the recently titled Hydro Division.White electrical food mixer with six parts. 1. Motor upright - white, on black stand horizontal. Black dial at back with speeds numbered and type of mix eg. mash. Front switch on/off. Black electric cord attached. Colour slide of food at a function at Legacy House in 1962. The slide shows legatees serving drinks from tables set up in the second floor function room. It was a social function for legatees and their wives. There are 11 slides that appear to be the same function. One mentions President Lobb so it was 1962. Was with many other slides taken in the 1950s and 1960s. The slides have been photographed to make digital images and moved to archive quality sleeves. Mission to Seafarers Victoria

The canteen is part of the Mission to Seafarers building that has catered to visiting seafarers since 1917. The canteen is operated by the Flying Angel Club, which offered services to seafarers including food, drink and souvenirs from the canteen and events held in the main hall which invloved the use of the canteen. The Ladies Harbor Lights Guild also used the canteen facilities for functions and fundraisers held at the Mission to Seafarers. One of the flyer in Chinese helps dating the photograph between 1963-66 when Padre Wong was chaplain at the Mission.Historical record of the Mission to Seafarers canteen post-1963. This tin once contained McKenzie’s baking powder, a cooking ingredient. It was donated with other similar tins that were used by the donor’s mother who was married in 1932. It those times in Australia all manner of household items, including food and drink, were sold by hawkers (salesmen) who travelled from door to door in both suburban and rural areas. The donor remembered the bicarb soda tin on her mother’s pantry shelf. The McKenzie’s Baking Powder label adds the information that the ingredients were “Prepared with Aerophos, Regd. Trade Mark, the finest raising ingredient. A product of Albright & Wilson, Australia Pty. Ltd.” It also says that it “Excels all others in use”. The Australian family business, McKenzie’s Foods, began in Melbourne in 1852 and continues today, now run be the fifth generation of descendants from the original owners. Its baking and cookery products are well recognised by Australians. This tin originates in the early 1900s from an Australian company that is now managed by fifth generation descendants of the original family after its inception in 1852. The tin increases in significance for its use as a recognised object found in many Australian kitchens since early days. It gives a snapshot into domestic life and social norms of the pre and post war period in Melbourne The tin is significant for its association with a local family in the 1930s for the preparation of family meals. These unusual china cups with elongated spouts were created in the days before drinking straws were common. Liquids and broth were fed through the spout to adults who were sick and could not take solid food, or to infants. The alternate name for these cups is “pap feeder.” Recipes for pap usually called for bread, flour and water. A more nourishing mixture “panada” was a pap base with added butter and milk, or cooked in broth as a milk substitute. Variations on the ingredients included Lisbon sugar, beer, wine, raw meat juices. Some Ithacans on arrival in Melbourne moved to the larger regional country towns and opened food vending businesses. John (Ioannis) Raftopoulos (Fiakas) was one such Ithacan who established himself in Mildura. He opened the Sport Cafe in Langtree Avenue. The Spot was an elegant and sophisticated establishment and as well as serving meals, also served the latest sundaes and cool fountain drinks. By the late 1930s he had also opened a milk bar in Mildura’s Astor Theatre. Raftopoulos was a true entrepreneur and ran a number of business in the Mildura and Red Cliffs. John's father, Efstathios Raftopoulos (Levendis) arrived in Australia in 1895 and John soon followed. John's brother-in-law Dimitrios Vlassopoulos arrived from Ithaca in 1922 and opened the Golden Key Café in Red Cliffs. Dimitrios had previously spent about 10 years in America where he gain knowledge and experience in the food and hospitality business. The Golden Key Café shared similarities with the Spot Sundae ‘Parlor’. Ithacan settlement in Mildura area dates back to the early 1900s. A black and white photograph of the interior of a cafe. There are five waitresses and two waiters; three of the women are behind a counter and the other two are standing beside the tables which are lined up on either side of the restaurant. One of the waiters is at the rear is behind a counter while the other is in the background. The restaurant is adorned with Christmas decorations and potted plants. -

Saccharin is an artificial sweetener. The basic substance, benzoic sulfilimine, has effectively no food energy and is much sweeter than sucrose, but has a bitter or metallic aftertaste, especially at high concentrations. It is used to sweeten products such as drinks, candies, , medicines, and toothpaste. Saccharin derives its name from the word "saccharine", meaning of, relating to, or resembling sugar. The form used as an artificial sweetener is usually its sodium salt. Saccharin was produced first in 1878 by Constantin Fahlberg, a chemist working on coal tar derivatives in Ira Remsen's laboratory at the Johns Hopkins University, Baltimore, Maryland USA. Although saccharin was commercialized not long after its discovery, it was not until sugar shortages during World War I that its use became widespread. The donor remembered the tin on her mother’s pantry shelf. Independent salesmen, often referred to as ‘The Rawleigh’s man’, sold Rawleigh products door-to-door between the wars and after the Second World War in the Melbourne suburbs. Rayleigh’s products are still produced today. The tin is significant for its association with W.T Rawleigh, one of Melbourne’s strong growing manufacturers in period particularly between the World Wars. This mess tin belonged to MELIA JAMES HENRY : Service Number - VX18960 : Date of birth - 08 Oct 1900 : Place of birth - WARRINGTON ENGLAND : Place of enlistment - CAULFIELD VIC : Next of Kin - CHURTON MARGARET The mess tin was manufactured by Sellman & Hill (S&H) Ltd from Wolverhampton. British aluminum mess tins were used by most of the Empire early in the war. A new pattern of mess tin was developed for the Web Equipment 1937 Pattern, which was a nested, two-piece rectangular mess tin with long, folding handles. Mess tins were used to prepare or heat food but they were also used as a container from which to eat and drink. The tins were lightweight and sturdy but they became hot very quickly when heated. Mess kit consisting of two pieces: One rectangular aluminium mess tin from WWII with multiple hand-carved inscriptions on outside indicating owner and locations he was stationed in 1940 and 1941. Welded handle attachment, although handle itself is missing. Container - Kitchen Canister set, Late 19th to early 20th century
This set of kitchen dry food canisters is made of metal; each container has a different height, width and capacity. The rolled thin metal has created a strong, round design with decorative rings on the circumference. The base and close-fitting lid protect the contents from vermin and most insects, and the handle on top aids in the removal of the lid. Metal containers like these are reusable and can be re-purposed, which is advantageous when living in regional or rural areas. The type of manufacture indicates that the set was made in the late 19th to early 20th century. Gradually, colourful and attractive plastic kitchenware began to replace metalware. One of the canisters is labelled 'coffee'; coffee plants and seeds were transported from Brazil into Australia in 1788 when the First Fleet arrived although their growth was unsuccessful. However, by the 1920s, a tenth of the Australian population was drinking readily stored coffee. Large quantities of harvested grains such as maize, wheat and barley were protected from pests by being stored in airy buildings, often raised from the ground. This was an age-old practice used by civilizations such as the ancient Egyptians and early Hebrews. Smaller quantities of food for short-term use in the homes were stored in woven baskets or clay pots.This set of kitchen food containers is an example of colonial food storage used in a domestic setting to store and preserve dry ingredients. These canisters give a snapshot of early domestic life in Australia. Canister set; four cylindrical cream coloured metal canisters with domed lids that have lift-up handles on top. They are made from rolled metal and the bases and lids have a side seam. Each canister is a different size and displays a label for different contents. The adhesive labels are vertical, and a gold colour with black vertical text. The cream paint has brush strokes and small areas have exposed green paint under the cream. The insides of the bases are painted dark grey but the lids have no paint underneath. The empty canisters can fit one inside the other. Records an extended Board Meeting which took place from 7.30-11.30 p.m on Thursday 16 July 1928 at the office of the Hon Sec in Collins Street , adjourning until 1.00-8.15 pm on Monday 20 August 1928 at the Alcazar Cafe, and then from 1.00-2.15 pm on Wednesday 22 August 1928, also at the Alcazar Cafe. No mention is made of any meals, but it can be assumed that such a long meeting included both food and drink. 56 items were discussed including membership, Junior Legatee activities and supervision, non-attendance by rostered Legatees and conference matters. Mention was made of the stewardship of the Club origin and history; unfortunately despite this promising start much has been lost over the years since. Functional object - Boiling vessel
The vessels boiling electrical was used by soldiers of 8/13 Victorian Mounted Rifles when it was equipped with Centurion tanks 1966-71. A boiling vessel fitted to British armoured fighting vehicles that permit the crew to heat water and cook food by drawing power from the vehicle electrical supply. It is often referred to by crewmembers (not entirely in jest) as the most important piece of equipment in a British armoured vehicle. The "Vessel Boiling Electric" or "BV" was an innovation at the very end of World War II, when the Centurion tank was introduced with the device fitted inside the turret. Previously, British tank crews had disembarked when they wanted to "brew-up" (make tea), using a petrol cooker improvised from empty fuel cans[4] called a "Tommy cooker". Use of the BV enabled the crew to stay safely inside the tank and reduced the time taken for breaks. The first version, known as VBE No 1, began to be replaced in the early 1950s by the stainless steel No 2 version. A VBE No 3 had improved electrical sockets and was less prone to leakage. The principal use of the BV is to heat ration pouches or tins; the hot water is then used for making drinks or washing. The BV is cuboid and accommodates four tins; typically matching the crew numbers of an armoured fighting vehicle. Ration tins are supplied without adhesive labels so the surrounding water is not contaminated. A vehicle with a defective BV is declared unfit for purpose. It is common practice for a junior member of a vehicle crew to be unofficially appointed "BV Commander", responsible for making hot drinks for the other soldiers. Safe Coolgardie, circa early 1900s
The harsh summer temperatures and the isolated rural environment(of the 1890's) provided the inventor of the "Coolgardie safe" (Arthur Patrick McCormick) with an idea to cool perishable foods by using water soaked "hessian" cloth to provide the "coolant" for the evaporation process to cool the inside temperature of the "safe". Items such as meat,cream/milk/butter and cool "drinks" are a few perishables that need cool environments , especially in isolated "ice free" locations. Cities during this time period had large "ice works" which delivered block ice to all areas that required a form of refrigeration. These ice blocks where held in early refrigerators to keep perishables cool to cold. This "Coolardie" safe was the next best thing for isolated rural households and travellers/campers/stockmen to provide a cooler environment for foodstuff affected by heat. Ice filled "esky" coolers and ice boxes are a modern day off shoot to the original Coogardie safe however they still rely on ice or frozen coolant bricks for cooling.This "Coogardie" safe is very significant to the Kiewa Valley and the Bogong High Plains because it represents not only the initiative thinking of the early settlers and communities but also the "primitive" solution to an everyday (1800s to 1930s) problem (before gas and electric run refrigerators) of keeping "perishables" at a low temperature and thereby prolonging their "shelf" life. This was before electricity and gas was available to the inhabitants of the Kiewa Valley and Bogong High Plains. Another cooling method for food was to have "water tight" containers dipped into the very cold streams running from the "cooler" alpine mountains and the Bogong High Plains. This however could not be carried out in all situations eg. fast flowing currents and locations away from streams. This "Coolgardie safe" is made from a medium grade steel enclosure and its appearance is of a perforated box with a wire handle and one side (long side) being a hinged "door" with a clasp securing "lock". There are air holes grouped into a small "boxed" pattern. Each "box" is divided by a crossed pattern, dividing the "holed" sections(4) into a diamond configuration of 49 small holes each. There are four sides (long) which have the perforations except for the base which does not. The base has an indentation with a loose "catch" tray to catch water spills. When in use the "box" is covered with a water "soaked" cloth. Laughing Waters Road , the book was launched at Montsalvat in Eltham. On Saturday, January 30, 2016, Nillumbik Council launched this book. The weather was cool; just as well, considering over 500 people attended this very pleasant event where food and drink were plentiful. The Australian Government and Nillumbik Shire Council funded the book and it was designed by Wayne Rankin of North Warrandyte. The dedication page is to our very own Ranger Campbell Beardsell OAM of Parks Vic who taught Jane to be “passionate about the environment of this special place” (p260). FOWSP members Val Polley, Linda Rogan and Ken Crook contributed to the content and photos. David Wandin, Wurundjeri Elder, gave a Welcome to Country and officially launched the book after the Mayor of Nillumbik, Cr Hattam, made introductions. Jane Woollard followed with a brief outline of how she came to write the book (her very first) and read out loud the last paragraph which focuses on reconciliation and shared culture. On 6 December 2018, a recurring event was organised at the Mission. From the Multicultural website: "Meeting at the Seafarer’s bridge on the Yarra, you will be welcomed into a little-known site nearby, a sanctuary for seafarers for the last 100 years and a symbol of old-world generosity amidst the rapidly shifting landscape of the Docklands. A journey through the quirky spaces at Mission to Seafarer’s site through a compelling contemporary ritual performance. The Echoes Projects artists evoke fragments of stories embedded in this site through mesmerising live soundscapes, movement and imagery. Ria Soemardjo, Janette Hoe and Pongjit (Jon) Saphakhun collaborate to create an ongoing exploration of contemporary rituals in response to urban sites in Australia. Based in Melbourne, their contemporary performance work draws deeply from their personal connections to Thai, Chinese and Indonesian ceremonial traditions. Domestic object - Wooden Rolling Pin, First half of 20th Century
A rolling pin is a simple tool used to flatten dough. The first civilisation known to have used the rolling pin was the Etruscans. Their advanced farming ability, along with a tendency to cultivate many plants and animals never before used as food and turn them into sophisticated recipes, were passed to invading Greeks, Romans, and Western Europeans. Thanks to the Etruscans, these cultures are associated with gourmet cooking. To prepare their inventive foods, the Etruscans also developed a wide range of cooking tools, including the rolling pin. Although written recipes did not exist until the fourth century B.C., the Etruscans documented their love of food and its preparation in murals, on vases, and on the walls of their tombs. Cooking wares are displayed with pride; rolling pins appear to have been used first to thin-roll pasta that was shaped with cutting wheels. They also used rolling pins to make bread (which they called puls) from the large number of grains they grew. Natives of the Americas used more primitive bread-making tools that are favoured and unchanged in many villages. Chefs who try to use genuine methods to preserve recipes are also interested in both materials and tools. Hands are used as "rolling pins" for flattening dough against a surface, but also for tossing soft dough between the cook's two hands until it enlarges and thins by handling and gravity. Tortillas are probably the most familiar bread made this way. Over the centuries, rolling pins have been made of many different materials, including long cylinders of baked clay, smooth branches with the bark removed, and glass bottles. As the development of breads and pastries spread from Southern to Western and Northern Europe, wood from local forests was cut and finished for use as rolling pins. The French perfected the solid hardwood pin with tapered ends to roll pastry that is thick in the middle; its weight makes rolling easier. The French also use marble rolling pins for buttery dough worked on a marble slab. Glass is still popular; in Italy, full wine bottles that have been chilled make ideal rolling pins because they are heavy and cool the dough. Countries known for their ceramics make porcelain rolling pins with beautiful decorations painted on the rolling surface; their hollow centres can be filled with cold water (the same principle as the wine bottle), and cork or plastic stoppers cap the ends. Designs for most rolling pins follow long-established practices, although some unusual styles and materials are made and used. Within the family of wooden rolling pins, long and short versions are made as well as those that are solid cylinders (one-piece rolling pins) instead of the familiar style with handles. Very short pins called mini rolling pins make use of short lengths of wood and are useful for one-handed rolling and popular with children and collectors. Mini pins ranging from 5 to 7 in (12.7-17.8 cm) in length are called texturing tools and are produced to create steam holes and decorations in pastry and pie crusts; crafters also use them to imprint clay for art projects. These mini pins are made of hardwoods (usually maple) or plastic. Wood handles are supplied for both wood and plastic tools, however. Blown glass rolling pins are made with straight walls and are solid or hollow. Ceramic rolling pins are also produced in hollow form, and glass and ceramic models can be filled with water and plugged with stoppers. Tapered glass rolling pins with stoppers were made for many centuries when salt imports and exports were prohibited or heavily taxed. The rolling pin containers disguised the true contents. The straight-sided cylinder is a more recent development, although tapered glass pins are still common craft projects made by cutting two wine bottles in half and sealing the two ends together so that the necks serve as handles at each end.Tiny rolling pins are also twisted into shape using formed wire. The pins will not flatten and smooth pastry, and the handles do not turn. Furniture - Table
Some very early tables were made and used by the Ancient Egyptians around 2500 BC, using wood and alabaster. They were often little more than stone platforms used to keep objects off the floor, though a few examples of wooden tables have been found in tombs. Food and drinks were usually put on large plates deposed on a pedestal for eating. The Egyptians made use of various small tables and elevated playing boards. The Chinese also created very early tables in order to pursue the arts of writing and painting, as did people in Mesopotamia, where various metals were used. The Greeks and Romans made more frequent use of tables, notably for eating, although Greek tables were pushed under a bed after use. The Greeks invented a piece of furniture very similar to the guéridon. Tables were made of marble or wood and metal (typically bronze or silver alloys), sometimes with richly ornate legs. Later, the larger rectangular tables were made of separate platforms and pillars. The Romans also introduced a large, semicircular table to Italy, the mensa lunata. Plutarch mentions use of "tables" by Persians. Furniture during the Middle Ages is not as well known as that of earlier or later periods, and most sources show the types used by the nobility. In the Eastern Roman Empire, tables were made of metal or wood, usually with four feet and frequently linked by x-shaped stretchers. Tables for eating were large and often round or semicircular. A combination of a small round table and a lectern seemed very popular as a writing table. In western Europe, the invasions and internecine wars caused most of the knowledge inherited from the classical era to be lost. As a result of the necessary movability, most tables were simple trestle tables, although small round tables made from joinery reappeared during the 15th century and onward. It is no secret that copper is currently experiencing a huge upsurge in popularity. This is mainly thanks to its beautiful colour featuring heavily in the ranges of countless homeware retailers. There is, however, far more to this lustrous metal than just its appearance. For example, it has a greater level of thermal conductivity than any other metal (except silver); roughly 60% higher than aluminium and 3000% higher than stainless steel. This means copper is capable of heating up very quickly when compared to other metals. Perhaps a less commonly known property of copper is it being inherently antimicrobial. A wide range of harmful microbes are unable to survive for more than a couple of hours when in contact with a surface made of copper or one of its alloys (brass and bronze). This has led to it often being used for frequently touched surfaces such as door knobs, push plates and taps. A seemingly perfect material for cooking, it is therefore no surprise that it has been used in kitchens for millennia. But exactly when did we learn to utilise copper and its valuable assets? Origins It is hard to pin down an exact date when copper cookware was first introduced. Pieces discovered in regions of the middle east were dated as far back as 9000BC, suggesting cooking with copper began during the Neolithic period (≈10000-2000BC). As civilisations became increasingly capable in metallurgical techniques, metals such as copper became more widely used. It would have been around this time that copper replaced stone as the material used for making tools and cooking vessels. The use of copper is also well documented in Ancient Egypt. Not only was it used to produce water and oil containers, but it was also used to in medical practices. The antimicrobial nature of copper was exploited long before the concept of microorganisms was fully understood. The Smith Papyrus, a medical text written between 2600 and 2200BC records the use of copper in sterilising wounds and drinking water. Tin Lining Although copper is essential to many processes within the human body, it can become toxic if consumed in excess. It was this knowledge that gave rise to lining cookware with tin, a technique used for hundreds of years to prevent copper leaching in to food. These tin linings would eventually wear out and during the 18th and 19th century, it was common for people to send pans away to be re-tinned. This practice is becoming increasingly rare, as are the craftsmen who perform it. Despite this, there are still manufactures producing tin-lined copper cookware who also offer a re-lining service. Perhaps the best known of these is Mauviel, a French manufacturer who have been making this type of cookware since 1830. Tin has now largely been replaced by stainless steel as an interior cooking surface.
