One of the first documented mentions of pudding can be found in Homer's Odyssey where a blood pudding roasted in a pig's stomach is described. This original meaning of a pudding as a sausage is retained in black pudding, which is a blood sausage originating in the United Kingdom and Ireland made from pork or beef blood, with pork fat or beef suet, and a cereal. Another early documented recipe for pudding is a reference to asida, found in a tenth century Arabic cookbook by Ibn Sayyar al-Warraq called Kitab al-Ṭabīḫ (Arabic: كتاب الطبيخ, The Book of Dishes). It was described as a thick pudding of dates cooked with clarified butter (samn). A recipe for asida was also mentioned in an anonymous Hispano-Muslim cookbook dating to the 13th century. In the 13th and 14th centuries, in the mountainous region of the Rif along the Mediterranean coast of Morocco, flour made from lightly grilled barley was used in place of wheat flour. A recipe for asida that adds argan seed oil was documented by Leo Africanus (c. 1465–1550), the Arab explorer known as Hasan al-Wazan in the Arab world. According to the French scholar Maxime Rodinson, asida were typical foods among the Bedouin of pre-Islamic and, probably, later times. In the United Kingdom and some of the Commonwealth countries, the word pudding can be used to describe both sweet and savoury dishes. Unless qualified, however, the term in everyday usage typically denotes a dessert; in the United Kingdom, pudding is used as a synonym for a dessert course. Puddings had their 'real heyday...', according to food historian Annie Gray, '...from the seventeenth century onward'. It is argued that 'the future of the boiled suet pudding as one of England's national dishes was assured only when the pudding cloth came into use' and although puddings boiled in cloths may have been mentioned in the medieval era, one of the earliest mentions is in 1617 in a recipe for Cambridge pudding, a pudding cloth is indicated; 'throw your pudding in, being tied in a fair cloth; when it is boiled enough, cut it in the midst, and so serve it in'. The pudding cloth is said, according to food historian C. Anne Wilson, to have revolutionised puddings. 'The invention of the pudding-cloth or bag finally severed the link between puddings and animal guts. Puddings could now be made at any time, and they became a regular part of the daily fare of almost all classes. Cooking Bowl, Quick Cooker, Early 20th century
This item is an early type of cooker and would have been used to cook meat and puddings in the first two or three decades of the 20th century. It has no known local provenance but may have been a display item from the old Warrnambool Museum which was established in 1883 and was dismantled in the 1960s. This item, although incomplete, is of interest as a cooking bowl from the past and is retained for display purposes. This is a circular-shaped white china bowl. The base has a hollow tube protruding up through the centre of the bowl. There is printing on the outside of the bowl and on the top inside section. The lid of the bowl is missing. Document - Menu card, Farewell Dinner in honour of Group Captain the Hon. T.W. White, D.F.C., V.D, 1951
A menu card for a dinner given to farewell Group Captain Thomas W White, D.F.C., V.D given by his friends on the occasion of his appointment as High Commissioner for Australia in the United Kingdom. Although this dinner on 25 June 1951 was not an official Legacy function, many of the names such as S.H. Birrell, F.J. Doolan and J.G. Gillespie on the back page under the heading 'Hosts' are recognisable as Legatees. This may not have been an exhaustive list of attendees, as evidenced by the abbreviation E.& O.E. (errors and omissions excepted) following the list. T W White was knighted during his term as High Commissioner, but died of a heart attack in 1957 only a year after he retired to South Yarra. The food served at the dinner was typical of the times but the pudding (Bombe Nesselrode) is worthy of mention - it was a frozen pudding which was popular in the Victorian era, flavoured with chestnuts and maraschino, which is not often seen today. According to www.historicfood.com it was 'originally made by the French chef de cuisine Carême in 1814 for the diplomat Count Karl Von Nesselrode and became the most popular ice pudding of the nineteenth century, particularly appreciated by the English upper classes.' The menu card may have been collected by one of the Legatees that were present and added to the archive.A record that Legatees held very significant positions in their lives outside of Legacy. Also a photo of a girl in a motorised wheel chair selling the Christmas cards and Legacy puddings in a street. Photos were taken by Susie Howard who was publicity officer for Legacy at the time. The set of 30 cards were used by Miss Frida Striezel 1898. A rare, interesting set of numbered 1 - 30 cardboard cookery instruction cards - The Department of Public Instruction, Victoria Australia. They instructed how to prepare very Australian dishes with an English influence - e.g., Yorkshire Pudding, Pea Soup, Steak and Kidney Pie. The Government Printer's name indicates these were produced between 1887 and 1906. The cards are stored in a purple floral damask drawstring bag. There is handwritten sheet of paper with the above information.Handwritten in grey pencil at the top of every card is 'Frida Striezel'. On the back of Card 2 is handwritten in faded black ink No 1 -30 the title of the 30 recipes on the cards. Cream pith helmets were part of the uniform worn by Melbourne District Nursing Society (MDNS) Trained nurses (Nurses) from the early 1900s when giving nursing care to the sick poor of Melbourne. When riding their bicycles the helmet was held on by a long white scarf tied under the Nurse's chin. From its earliest years when Melbourne District Nursing Society (MDNS) Trained nurses, known as 'Nurse' in those days, began to wear uniforms the chosen colour was grey, though the style changed throughout the years as fashions changed from the late 1800s through to the 1970s. The Nurses firstly wore long grey frocks and a white cap with a long white tail hanging from the centre back. When bicycles were introduced in 1903 the headgear changed to a cream pith helmet adorned with a red Maltese cross in the centre front. This was held on with a veil going over the hat and tied under the chin. Over the years there were complaints that the veils became wet in the rain and they asked for a change of uniform, but this did not happen until 1921. The Nurses complained their skirts became wet when riding their bicycles in the rain and asked, when raining, to be able to wear breeches and gaiters. This was granted provided they wore aprons when attending patients. It was not long before the uniform changed to a shorter length grey frock, red cardigan, grey coat and grey brimmed hat; later changed to a peaked grey hat. In 1966 MDNS were granted Royal patronage. Now as Royal District Nursing Service (RDNS), the uniform was redesigned and colour changed in 1971. By 1972 the Sisters were wearing the new winter uniform of a blue/grey skivvie under a V neck tunic style frock made of blue/grey herringbone winter material with the RDNS insignia on the upper left, and a beret of the same material. In summer the uniform became a royal blue V neck tunic style frock, with the RDNS insignia on the upper left, worn over a short sleeve white blouse. A royal blue peaked hat with the RDNS insignia in the centre front was worn at first and then only worn on official occasions. This uniform was worn until changed to a corporate style in the mid 1980s,This hard cream coloured pith helmet has a 'pudding basin' shaped crown with 2 eyelets on both sides of it and a raised 'button' in the centre of the crown. This is encircled by a slightly sloping brim. A red cotton Maltese cross is emblazoned in the centre. The crown has a 66 cm circumference and is 12 cm deep; the raised central button is 3.5 cm x 3 cm; and the brim has a 101 cm circumference and is 5 cm deep.melbourne district nursing society, mdns, mdns uniforms, rdns, royal district nursing service
