Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. The certificates were passed to Cheese World Museum by the factory management. This certificate was held by the factory management until transfer to Cheese World Museum. This local factory was typical of small butter factories in the 1890's in Western Victoria. It was established in 1894 when farmers brought their milk to the factory on horse drawn drays and carts and waited for their cream to be separated. The skimmed milk was mostly used by farmers to feed calves and pigs and the separated cream was manufactured into butter, some of which was exported to England. By 1910 this butter factory had an electricity generating plant called Mortlake Electricity which supplied both the factory and the township with power and this took precedence over the butter production which continued until 1926 when it was sold to the Electricity Commission. By 1930 the Butter Factory had a yearly turnover of 24,000 pounds sterling and in1935 it was producing 6 tons of butter weekly. But in 1936 the factory was sold to Glenormiston Cheese & Butter Factory who ceased operations. The manager's residence still remains in 2011 as does the remnants of the small timber butter factory (charcoal lined) and the double brick cheese room but the bluestone chimney has long gone. HISTORY of BRIGGS BRASS FOUNDRY: - The family business was founded in 1912 by Herbert Harrison Briggs (1963-1931) with his son George Edward Briggs, trading as Briggs & Son Foundry at 70 Wellington Street, Collingwood. Younger son Cyril Falkiner McKinnon Briggs joined the foundry in 1922, and it was renamed H H Briggs & Sons Foundry. Both sons ran the firm after Herbert’s death in 1931, making products mainly for marine purposes. They became Bell Founders in 1936 and were known for their specialty of high-quality ship bells. They produced miniature varieties of these and other decorative items such as small propellers. The firm became known as Briggs Marine Foundry. The great-granddaughter of Herbert Briggs inherited the Briggs Brass Bell, similar to the one at Flagstaff Hill. Cyril became the sole family member of the firm in 1965. The Briggs Marine was an exhibitor at the 1965 Boat Show, where he advertised as “non-ferrous founders” and “Bell Specialists”. The foundry relocated to Chesterville Rd, Moorabbin. Cyril passed away in 1967. It is thought that either Cyril or his business partner Frank Lee donated the objects from the Briggs’ Foundry around the time when the business moved to Moorabbin. However, Flagstaff Hill hadn’t been thought about until 1972. The donated items were registered in the Collection in 1986 but they could have been in storage from an earlier date. In October of that same year, Briggs Marine restored Schomberg Bell, a shipwreck artefact from the collection at Flagstaff Hill. Peter Oram, who had worked for the previous owners of Briggs Marine as a fitter and turner, took over the firm in 2014, reviving some of the old casts for current use. The business is now located at Seaford in Victoria and is part of Alliance Casting & Engineering Solutions (Alliance Casting Pty Ltd). In 2016 the original Collingwood Foundry building was repurposed as a thriving business hub named The Foundry. This set of glossy black and white photographs is a set of images of Glenample Homestead circa late 1960s to early 1970s. They were taken by John Chance and are part of the John Chance Collection. The Colonial Georgian style Glenample Homestead was built from 1866 to 1869 from locally quarried sandstone. In is built on the top of a hill amongst trees. There are paddocks below and around the building. The building is basically a rectangular shape with a recessed room on the right side of the front. The pitched roof is covered in corrugated iron. The veranda, added in 1886, also has a corrugated iron room and is supported by square posts with decorative tops. It shelters three sides of the building. The edge of the veranda is decorated with scalloped shapes along the front and left side of the building. On the right is a brick wall incorporating a chimney. Another chimney on the left is contained within the building. The four-panelled outside doors are visible in some of the photos, as are the 12-paned glass windows, which are framed in contrasting stone. The veranda is trimmed with scalloped metal work on two sides and had some enclosed corners. There appears to be a cubical water tank on the roof line. Out-buildings include a toilet built against the house's brick wall. Another building appears to have two rooms with outside doors, perhaps for workers. There is the remains of a two-wheeled cart under a shelter. GLENAMPLE & the LOCH ARD Glenample Homestead became famous after the disastrous wreck of the sailing ship Loch Ard on June 1, 1878. The owners, Hugh Hamilton Gibson and Peter McArthur, were involved in the rescue and recovery of the only two survivors, as well as overseeing the salvage of items from the shipwreck and the burial of those who lost their lives. Glenample Homestead is on the Great Ocean Road at Princetown. Originally the land was part of Kennan’s Station lease, one of the district’s early settlements, circa 1847. James Murray bought Kerman’s land in 1856-57, combined it with nearby land, and named it Glenample Homestead. The ruins of huts Murray built on the property were still there until recently. Glenample was sold in 1866 to the partnership of Gibson and McArthur, who built a Georgian style house there using local sandstone, completing it by 1869. On 1st June 1878 the Loch Ard was wrecked at what is now called Loch Ard Gorge. Apprentice crewman Tom Pearce and eighteen year old passenger Eva Carmichael were the only survivors. Pearce had brought Eva ashore and sheltered her in a cave, reviving her with whiskey found amongst items washed up from the wreck. He climbed the cliffs and came across two riders from Glenample. No other survivors were found and sadly, Eva’s family members were amongst those who drowned. Hugh and Lavinia Gibson cared for Pearce and Eva at Glenample and extended their hospitality to Eva, who stayed on for about six weeks as she recovered from the ordeal physically and emotionally. Mrs Gibson introduced Eva to Jane Shields and the young ladies became lifelong friends. Years after Eva had returned to England, Jane’s daughter visited her. Eva handed her a blue china tea set to pass onto her mother as a gift. A descendant of Jane’s donated part of the tea set to Flagstaff Hill Maritime Village while another descendant donated her inherited share of the tea set to the Warrnambool and District Historical Society. In 1886 Glenample Homestead was updated to include a veranda on three sides. In 1887 Gibson sold his share to partner Peter McArthur. McArthur’s son Ernest inherited the property in 1897. Ernest established the Glenample Cheese Factory in around 1911. It was closed due to the World War and reopened in 1929 by McArthur’s sons, Robert and Colin, when they took control. In 1945 they sold Glenample and several owners followed but it was left unoccupied and became dilapidated. It was during this time that John Chance visited the property and photographed the buildings. In the 1980s the National Parks Service acquired the Glenample Homestead and began a restoration program. Work began in 1989 by Cathedral Stone, which was established in 1989 by James Charlwood, a specialist stonemason and son of maritime author Don Charlwood. This set of photographs are significant as a record of Glenample Homestead as it was from around the late 1860s to the late 1960s. The photographs are also significant as they were taken by John Chance, a diver from the wreck of the Loch Ard in the 1960s-70s. Items that come from several wrecks along Victoria's coast have since been donated to the Flagstaff Hill Maritime Village’s museum collection by his family, illustrating this item’s level of historical value. The photographs are significant as a link between Glenample, the vessel Loch Ard, and the only survivors of the Loch Ard. Glenample Homestead is of historical, social and architectural significance to the State of Victoria and is listed on the Victorian Heritage Register (VHR H0392). It is a historical example of early settlement and development of a run in the coastal land of South West Victoria, and it is constructed from locally quarried sandstone but doesn’t take away from its Georgian design. Glenample Homestead is of State significance through its unique connection with the wreck of the ship Loch Ard and the connection to its owners, Hugh and Lavinia Gibson and Peter McArthur, played a historically and socially significant role in the rescue and care of the survivors, the salvage of goods and the burial of those who lost their lives. The shipwreck of the Loch Ard itself is of significance for Victoria and is registered on the Victorian Heritage Register (S417). The set of ten rectangular black and white photographs of the Glenample Homestead, taken in the late 1960s or early 1970s, give san overview of the Glenample property. The views include the front, back and one side of the building, three outbuildings, and the situation of the homestead on the property. The details on the photographs show the materials used and the Colonial Georgian style. These discs come from the Warrnambool Cheese and Butter Factory at Allansford and promote the butter manufacture. The Warrnambool Cheese and Butter Factory was established in 1888 and was one of the first co-operative butter factories in Victoria. Cheese making started at the factory in 1892, with the Kraft Food Company leasing the factory in the 1930s and continuing for many years to operate the cheese production area. These discs are of some interest as ones used by a premier factory in the Warrnambool district. Dairying in the Warrnambool district is of major significance.These metal discs, four in number, are in the shape of a shield and have gold, brown and green enamelling on the front. These items are connected to the Warrnambool Cheese and Butter Factory. One is a share certificate from the company issued in 1909 to John Bergin of Nirranda and the other is a 1970 handwritten note, possibly from the Tait legal firm in Warrnambool indicating that John Bergin was no longer a shareholder. He may have been deceased or the shares may have been sold previously. The Warrnambool Cheese and Butter factory in Allansford is the oldest surviving dairy company in Australia. It was established in 1888 and is now operated by the Canadian firm Saputo. These items are of minor interest as mementoes of the early share certificates of the Warrnambool Cheese and Butter Factory, a major dairying business in the Warrnambool district for over 100 years. .1 This is a certificate extracted from a booklet of similar certificates. This book was a text book used by Arthur Gregory, the test room technician at Warrnambool Cheese and Butter Factory in the 1930s. He tested the suppliers’ milk and cream for butterfat percentage in order to determine the payment to the suppliers. Arthur Gregory later became the manager of Jays Laundry in Fairy Street. In the 1930s Arthur Gregory boarded at 28 Spence Street in Warrnambool. This boarding house was run by May Taggart, the wife of Sam Taggart, a Warrnambool tailor. Les O’Callaghan was also a boarder there and it was through his contact with Arthur Gregory that he obtained the position of laboratory technician at the Warrnambool Cheese and Butter Factory. Les O’Callaghan remained for over 40 years at this factory (leased at that time by the Kraft company) and was very important in the development of laboratory techniques used in the dairy industry. The Warrnambool Cheese and Butter Factory was established at Allansford in 1888 and is still in production today, operated by the Canadian firm of Saputo. This book is of interest because of its connection to Arthur Gregory, a test room technican at the Warrnambool Cheese and Butter Factory in the 1930s and to Les O’Callaghan, the Laboratory Manager and Microbiologist at Warrnambool Cheese and Butter Factory for more than 40 years. This is a box for packaging Kraft Cheese in Victoria. A Melbourne man, Fred Walker, negotiated with the American company the Kraft processing of cheese and established the Kraft Walker Cheese Company in 1934 and leased the Warrnambool Cheese and Butter Factory premises in Allansford in 1935. Until 1993 this factory produced Cheddar Cheese, Swiss Cheese, Cracker Barrel and Tasty Cheddar Cheese and other varieties and won many Australian awards. A microbiological laboratory was established and from 1939 Ls O’Callaghan, a noted Warrnambool historian, worked in this laboratory, establishing the basis of the dairy industry guidelines for effective and scientific processing of milk. He worked there for 45 years. The Warrnambool Cheese and Butter Factory is still today a major industry in the Warrnambool area. This box is of key importance as an item that held Kraft Walker Cheese Company cheese. This company and its factory in Allansford was a key business in the dairying industry in the Warrnambool area for nearly 60 years. The box may have been used locally in the Allansford factory. This is a wooden oblong box with no lid. It has been nailed together with 12 nail heads visible and three nails protruding from the top edges. It has been used to package five pounds of Kraft Cheese. Warrnambool Cheese and Butter Factory at Allansford commenced in 1888. By the early 1900s it had 3 subsidiary creameries where farmers delivered their milk. Often the farmers collected the skim milk to feed pigs. At this time bacon was considered to be a dairy product. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate.
