Denis Gibbons (1937 – 2011) Trained with the Australian Army, before travelling to Vietnam in January 1966, Denis stayed with the 1st Australian Task Force in Nui Dat working as a photographer. For almost five years Gibbons toured with nine Australian infantry battalions, posting compelling war images from within many combat zones before being flown out in late November 1970 after sustaining injuries. The images held within the National Vietnam Veterans Museum make up the Gibbons Collection. The butter stamp rolling pin was used in The Orbost Butter factory.It was rolled across the butter in a wooden box, lined with a wax paper.Bicarbonate of soda was added to the butter to stop it from going rank.The first shipment in about 1893 to England went rank and was only good for axle grease on wagons and carts.The milk was brought to the factory by horse and dray.Most people would take the whey home for their pigs,which were abundant on the farms in the Orbost district. The Orbost Butter and Produce Co. Ltd was registered on June 1st 1893 and was an important source of income to the Orbost district. Large, hand carved, round wooden roller with handle at each end. There is a central carved word, with a pattern of raised squares either side of the carved word and an uncarved area at either end of the roller. The stamp rests on a wooden plinth. Leonard John Hudson was born in Prahran and moved to Castlemaine in his early years At the beginning of the war was refused entry to the services due to his "reserved occupation" as a motor mechanic working on farm machinery At night he worked as a machinist for Thompson's Foundry machining breech blocks for 25 pound field guns. (image) Eventually he was granted enlistment into the R.A.A.F. into 7 Airfield Construction Squadron as a Leading Aircraftsman 156990 and was sent to Milne Bay with the unit to build the air strip.As one of few diesel mechanics he was often required to assist the US troops with their maintenance problems at various sites in or near New Guinea. Wooden with cast iron gearing components and round butter worker is hand operated. The rotary butter worker has a round tray carved from wood. Protruding upwards from the centre of the tray is a column with arched top. The column has a small square outlet on one side near the base that provides for excess buttermilk to be drained away. Around the circumference of the butter worker protruding outwards from the sides is a thick cast-iron track. The wooden paddle has a unique curved shape that has a wave appearance. It has a slight arch which forces the butter to remain in the tray and to direct any excess buttermilk to the centre. Through the wooden paddle is an iron rod connected to a crank handle. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate.
