Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. The certificates were passed to Cheese World Museum by the factory management.This certificate was held by the factory management until transfer to Cheese World Museum. Believed to have come from Tooram where it was used for cheese making. Tooram commenced cheese manufacture in the mid 19th century in a purpose-built bluestone factory beside the homestead. It was initially set up by Pierce and a long article in the Warrnambool Standard describes the factory and its processes. Cheese production continued through changes of ownership until the 1930s when the Uebergangs ceased making cheese on site. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. This booklet records in brief the history of the Nestles Factory at Dennington, Victoria from its opening in 1911 to its sale in 2005 to Fonterra Milk, Australia and the closing of the Nestles association with the Warrnambool district. The factory initially produced Sweetened Condensed Milk and by 1918 was the largest Milk Condensery in the world. In later years there were productions of cheese, Sunshine Powdered Milk and Nescafe Instant Coffee. Six two-storey residences were built for employees and there were twice-daily trains from Warrnambool to the factory and back for many years. The Nestanglo Social and Sports Club, established in 1923, was important in the community life of Dennington and beyond. This booklet will be of great use as it gives a very good summary of the history of Nestles Factory at Dennington and reveals how important the factory was to the Warrnambool region and to Australia.This is a paperback booklet of 37 pages. These discs come from the Warrnambool Cheese and Butter Factory at Allansford and promote the butter manufacture. The Warrnambool Cheese and Butter Factory was established in 1888 and was one of the first co-operative butter factories in Victoria. Cheese making started at the factory in 1892, with the Kraft Food Company leasing the factory in the 1930s and continuing for many years to operate the cheese production area. These discs are of some interest as ones used by a premier factory in the Warrnambool district. Dairying in the Warrnambool district is of major significance.These metal discs, four in number, are in the shape of a shield and have gold, brown and green enamelling on the front. Vegemite inventor Cyril Callister was an alumni of the Ballarat School of Mines, a predecessor institution of Federation University Australia. Working from the details of a James L. Kraft patent, Callister was successful in producing processed cheese. The Walker Company negotiated a deal for the rights to manufacture the product, and in 1926, the Kraft Walker Cheese Co. was established. This local factory was typical of small butter factories in the 1890's in Western Victoria. It was established in 1894 when farmers brought their milk to the factory on horse drawn drays and carts and waited for their cream to be separated. The skimmed milk was mostly used by farmers to feed calves and pigs and the separated cream was manufactured into butter, some of which was exported to England. By 1910 this butter factory had an electricity generating plant called Mortlake Electricity which supplied both the factory and the township with power and this took precedence over the butter production which continued until 1926 when it was sold to the Electricity Commission. By 1930 the Butter Factory had a yearly turnover of 24,000 pounds sterling and in1935 it was producing 6 tons of butter weekly. But in 1936 the factory was sold to Glenormiston Cheese & Butter Factory who ceased operations. The manager's residence still remains in 2011 as does the remnants of the small timber butter factory (charcoal lined) and the double brick cheese room but the bluestone chimney has long gone. Vickers of Sheffield in England manufactured armaments in the WWI period. In the early 1920s commenced manufacturing tractors under license to International Harvester. This tractor was aimed at the Australian market and called the 'Aussie' with the first available in 1925 but lack of sales forced Vickers to abandon tractor manufacture by 1930. This advertisement is part of the Uebergang Collection of rural items given into the care of the Cheese World Museum. . The Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The Kraft Walker Cheese Co Pty Ltd entered into an agreement with Warrnambool Cheese and Butter Factory Company in 1935 whereby the Kraft company leased premises from WCB. This arrangement remained in place until the 1990s. WCB took over the Garvoc factory in the 1920s. Warrnambool Cheese and Butter Factory Company was formed by a group of Warrnambool business men. The company was registered in May 1888 and commenced commercial production in November 1888. The company retained its independence for more than 125 years until acquired by Canadian firm Saputo. It has operated from the same site since its inception and also has an office in Japan. Milk processing is undertaken by Sungold. Milk powder for export is also produced on-site. Cheese World is a retail arm of the company operates on a connected site selling company products, local food products, wine and cheese tasting. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. For many years the Heywood Cheese Factory was an important part of life for Heywood and district farming and a vital place of employment for up to 40 men and 10 women. The factory opened in 1939 as a subsidiary of the Portland Butter Factory before becoming a world renowned cheese making enterprise. It was felt important to document its history from the surviving factory workers, including dairy suppliers and milk truck drivers. We hear their stories of the long hours and hard work without penalty rates, travelling unsealed roads and mixed with their humour of the bygone days is an important acknowledgement of that era. The Ovens pottery operated from 1881 to1892 they had taken over H L & E pottery at Beechworth in 1888 but mounting debts forced the Ovens company to close in 1892.
