One hundred years after the founding of the company, a factory in Esslingen began construction. At that time the company had 20 employees. In 1881, company commissioned Germany's first file production machine. In 1889, Friedrich Dick built a new factory in Kollwitz/Fleischmannstrasse in Esslingen, employing 100 people and expanding the product line to include knives for butchers and chefs, cleavers and other specialized tools. Files manufactured ranged from the smallest watchmaker's file to the largest (over 45 cm in length) square file. In 1997, the F Dick company moved to a new headquarters in Deizisau, Germany. Funnel-style steam vents have been placed in the centre of fruit and meat pies during cooking since Victorian times. Pie funnels were used to prevent pie filling from boiling up and leaking through the crust by allowing steam to escape from inside the pie. They also supported the pastry crust in the centre of the pie, so that it did not sag in the middle, and are occasionally known as 'crust holders'. Older ovens had more problems with uniform heating, and the pie funnel prevented boil-over in pie cooking. The traditional inverted funnels, with arches on the bottom for steam to enter, were followed by ceramic birds; and from the 1940s they have been produced in a multitude of designs. Creigiau Pottery of South Wales produced a 'Welsh Pie Dragon' in copper lustreware. This trend has been particularly noticeable in recent times, due to their increasing popularity as gifts and collectors' items rather than simply utilitarian kitchen tools. They were manufacturers of pewter ware, electroplated Britannia metal, silverware, and electroplated nickel silver. Their products included hundreds of items for use in the kitchen (e.g. bowls, cutting tools) and the dining room (e.g. tea services, cocktail shakers, and mixers) as well as items such as candlesticks. They were a world leader in manufacturing shooting accessories through the nineteenth century and exported powder flasks in large quantities to America, They were known as whistle makers, which like most of their products were of outstanding quality. They were located first at Silver Street (1806), Cornish Place (1822) Sheffield. Their registered trademark since 1879 was a Trumpet with a Banner hanging from it. Although registered in 1879, the "Trumpet with Banner" logo was used at times before registration and appears on some of their silver plate pieces. They were one of the foremost names in EPNS and sterling silver tableware including silver tea services and hollowware pieces. They also made silverware serving pieces and had a wide catalogue of patterns. Their tea sets and hollowware pieces produced in silver are now very valuable as antiques. The basic balance scale has been around for thousands of years and its accuracy has improved dramatically over the last several centuries, the principle behind this tool remains unchanged. Its parts include a fulcrum, a beam that balances on it, a pan at the end of the beam to hold the materials to be weighed, and a flat platform at the other for the counter-balancing weights. Balance scales that require equal weights on each side of the fulcrum have been used by everyone from apothecaries and assayers to jewellers and postal workers. Known as an unequal arm balance scale, this variety builds the counterweight into the device. Counter scales used in dry-goods stores and domestic kitchens often featured Japanned or (blackened) cast iron with bronze trims. Made by companies such as Howe and Fairbanks, the footed tin pans of these scales were often oblong, some encircled at one end so bulk items could be easily poured into a bag. Seamless pans were typically stamped from brass and given style names like Snuff (the smallest) and Birmingham (the largest). Some counter scales were designed for measuring spices, others for weighing slices of cake. In the 18th century, spring scales began to appear and would use the resistance of spring to calculate weights, which are read automatically on the scale’s face. The ease of use of spring scales over balance scales. One of the most common types of spring scales was the kitchen scale also known as a family or dial scale. Designed for horizontal surfaces, these vintage kitchen scales used the weight of goods in a pan at the top of the scale to force the spring down rather than the balance system. Such scales were common in early 20th century households and were sold by many companies. Many had flat weighing surfaces but some were topped by shallow pans. Companies such as Salters, Chatillon, and Fairbanks were the most popular brands used. These scales are significant as they identify one of the basic preparation items for the weighing of foodstuff in the family kitchen to prepare everyday meals. This item is significant as it gives a snapshot into domestic life within the average home in Australia around the turn of the twentieth century and is, therefore, an item with social relevance. By the mid 1980s the visiting population had dwindled dangerously due to predation and its very slow rate of reproduction. Conservation volunteers patrolled from dawn to dusk on a rotating 4 hour shift, educating visitors why they should stay away from the birds, and kept watch for pests. Terry Peacock’s logistics were heroic In support of the volunteers’ vigil: a boat, bunks, tents, tools, and a kitchen were bussed from Bendigo to Lakes Entrance. There were no outside funds at first, and only sale of promotional T-shirts together with small grants from the ANZ Bank and from Yellow Pages kept things going. Volunteers paid their own way to and from Bairnsdale railway station. This "ladies" pocket knife was used up to the late 1900's by influential and "well off" ladies, not only as a fashion statement but as a practical tool when away from the kitchen/home to peel fruit and provide a cutting instrument for small items. It was a method to show the growing independence of women to skillfully process food away from the home and kitchen. The use of such a small compact knife could also have been used by male cigar smokers (docking the end of the cigar)This "lady's "purse" knife was a demonstration of the growing independence of women in Australia and especially in rural areas up to the 1940's. The two World Wars provided the opportunity for women to take over what was traditionally "men's work". This evolution of women's equality in society brought changes to what the traditional role of rural women had been entrenched from first colonisation of Australia. The use of such a small compact knife could also have been used by male cigar smokers (docking the end of the cigar). A honing steel, sometimes referred to as a sharpening steel, whet steel, sharpening stick, sharpening rod, butcher's steel, and chef's steel, is a rod of steel, ceramic or diamond-coated steel used to restore keenness to dulled blade edges. They are flat, oval, or round in cross-section and up to 30 centimetres (1 ft) long. The steel and ceramic honing steels may have longitudinal ridges, whereas the diamond-coated steels are smooth but embedded with abrasive diamond particles. Non-abrasive honing rods such as smooth ceramic or ribbed steel are able to remove small amounts of metal via adhesive wear. In normal use, the rod is applied to the blade at a slightly higher angle than that of the bevel, resulting in the formation of a micro-bevel. The term "hone" is associated with light maintenance performed on a blade without the effort and precision normally associated with sharpening, so the name "hone" was borrowed. In the 1980s, ceramic abrasives became increasingly popular and proved an equal, if not superior, method for accomplishing the same daily maintenance tasks; manufacturers replaced steels with ceramic (and later, manufactured diamond abrasive) sharpening "steels" that were actually hones. Use Honing steels are used by lightly placing the near edge of the blade against the base of the steel, then sliding the blade away from yourself along the steel while moving it down – the blade moves diagonally, while the steel remains stationary. This should be done with the blade held at an angle to the steel, usually about 20°, and repeating on the opposite side at the same angle. This is repeated five to ten times per side. Steeling It is often recommended that steeling be performed immediately before or after using a knife and can be done daily. By contrast, knives are generally sharpened much less frequently. A traditional smooth honing steel is of no use if the edge is blunt, because it removes no material; instead it fixes deformations along the edge of a sharp blade, technically known as burnishing. It is no secret that copper is currently experiencing a huge upsurge in popularity. This is mainly thanks to its beautiful colour featuring heavily in the ranges of countless homeware retailers. There is, however, far more to this lustrous metal than just its appearance. For example, it has a greater level of thermal conductivity than any other metal (except silver); roughly 60% higher than aluminium and 3000% higher than stainless steel. This means copper is capable of heating up very quickly when compared to other metals. Perhaps a less commonly known property of copper is it being inherently antimicrobial. A wide range of harmful microbes are unable to survive for more than a couple of hours when in contact with a surface made of copper or one of its alloys (brass and bronze). This has led to it often being used for frequently touched surfaces such as door knobs, push plates and taps. A seemingly perfect material for cooking, it is therefore no surprise that it has been used in kitchens for millennia. But exactly when did we learn to utilise copper and its valuable assets? Origins It is hard to pin down an exact date when copper cookware was first introduced. Pieces discovered in regions of the middle east were dated as far back as 9000BC, suggesting cooking with copper began during the Neolithic period (≈10000-2000BC). As civilisations became increasingly capable in metallurgical techniques, metals such as copper became more widely used. It would have been around this time that copper replaced stone as the material used for making tools and cooking vessels. The use of copper is also well documented in Ancient Egypt. Not only was it used to produce water and oil containers, but it was also used to in medical practices. The antimicrobial nature of copper was exploited long before the concept of microorganisms was fully understood. The Smith Papyrus, a medical text written between 2600 and 2200BC records the use of copper in sterilising wounds and drinking water. Tin Lining Although copper is essential to many processes within the human body, it can become toxic if consumed in excess. It was this knowledge that gave rise to lining cookware with tin, a technique used for hundreds of years to prevent copper leaching in to food. These tin linings would eventually wear out and during the 18th and 19th century, it was common for people to send pans away to be re-tinned. This practice is becoming increasingly rare, as are the craftsmen who perform it. Despite this, there are still manufactures producing tin-lined copper cookware who also offer a re-lining service. Perhaps the best known of these is Mauviel, a French manufacturer who have been making this type of cookware since 1830. Tin has now largely been replaced by stainless steel as an interior cooking surface. The basic balance scale has been around for thousands of years and its accuracy has improved dramatically over the last several centuries, the principle behind this tool remains unchanged. Its parts include a fulcrum, a beam that balances on it, a pan at the end of the beam to hold the materials to be weighed, and a flat platform at the other for the counter-balancing weights. Balance scales that require equal weights on each side of the fulcrum have been used by everyone from apothecaries and assayers to jewellers and postal workers. Known as an unequal arm balance scale, this variety builds the counterweight into the device. Counter scales used in dry-goods stores and domestic kitchens often featured Japanned or (blackened) cast iron with bronze trims. Made by companies such as Howe and Fairbanks, the footed tin pans of these scales were often oblong, some encircled at one end so bulk items could be easily poured into a bag. Seamless pans were typically stamped from brass and given style names like Snuff (the smallest) and Birmingham (the largest). Some counter scales were designed for measuring spices, others for weighing slices of cake. In the 18th century, spring scales began to appear and would use the resistance of spring to calculate weights, which are read automatically on the scale’s face. Common soap was made from mixing animal fat with potash a form of the potassium based alkali present in plant and wood material. Early settlers, made their own soap from the waste fats and ashes they saved from their daily work. They did not then have to rely on waiting for soap to be shipped from England and waste their goods or money in trade for soap. In making soap the first ingredient required was a liquid solution of potash commonly called lye. Animal fat, when removed from the animals during butchering, must be rendered to remove all meat tissues and cooking residue before soap of any satisfactory quality can be made from it. To render, fats and waste cooking grease were placed in a large kettle with an equal amount of water. Then the kettle was placed over the open fire outdoors, because the smell from rendering the fats was too strong to wish in anyone's house. The mixture of fats and water were boiled until all the fats had melted. After a longer period of boiling to insure completion of melting the fats, the fire was stopped and into the kettle was placed another amount of water about equal to the first amount of water. The solution was allowed to cool down and left over night. By the next day the fats had solidified and floated to the top forming a layer of clean fat. All the impurities being not as light as the fat remained in water underneath the fat. In another large kettle or pot the fat was placed with an amount of lye solution ( known by experience ). This mixture was boiled until the soap was formed - 6-8 hours - a thick frothy mass, and a small amount placed on the tongue caused no noticeable "bite". The next day a brown jelly like slippery substance was in the kettle and this was 'soft soap' . To make hard soap, common salt was thrown in at the end of the boiling and a hard cake of soap formed in a layer at the top of the pot. But as salt was expensive most settlers used 'soft soap',. The soap could be scented with oils such as lavender for personal use.
