Born in Balmoral Victoria, he came to Warrnambool in 1932 to study at the Warrnambool Technical School. He worked for forty years in the laboratory as a microbiologist in the Kraft Cheese Factory based at the Warrnambool Cheese and Butter Factory in Allansford . His research work here formed the basis of the Department of Agriculture guidelines for dairy production in Victoria. He was a noted Warrnambool historian and was President of the Warrnambool and District Historical Society for forty years.This item is a memento of Les O Callaghan a prominent 20th century identity in Warrnambool.A sheet of white paper folded in two to make four pages. When it was superseded ...This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. ... at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese... at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese ...This door plate was found at 28 Spence Street, Warrnambool by the builder Ray Hollingsworth, when he was renovating the building for the Warrnambool Presbyterian Church in June 2019. He realized that the inscription had been placed there by Leslie O'Callaghan, probably when he left the premises in 1942 after boarding there for some years. Leslie O'Callaghan (1918-2014) was born in Balmoral and left there at the age of 13 with a scholarship to study at Warrnambool Technical School. He became an industrial chemist, working at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese and Butter Factory). His experimental work in cheese cultures over a 45 year period was regarded as cutting edge work in the Victorian dairying industry. Known as 'Mr History', Leslie O'Callaghan was also an important Warrnambool historian, serving as president of the Warrnambool and District Historical Society for 35 years. In later life Les wrote about his time in 28 Spence Street, noting the lay-out of the early building and other boarders at the time. He never mentioned the interesting memento of his time there that he left on the back of a door plate. The Warrnambool and District Historical Society Archives Centre is called 'Les O'Callaghan History House'This door plate with its inscription was found 77 years after the inscription was written. It is of considerable interest because the writer of the inscription was well-known in Warrnambool as a bacteriologist and an historian. He left his own personal historical message and by sheer chance it was found years later. (All the old door plates at the time of the renovation were thrown out and it was fortunate that the builder happened to see the writing on one of them and to recognize who the writer was.)This is a cream-coloured ceramic door plate. It is rectangular-shaped with curved edges at the top and bottom. It has been painted white and has two holes at the top and bottom for the insertion of screws for a5taching the plate to the door. These discs come from the Warrnambool Cheese and Butter Factory at Allansford and promote the butter manufacture. The Warrnambool Cheese and Butter Factory was established in 1888 and was one of the first co-operative butter factories in Victoria. Cheese making started at the factory in 1892, with the Kraft Food Company leasing the factory in the 1930s and continuing for many years to operate the cheese production area. These discs are of some interest as ones used by a premier factory in the Warrnambool district. Dairying in the Warrnambool district is of major significance.These metal discs, four in number, are in the shape of a shield and have gold, brown and green enamelling on the front. There is an image of a cow with a boomerang shape underneath. This book was a text book used by Arthur Gregory, the test room technician at Warrnambool Cheese and Butter Factory in the 1930s. He tested the suppliers’ milk and cream for butterfat percentage in order to determine the payment to the suppliers. Arthur Gregory later became the manager of Jays Laundry in Fairy Street. In the 1930s Arthur Gregory boarded at 28 Spence Street in Warrnambool. This boarding house was run by May Taggart, the wife of Sam Taggart, a Warrnambool tailor. Les O’Callaghan was also a boarder there and it was through his contact with Arthur Gregory that he obtained the position of laboratory technician at the Warrnambool Cheese and Butter Factory. Les O’Callaghan remained for over 40 years at this factory (leased at that time by the Kraft company) and was very important in the development of laboratory techniques used in the dairy industry. The Warrnambool Cheese and Butter Factory was established at Allansford in 1888 and is still in production today, operated by the Canadian firm of Saputo. This book is of interest because of its connection to Arthur Gregory, a test room technican at the Warrnambool Cheese and Butter Factory in the 1930s and to Les O’Callaghan, the Laboratory Manager and Microbiologist at Warrnambool Cheese and Butter Factory for more than 40 years. This is a hard cover book of 822 pages. It has a blue cover with gold lettering on the spine. It has 29 chapters, an appendix, a bibliography and an index. It has many black and white illustrations and drawings. The spine is slightly scuffed. A Melbourne man, Fred Walker, negotiated with the American company the Kraft processing of cheese and established the Kraft Walker Cheese Company in 1934 and leased the Warrnambool Cheese and Butter Factory premises in Allansford in 1935. Until 1993 this factory produced Cheddar Cheese, Swiss Cheese, Cracker Barrel and Tasty Cheddar Cheese and other varieties and won many Australian awards. A microbiological laboratory was established and from 1939 Ls O’Callaghan, a noted Warrnambool historian, worked in this laboratory, establishing the basis of the dairy industry guidelines for effective and scientific processing of milk. He worked there for 45 years. The Warrnambool Cheese and Butter Factory is still today a major industry in the Warrnambool area. This box is of key importance as an item that held Kraft Walker Cheese Company cheese. This company and its factory in Allansford was a key business in the dairying industry in the Warrnambool area for nearly 60 years. The box may have been used locally in the Allansford factory. This is a wooden oblong box with no lid. It has been nailed together with 12 nail heads visible and three nails protruding from the top edges. It has been used to package five pounds of Kraft Cheese. These two bottles have contained milk sold by the Warrnambool firm of Antarctic Ice Pty Ltd. in the mid 20th century.In the 1930s a pasteurizing plant was set up in Warrnambool in conjunction with an ice works in Kepler Street known as Antarctic Ice (Good and Stevenson). This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These lids are missing.The bottles have lettering impressed into the glass. ‘This bottle contains milk bottled for sale by Antarctic Ice Products Pty Ltd Warrnambool and always remains their property. These are six clear glass one pint milk bottles. They have round bases and bodies tapering through to the neck with a round moulded glass top. This book contains information on milk and cream bottles and other dairy-related items. It includes photographs of local milk and butter factories – Warrnambool (Allansford), Grassmere, Koroit, Garvoc, Glenormiston and Byaduk and references to Warrnambool milk suppliers – Antarctic Ice, Tooram and H Lindsay. No details have been found on H. Lindsay, selling milk in the 1920 to 1940 period. Antarctic Ice had a pasteurising plant in Kepler Street in the 1930s and sold to Warrnambool Cheese and Butter and Kraft in partnership and milk was sold under the new label, Sungold Dairies. They then purchased the Kaye Ryan pasteurizing plant in Verdon Street. Kraft moved out of the partnership with Warrnambool Cheese and Butter and Sungold Dairies relocated to the Allansford factory site where they still operate today. Tooram was the name of the property established in the Allansford area by the pioneer settler, John Allan. By the 1860s Tooram had becme well-known for its cheese making and in the 1880s Tooram, owned by Thomas Palmer, had what was described as the finest dairy farm in Victoria. This book is of interest as it contains information on milk and cream bottles and dairy-related items and Warrnambool is the centre of an important dairying industry with the Warrnambool Cheese and Butter Factory in Allansford being the oldest existing dairy product factory in Australia. The book will be very helpful to researchers. This is a soft cover book of 224 pages. The cover has a red background with black printing and a colour image of five bottles and five other dairy-related items on the front cover and colour images of four bottles, a tin and three labels or signs on the back cover. On the left hand side and across the bottom are images in various shapes. The circular image on the top shows a Royal coat of arms; below are two gold medals featuring a female and a laurel wreath; underneath is an image of two black sheep and a blue ringed circle has two sheep with blue ribbons around their necks standing in front of a wooden fence. The Kraft Walker Cheese Co Pty Ltd entered into an agreement with Warrnambool Cheese and Butter Factory Company in 1935 whereby the Kraft company leased premises from WCB. This arrangement remained in place until the 1990s. WCB took over the Garvoc factory in the 1920s. It became outdated and was eventually demolished.Black and white photograph showing timbered building with iron roof and turned wooden finial on the gable end. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw.
