Kraft-Walker Cheese Company commenced in Allansford in 1935 leasing the factory premises from Warrnambool Cheese and Butter Factory Company. Dairy companies entered competitions organised by the Dairy Industry Association and associated organisations and local agricultural societies to encourage improvement in products. Some of these awards are considered prestigious and highly regarded within the industry. Malleys Ltd was established in about 1890 by Francis Malley (1863-1932). This firm was located in the Sydney suburb of Alexandria, in McEvoy Street. They manufactured items for use in the dairy industry, as well as for hardware related to building and plumbing. Many of the Malley dairy products were sold under the "Sunrise" name. Malley retired in 1912. In 1931 there were branches at Parramatta, Hurstville & North Sydney. An early item made by an Australian manufacturer of dairy equipment in Australia specifically for the local market. Terra cotta is the perfect medium to manufacture items for keeping foods and liquids cool. When water is added to the base, the terra cotta body absorbs it and the subsequent evaporation creates a cooling effect for the contents. Mr P L Phillips operated a general store in Liebig Street in the early part of the 20th Century. He was a highly regarded member of the community. He was community minded and promoted support for local industry, advertising his locally made or sourced products. He and his wife were involved in the Congregational church and music. He was mentioned in The Warrnambool Standard as arranging an Honour Roll for the Aboriginal soldiers who fought in WW1, with two losing their lives. The Nestle Company has been a long established business and major employer in Warrnambool (Dennington) since the early 20th century until it was purchased by Fonterra around 2000. The significance of this item lies in the connection of a large company with a strong presence in Warrnambool, and a small business combining to promote a patriotic theme which would have been very important in the days proceeding the First World War. This glass milk bottle held one pint of milk and was filled in an assembly line at a milk factory. It would have had a paper top. Milk in the mid 20th century was delivered daily to households in glass bottles and left at the front door or door step. The commercial production of milk and other milk products in Victoria dates back to the 19th century with the Western District still having an important dairying industry. Warrnambool Cheese and Butter Factory, situated at Allansford, commenced operations in 1888 and still operates today. There are other milk-related factories in the Warrnambool area at Dennington and Koroit. This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These are milk bottles from the Warrnambool firm of Antarctic Ice. In the 1930s a pasteurising plant was set up in Warrnambool in conjunction with an ice works in Kepler Street, Warrnambool, known as Antarctic Ice (Good and Stevenson). This firm secured a milk supply from several dairy farmers in the Warrnambool district. Antarctic Ice at the Kepler Street site was eventually bought by the Warrnambool Cheese and Butter Company and Kraft Foods as equal partners and the milk was marketed as the Sungold brand. A farmer, Kaye Ryan, had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) to treat his own milk in opposition to Antarctic Ice and later Sungold. Kraft and Warrnambool Cheese and Butter purchased the Ryan business and the Sungold operations moved to the Ryan site. Kraft sold its share of Sungold and in 1989 the Sungold plant was moved to the Warrnambool Cheese and Butter Factory at Allansford where it operates today. These are six clear glass one pint milk bottles. They have round bases and bodies tapering through to the neck with a round moulded glass top. This book contains information on milk and cream bottles and other dairy-related items. It includes photographs of local milk and butter factories – Warrnambool (Allansford), Grassmere, Koroit, Garvoc, Glenormiston and Byaduk and references to Warrnambool milk suppliers – Antarctic Ice, Tooram and H Lindsay. No details have been found on H. Lindsay, selling milk in the 1920 to 1940 period. Antarctic Ice had a pasteurising plant in Kepler Street in the 1930s and sold to Warrnambool Cheese and Butter and Kraft in partnership and milk was sold under the new label, Sungold Dairies. They then purchased the Kaye Ryan pasteurizing plant in Verdon Street. Kraft moved out of the partnership with Warrnambool Cheese and Butter and Sungold Dairies relocated to the Allansford factory site where they still operate today. Tooram was the name of the property established in the Allansford area by the pioneer settler, John Allan. By the 1860s Tooram had becme well-known for its cheese making and in the 1880s Tooram, owned by Thomas Palmer, had what was described as the finest dairy farm in Victoria. This book is of interest as it contains information on milk and cream bottles and dairy-related items and Warrnambool is the centre of an important dairying industry with the Warrnambool Cheese and Butter Factory in Allansford being the oldest existing dairy product factory in Australia. This certificate was awarded in appreciation of 25 years service to the Nestle Company which operated a dairy factory at Dennington in Warrnambool. The company came to Warrnambool in 1907 and purchased 17 acres at Dennington and a new dairy plant was established by 1911. At its peak it employed 600 people and processed 55000 gallons daily in the milk condensery which is a process whereby much of the water content is drawn from the milk and sugar is added making a product which has a long shelf life and because it is processed at low temperature the milk maintains much of its vitamin content.A certificate which links a local person to a long and well known industry in Warrnambool and the Western district.Cream soft card certificate with red and black text.Mr H Goodall. Often the farmers collected the skim milk to feed pigs. At this time bacon was considered to be a dairy product. Warrnambool Cheese and Butter Factory Company was formed by a group of Warrnambool business men. The company was registered in May 1888 and commenced commercial production in November 1888. The company retained its independence for more than 125 years until acquired by Canadian firm Saputo. It has operated from the same site since its inception and also has an office in Japan. Milk processing is undertaken by Sungold. Milk powder for export is also produced on-site. Cheese World is a retail arm of the company operates on a connected site selling company products, local food products, wine and cheese tasting. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. Kraft Walker commenced cheese processing at Allansford in 1935 under a lease arrangement with Warrnambool Cheese and Butter Factory. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. This glass jar once contained Australian-made Nestle’s Malted Milk. The jar carries the company’s familiar logo. This jar would have originally had a screw-top metal lid. The large jar may have been used in a canteen, hospitality business or hospital due to its capacity. The jar was owned by Dr W.R. Angus, surgeon and oculist, who lived in Warrnambool with his wife and growing family for over thirty years. It may have been purchased from the Nestle factory in nearby Dennington. The jar was donated by his family and is part of the W.R Angus Collection. Nestles Malted Milk powder is usually added to either hot or cold milk as a nutritious drink supplement. The powder is a combination of evaporated whole milk powder, malted barley and wheat flour. Nestle began in 1867 and its products were available in Australia since the 1880s. Australia had become Nestle’s second-largest export market by 1906 and by 1908 Nestle had set up business in Australia. The Nestle factory in Dennington, Warrnambool, opened in 1911 and was the world’s largest condensed milk plant. For over 100 years the factory produced dried milk powder from the produce of local dairy farmers. It was a major employer for the district until an announcement was made on May 2019 by its recent owner Fonterra that it was closing its Dennington site for financial reasons. This Nestle Malted Milk jar is connected to the history of Warrnambool, as it was owned by the daughter of Dr W. R. Angus and his wife Gladys. It is part of the W.R. Angus Collection, which is notable for still being located at the site connected to Doctor Angus, Warrnambool’s last Port Medical Officer. It is also connected through its manufacturer Nestle. which had a branch in Warrnambool from 1911 to 2019, overlapping the time when the Angus family resided there, from 1939 to the 1970s. The jar is also significant as an example of the early-20th-century food found in local households and businesses, and could have been purchased from the local Nestle factory.Round tall clear glass jar with a wide mouth, short neck and straight sides on a cylindrical body. The jar has been blow-moulded in two pieces with a side seam running from the base to the top of the lip. There are air bubbles in the glass, and the base has been ground flat. The outside of the mouth is threaded. Inscriptions are moulded on one side and there is a round logo with text around an image of a mother bird with three young birds in a nest. The jar once contained Nestles Malted Milk and was made in Australia around the 1920s. The jar is part of the W.R.
