It was used to ram or mould butter into 56 pound butter boxes for bulk supply or for later cutting up into smaller quantities. Warrnambool was, and is still today, the centre of an important dairying industry with several large milk, cheese and butter factories in the area. The Warrnambool Cheese and Butter Factory at Allansford is the oldest operating factory of this type in Victoria and was established in 1888. The production of butter in the area was greatly accelerated by the invention of refrigeration in the early 1880s, enabling butter to be transported overseas. Warrnambool had two butter box factories which both closed in the 1920s. Up to the mid 1950s the production of butter was largely a hand process.This butter ram is of considerable interest as an example of the early tools used in the local butter industry.This is a heavy solid wooden block in a rectangular shape with the top shaped in the form of a pyramidal base. The name 'Farnham' is the name of the Special Survey in the area first purchased by William Rutledge and also the name of the Rutledge property at Dennington. In 1889 WIlliam Rutledge (Junior) and Thomas Palmer established the Farnham Cheese and Butter Factory on the banks of the Merri River at Dennington. In 1890 they sold the factory to a farmers' co-operative. Farnham had a high reputationfor butter=making when the factory was in existence. The factory was bought out by Nestles about 1909 with that company establishing its factory on the same area.in 1911. One is a share certificate from the company issued in 1909 to John Bergin of Nirranda and the other is a 1970 handwritten note, possibly from the Tait legal firm in Warrnambool indicating that John Bergin was no longer a shareholder. He may have been deceased or the shares may have been sold previously. The Warrnambool Cheese and Butter factory in Allansford is the oldest surviving dairy company in Australia. It was established in 1888 and is now operated by the Canadian firm Saputo. These items are of minor interest as mementoes of the early share certificates of the Warrnambool Cheese and Butter Factory, a major dairying business in the Warrnambool district for over 100 years. .1 This is a certificate extracted from a booklet of similar certificates. The printing is red with handwritten material inserted in black ink. He tested ...This book was a text book used by Arthur Gregory, the test room technician at Warrnambool Cheese and Butter Factory in the 1930s. He tested the suppliers’ milk and cream for butterfat percentage in order to determine the payment to the suppliers. Arthur Gregory later became the manager of Jays Laundry in Fairy Street. In the 1930s Arthur Gregory boarded at 28 Spence Street in Warrnambool. This boarding house was run by May Taggart, the wife of Sam Taggart, a Warrnambool tailor. Les O’Callaghan was also a boarder there and it was through his contact with Arthur Gregory that he obtained the position of laboratory technician at the Warrnambool Cheese and Butter Factory. Les O’Callaghan remained for over 40 years at this factory (leased at that time by the Kraft company) and was very important in the development of laboratory techniques used in the dairy industry. The Warrnambool Cheese and Butter Factory was established at Allansford in 1888 and is still in production today, operated by the Canadian firm of Saputo. This book is of interest because of its connection to Arthur Gregory, a test room technican at the Warrnambool Cheese and Butter Factory in the 1930s and to Les O’Callaghan, the Laboratory Manager and Microbiologist at Warrnambool Cheese and Butter Factory for more than 40 years. This is a hard cover book of 822 pages. It has a blue cover with gold lettering on the spine. It has 29 chapters, an appendix, a bibliography and an index. It has many black and white illustrations and drawings. The spine is slightly scuffed. It is connected to Warrnambool Cheese and Butter Factory Company Limited through the box manufacturer, Peter John McGennan, who was one of the instigators of the factory. Cobden and Warrnambool factories were the first two co-operative factories to produce butter in Victoria, both commencing in 1888. Warrnambool Cheese and Butter Factory Company Ltd is the only remaining independent butter factory still using its original name. It is an example of the manner in which butter was packed for export from the late 19th century until well into the 20th century. Its innovative design is light but strong, using plywood for the box body and struts 'stitched' to the body with wire. The ply was originally pine imported from New Zealand which did not taint the butter. Following the exclusion of the timber from NZ, plantations of local pine were planted and used. McGennan's box factory supplied butter boxes to the majority of butter factories in Victoria, producing up to half a million boxes per year by 1917.This Cobden butter box is historically significant relating to the butter industry and a rare item. Not many of these exist. Wooden butter box with broken ends and a hole in the bottom.Constructed using thin ply ends, sides and base with square wooden struts tied with wire to strengthen the box. It was established in 1894 when farmers brought their milk to the factory on horse drawn drays and carts and waited for their cream to be separated. The skimmed milk was mostly used by farmers to feed calves and pigs and the separated cream was manufactured into butter, some of which was exported to England. By 1910 this butter factory had an electricity generating plant called Mortlake Electricity which supplied both the factory and the township with power and this took precedence over the butter production which continued until 1926 when it was sold to the Electricity Commission. By 1930 the Butter Factory had a yearly turnover of 24,000 pounds sterling and in1935 it was producing 6 tons of butter weekly. But in 1936 the factory was sold to Glenormiston Cheese & Butter Factory who ceased operations. The manager's residence still remains in 2011 as does the remnants of the small timber butter factory (charcoal lined) and the double brick cheese room but the bluestone chimney has long gone. It was felt important to document its history from the surviving factory workers, including dairy suppliers and milk truck drivers. We hear their stories of the long hours and hard work without penalty rates, travelling unsealed roads and mixed with their humour of the bygone days is an important acknowledgement of that era. ... on the Lincoln Causeway in 1926, and the Cheese Factory in 1942... in 1926, and the Cheese Factory in 1942 as a wartime emergency ...Holdenson and Nielson Fresh Food Pty Ltd was founded in 1903 by Poul Jorgenson Holdenson and Andrew Nielson, after acquiring the Fresh Food and Storage Co, which had plants throughout Australia, including Albury. The plant was moved to Wodonga that year. Cream was collected from all areas of North East Victoria and the Riverina, with contractors carting it to the railway stations for rail travel to Wodonga. The Butter Factory was built on the Lincoln Causeway in 1926, and the Cheese Factory in 1942 as a wartime emergency project. At the same time, a pasteurising plant was installed in the complex, and so whole milk was collected from dairy farmers, rather than just cream. The company was bought out by the North Eastern Dairy Co-operative in 1962. It became a retail milk depot also involved in ice-making and cold storage. In 1985, Goulburn Murray bought the complex and as the site was surplus to requirements, it was sold to Wodonga Council. The buildings were adapted for other uses. The Butter Factory was modified and extended and for some time was occupied by the Albury- Wodonga Visitor Centre. The Creator's Gallery was established in the engine room, and the loading area and ice-making works were extended and modified for use as the HotHouse Theatre. The Cheese Factory was adapted for use as a theatre and jazz venue, and housed the HotHouse office. A Melbourne man, Fred Walker, negotiated with the American company the Kraft processing of cheese and established the Kraft Walker Cheese Company in 1934 and leased the Warrnambool Cheese and Butter Factory premises in Allansford in 1935. Until 1993 this factory produced Cheddar Cheese, Swiss Cheese, Cracker Barrel and Tasty Cheddar Cheese and other varieties and won many Australian awards. A microbiological laboratory was established and from 1939 Ls O’Callaghan, a noted Warrnambool historian, worked in this laboratory, establishing the basis of the dairy industry guidelines for effective and scientific processing of milk. He worked there for 45 years. The Warrnambool Cheese and Butter Factory is still today a major industry in the Warrnambool area. This box is of key importance as an item that held Kraft Walker Cheese Company cheese. This company and its factory in Allansford was a key business in the dairying industry in the Warrnambool area for nearly 60 years. The box may have been used locally in the Allansford factory. This is a wooden oblong box with no lid. It has been nailed together with 12 nail heads visible and three nails protruding from the top edges. It has been used to package five pounds of Kraft Cheese. This arrangement remained in place until Kraft officially ceased bulk cheese production at Allansford in February 1993. Kraft was responsible for farm collection of milk which was then shared between the two companies -Kraft for bulk cheese manufacture and Warrnambool Cheese and Butter Factory for whole milk, milk powder and butter manufacture. Laboratory technicians tested milk and cheese during the receival and manufacturing processes to ensure a high quality product. Derek Shaw, whose notebook this is, was the first person in charge of the Kraft Allansford laboratory. He kept notes of testing undertaken and recorded results of anything considered unusual. This notebook is one in a series of 33. Les O'Callaghan commenced work in the laboratory as Derek Shaw's assistant and technician in charge following Derek's retirement. He too kept notebooks of test results.Kraft laboratory technician/bio-chemist Les O'Callaghan was responsible for the introduction of a number of quality control measures which are still in use in the dairy industry today. Les was mentored by Derek Shaw. ... was bought by the Warrnambool Cheese and Butter Factory and Kraft... by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal ...These two bottles have contained milk sold by the Warrnambool firm of Antarctic Ice Pty Ltd. in the mid 20th century.In the 1930s a pasteurizing plant was set up in Warrnambool in conjunction with an ice works in Kepler Street known as Antarctic Ice (Good and Stevenson). This firm had secured a milk supply from farmers in the Warrnambool region. Eventually Antarctic Ice was bought by the Warrnambool Cheese and Butter Factory and Kraft Foods as equal partners and the milk was marketed as Sungold. Also a farmer named Kaye Ryan had set up a pasteurization plant in East Warrnambool (Raglan Parade/Verdon Street) in opposition to Antarctic Ice and Sungold. Kraft and Warrnambool Cheese and Butter bought out Ryan and moved Sungold operations to the Ryan site. Kraft Foods sold its share of Sungold to Warrnambool Cheese and Butter and in 1989 the milk factory was moved to the Allansford site of Warrnambool Cheese and Butter and Sungold continues there today.These bottles are of interest, firstly as examples of the half-pint milk bottles familiar to people living in the mid 20th century and secondly because they are good examples of the bottles used by an important Warrnambool business, Antarctic Ice. These are two clear glass bottles. When filled each bottle contained 10 fluid ounces or half a pint of milk. The bottles have a round base with a rounded body tapering slightly to a thick neck and a thick moulded top. The bottles when filled had a seal consisting of a circle of waxed cardboard that was pressed into a recess on the lip of the bottle. These lids are missing.The bottles have lettering impressed into the glass. ‘This bottle contains milk bottled for sale by Antarctic Ice Products Pty Ltd Warrnambool and always remains their property. They opened up a butter, cheese and pork export trade with South Australia, which operated successfully for sometime before South Australia altered their tariff duties which badly affected trade. After a period dealing with Queensland, they set their sights further afield to London. The Warrnambool butter Factory was commenced around this time and William McMeekin was closely connected with its establishment. They traded in other farm produce and machinery as well as having interests in land, loans and insurance. William McMeekin was a member of the Town Council for some time and J.P. McMeekin was a member of the Villiers and Heytesbury Agricultural Society and was a director of the Warrnambool Cheese and Butter Factory. It was used in the days (first half of the 20th century) when cows were mostly milked by hand. It was most likely to have been used to milk a house cow, perhaps in Warrnambool or a nearby town. The cow would have been kept during the day time on the town common and brought back to the home for milking and returned to the common the next day. The production of milk, cheese and butter has been an important industry in the Warrnambool district since the second half of the 19th century, with the Warrnambool Cheese and Butter Factory at Allansford being established in 1888. It is the oldest surviving dairy company in Australia. This stool is of considerable interest as an example of the stools used when cows were hand milked and when many households in the towns and outer areas had a house cow to supply milk for the household. This is a hand-made wooden milking stool with a rectangular piece of wood for the seat and four rounded legs that taper slightly outwards. The legs have been inserted into four holes on the top seating part. The seat has a small circular hole in the middle. The stool is well-worn. dairying in western victoria -

... at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese... at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese ...This door plate was found at 28 Spence Street, Warrnambool by the builder Ray Hollingsworth, when he was renovating the building for the Warrnambool Presbyterian Church in June 2019. He realized that the inscription had been placed there by Leslie O'Callaghan, probably when he left the premises in 1942 after boarding there for some years. Leslie O'Callaghan (1918-2014) was born in Balmoral and left there at the age of 13 with a scholarship to study at Warrnambool Technical School. He became an industrial chemist, working at the Kraft Walker Cheese Factory in Allansford (Warrnambool Cheese and Butter Factory). His experimental work in cheese cultures over a 45 year period was regarded as cutting edge work in the Victorian dairying industry. Known as 'Mr History', Leslie O'Callaghan was also an important Warrnambool historian, serving as president of the Warrnambool and District Historical Society for 35 years. In later life Les wrote about his time in 28 Spence Street, noting the lay-out of the early building and other boarders at the time. He never mentioned the interesting memento of his time there that he left on the back of a door plate. The Warrnambool and District Historical Society Archives Centre is called 'Les O'Callaghan History House'This door plate with its inscription was found 77 years after the inscription was written. It is of considerable interest because the writer of the inscription was well-known in Warrnambool as a bacteriologist and an historian. He left his own personal historical message and by sheer chance it was found years later. (All the old door plates at the time of the renovation were thrown out and it was fortunate that the builder happened to see the writing on one of them and to recognize who the writer was.)This is a cream-coloured ceramic door plate. It is rectangular-shaped with curved edges at the top and bottom. It has been painted white and has two holes at the top and bottom for the insertion of screws for a5taching the plate to the door. The inside of the plate has handwriting in black pencilLeslie Alexander O'Callaghan lived here for some years 1939-1942 AD.
