Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. As with many rural families the Uebergangs had bulk fuel supplies on-farm. The bowser was used to refuel farm machinery. Mobil's Super Plume petrol was one of the many brands of petrol available from the late 1920s. No electricity was required to work this bowser as it was gravity fed. The amount of petrol was selected by the position of the front lever. Petrol was then pumped into the bowl by the handle on the side of the bowser and gravity=fed to the vehicle. During the early 20th century the pig industry was included as part of the dairy industry. After milk was separated the cream went to the factory and the skim milk went back to the farm to feed the pigs. Early newspaper reports include information relating to the price of bacon in the list of dairy goods. Warrnambool Cheese and Butter Factory commenced a bacon factory in the early 1900s but it was a short-lived operation. Warrnambool Cheese and Butter Factory Company was formed by a group of Warrnambool business men. The company was registered in May 1888 and commenced commercial production in November 1888. The company retained its independence for more than 125 years until acquired by Canadian firm Saputo. It has operated from the same site since its inception and also has an office in Japan. Milk processing is undertaken by Sungold. Milk powder for export is also produced on-site. Cheese World is a retail arm of the company operates on a connected site selling company products, local food products, wine and cheese tasting. The first head teacher was Charles A Bruford. The first building was replaced with a new building by 1975 when the celebrations took place. Myrtle's cousin, Florence Trigg, recalls that the wedding was held at 6am at Koroit in order to catch the train to Melbourne at 7am. This photograph was taken following their return. Edward, born in 1883 at Cudgee, was the son of Friedrich Johann Uebergang and Pauline Johanna Hillbrick. It was part of the original Tooram run which was taken up in 1839/40 by John McMahon Allan. Allan held the property until 1860 after which it passed through several owners including John Orlebar, Thomas McLeod Palmer, Owen family. Tooram was famous for the cheese from its large dairy herd. The herd was hand-milked. Palmer employed Indian labour to undertake this task. In 1883 Palmer was charged with the manslaughter of an Indian worker but was acquitted. This case was extensively reported in the Warrnambool Standard. The Standard also featured a number of articles about Tooram [22 June 1882, 17 March 1883 to 15 May 1993, 30 October 1886, 22 October 1897, 11 May 1926, 8 June 1931]. The property remained in the Uebergang family until after Joyce's death in 1992. Tooram is significant as it was one of the earliest runs taken up in the Warrnambool area. It was divided up following its sale in 1897. Tooram cheese was renowned. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. Vegemite hit the market in 1923 but failed to sell. In 1928 the company renamed its spread Parwill to compete against the top-selling British import, Marmite but Parwill flopped too. In 1922 the Fred Walker Company hired a chemist, Percy Callister, to develop a useful food from vitamin-rich used yeast being dumped by breweries. Using enzymes to split open the yeast cells, Callister extracted the contents and blended them with vegetables and salt into a sticky black paste with a sharp taste. They tried the Vegemite name again and gave the product away with Walker cheese products and a couple of cars as prizes before Australians finally fell for it. In 1939 Vegemite was officially endorsed by the British Medical Association as a good source of Vitamin B and was included in Australian Army rations during World War II. Buyers were now assured of the nutritional value of Vegemite, which has been a market leader ever since. The Fred Walker Company became the Kraft Walker Cheese Co.
