Funnel-style steam vents have been placed in the centre of fruit and meat pies during cooking since Victorian times. Pie funnels were used to prevent pie filling from boiling up and leaking through the crust by allowing steam to escape from inside the pie. They also supported the pastry crust in the centre of the pie, so that it did not sag in the middle, and are occasionally known as 'crust holders'. Older ovens had more problems with uniform heating, and the pie funnel prevented boil-over in pie cooking. The traditional inverted funnels, with arches on the bottom for steam to enter, were followed by ceramic birds; and from the 1940s they have been produced in a multitude of designs. Creigiau Pottery of South Wales produced a 'Welsh Pie Dragon' in copper lustreware. This trend has been particularly noticeable in recent times, due to their increasing popularity as gifts and collectors' items rather than simply utilitarian kitchen tools. ... butchering, must be rendered to remove all meat tissues and cooking... be rendered to remove all meat tissues and cooking residue before soap ...Common soap was made from mixing animal fat with potash a form of the potassium based alkali present in plant and wood material. Early settlers, made their own soap from the waste fats and ashes they saved from their daily work. They did not then have to rely on waiting for soap to be shipped from England and waste their goods or money in trade for soap. In making soap the first ingredient required was a liquid solution of potash commonly called lye. Animal fat, when removed from the animals during butchering, must be rendered to remove all meat tissues and cooking residue before soap of any satisfactory quality can be made from it. To render, fats and waste cooking grease were placed in a large kettle with an equal amount of water. Then the kettle was placed over the open fire outdoors, because the smell from rendering the fats was too strong to wish in anyone's house. The mixture of fats and water were boiled until all the fats had melted. After a longer period of boiling to insure completion of melting the fats, the fire was stopped and into the kettle was placed another amount of water about equal to the first amount of water. The solution was allowed to cool down and left over night. By the next day the fats had solidified and floated to the top forming a layer of clean fat. All the impurities being not as light as the fat remained in water underneath the fat. In another large kettle or pot the fat was placed with an amount of lye solution ( known by experience ). This mixture was boiled until the soap was formed - 6-8 hours - a thick frothy mass, and a small amount placed on the tongue caused no noticeable "bite". The next day a brown jelly like slippery substance was in the kettle and this was 'soft soap' . To make hard soap, common salt was thrown in at the end of the boiling and a hard cake of soap formed in a layer at the top of the pot. But as salt was expensive most settlers used 'soft soap',. The soap could be scented with oils such as lavender for personal use. This cup has been produced as a promotional item by the makers of Bovril, a meat extract paste usually used in cooking or stirred in hot water for a hot drink. It was developed in Britain in the 1870s and widely used during the depression of the 1930s and the World Wars when meat was scarce and expensive. Similar products such as Marmite (Britain) and Vegemite (Australia) have a vegetable rather than a meat base. This item is a memento of the times past when hot drinks made from meat or vegetable paste were very popular and it is retained for display purposes.This is a cream-coloured china cup with gold edgings and three gold-coloured Bovril logos (the name 'Bovril' inside a shield outline). Meat was rationed because much of the meat processed in Australia was sent overseas to Britain and to soldiers in war areas. The booklet includes hints on how to make the most of the meat ration. Meat and other key foods such as tea, sugar and butter were rationed during World War Two. Each person in Australia was allowed two meat coupons a week and, depending on the type of meat, this equated to one pound to two pounds of meat per coupon. Products such as sausages, brains, tripe, poultry, rabbits, bacon and ham were not rationed (but few people could afford poultry). Cooking Bowl, Quick Cooker, Early 20th century
This item is an early type of cooker and would have been used to cook meat and puddings in the first two or three decades of the 20th century. It has no known local provenance but may have been a display item from the old Warrnambool Museum which was established in 1883 and was dismantled in the 1960s. This item, although incomplete, is of interest as a cooking bowl from the past and is retained for display purposes. This is a circular-shaped white china bowl. The base has a hollow tube protruding up through the centre of the bowl. There is printing on the outside of the bowl and on the top inside section. The lid of the bowl is missing. A pair of scales or dishes in which objects to be weighed and the weights / masses against which to weigh them are placed is an "Apparatus for weighing. The pan, or each of the pans, of a balance." These common kitchen / dairy scales would be used by the householder to weigh flour, sugar, cereal, vegetables, fruit, meats, butter, cheese etc. prior to cooking or storing . The Maling Pottery of Newcastle upon Tyne, England, was in production from 1762 to 1963. In its heyday it claimed to be the biggest pottery in the world. The first Maling pottery was established at North Hylton, near Sunderland, in 1762 by William Maling. William’s descendants who moved to the Newcastle area and built a succession of larger works. The last of these – the Ford B pottery – was begun in 1878 and occupied a 14 acre site... Maling’s stock in trade was everyday white ware – marmalade jars for Keillers and Coopers, crockery for railways, shipping lines and hotels, and a huge variety of domestic kitchenware. With a significant export trade in the 1920s they had showrooms in Australia, New Zealand and Denmark. Mary Ford, daughter of an Edinburgh glass manufacturer, married Christopher Maling. Christopher Thompson Maling’s initials form one of the company’s early factory marks – the letters CTM inscribed vertically inside a triangle. The Maling name (which had first appeared with the castle mark in the 1920s) and extended to the trade name “Cetem Ware” when the company adopted its well known trademark of a castle in the early years of this century. The “Cetem” name continued to be used into the 1930s. the Maling name continued to be used as a trademark until the factory finally closed in 1963 The outbreak of World War 11 in 1939 marked the beginning of a long decline. Grace Mitchell, a talented artist in later life and baker managed a pastry shop business near the corner of Mt Pleasant and Main Roads Eltham in the 1950’s. Shortly after her marriage to Arthur Mitchell in 1948 he had an accident that caused a head injury and was unable to work. Grace realised she needed to be home to care for her husband as well as earn an income. She managed the bureaucracy of council permits, made modifications to her home with savings to get the business off the ground without having to borrow money. Grace and Arthur were avid gardeners and would grow, wash and mince vegetables for pasties while Grace hand made and rolled the pastry. They cooked and minced their own meat for the pies and the fruit for the sweet pies came from their orchard at the rear of the property. She also baked scones and cakes. Grace operated her pastry shop for over 16 years. She supported the Shillinglaw Cottage Preservation Campaign to preserve the cottage through its Flavour of Eltham community cookbook published in 1964 and hosted cooking classes in the new Living and Learning Centre. Spices were used in abundance in Georgian cooking. This was mostly due to the British expansionist policy and their increased colonisation through the world. Spices became more readily available, and the most popular were nutmeg, cardamon, cloves, and peppers. These were often combined and used on meats and poultry to conceal the unusual flavours that was a result of the absence of a refrigerator. The grater that accompanies the spice box was a popular utensil in colonial kitchens and was used for nutmeg as it was recommended to be freshly grated. This spice box is a part of the Churchill Island Heritage collection because it was an important element in a typical Georgian kitchen (1714 - 1830) and later. VX 27898 Corporal Thomas John Morris Thomas (Tom Thomas) donated several items to Cranbourne RSL. He served in the Australian Corp Signals in WWII both in Australia and overseas. He was born at Womerah on 9/11/1906 and died at Koo Wee Rup 16/06/1984. He enlisted at Yarram on 1/7/1940 and was discharged at Royal Park on 9/3/1945.Rectangular painted metal tin for holding emergency rations. Green paint with canvas tape along sides. Hinged lid.
