The Babcock tester was used to determine the butter fat content in milk. Prior to the use of the Babcock test farmers were paid on volume and milk was sometimes watered down to increase the supply to the factory. Once the Babcock test was introduced it provided a consistent means of paying farmers for milk supplied to the factory. The Babcock tester is significant as a scientific means of testing fat content of milk and the subsequent consistent payment mechanism to farmers. This test also provided a means for farmers to identify poor performing cows and upgrade the quality of their herd and subsequent milk supply to the factory.Four tipping metal testing tubes which revolve on a brass base. Bottle, Milk Bottle, Mid 20th century
This glass milk bottle held one pint of milk and was filled in an assembly line at a milk factory. It would have had a paper top. Milk in the mid 20th century was delivered daily to households in glass bottles and left at the front door or door step. The commercial production of milk and other milk products in Victoria dates back to the 19th century with the Western District still having an important dairying industry. Warrnambool Cheese and Butter Factory, situated at Allansford, commenced operations in 1888 and still operates today. There are other milk-related factories in the Warrnambool area at Dennington and Koroit. This bottle is of interest as an example of the type of milk bottles used in the 20th century before the advent of plastic and cardboard cartons. This is a clear glass bottle with four rounded sides, a short neck and a round opening at the top. Document - David Williams Probate 1889, 1889
Tait collection: item 36 of 62 This document contains the details of the Will and Probate of David Williams of ‘Morgrugyn’ farm near Woodford. He was born in 1804 and died in 1889. He was a pioneer settler in the Woodford area, arriving, according to the Pioneer Honour Board, in 1842. His son, Ivor, was Secretary of the Grasmere Cheese and Butter Factory for some time and Secretary of the Warrnambool Cheese and Butter Factory in 1888. David Williams left real estate to the value of £1540 and personal estate to the value of £1075. The chief beneficiary was his eldest son, David but other sons and grandsons also benefited. His wife, Mary, was left £300, a house to live in rent free during her lifetime, two cows and the right to graze them on the farm, six silver spoons, her bed and bedding, washstand and ware, a dressing table, a table in the dairy and ‘all the crockery and cooking utensils she may require’. The lawyer drawing up this document was James Fletcher who had an office in Port Fairy in the 1870s and an office in Koroit Street, Warrnambool, in the 1880s. In the 1890s and early 1900s he was in partnership with George Mackay. This document was in the possession of the lawyer Ernest Chambers who had drawn up the Williams will. It was then passed down to successive lawyers occupying legal premises in Kepler Street until it was located in 2014 in the Kepler Street building last used as legal premises by the firm of Mackay Taylor. This document is of considerable interest as it contains the will and probate details of a prominent 19th century farmer in the Woodford district. It will be useful for researchers. This is a white piece of parchment paper folded in two with typed material on two pages and handwritten material on one page. The pages are ruled with red ink. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. This photograph is part of the collection of items given into the care of the Cheese World Museum. The Uebergang family purchased Tooram Park in 1912. It was part of the original Tooram run which was taken up in 1839/40 by John McMahon Allan. Allan held the property until 1860 after which it passed through several owners including John Orlebar, Thomas McLeod Palmer, Owen family. Tooram was famous for the cheese from its large dairy herd. The herd was hand-milked. Palmer employed Indian labour to undertake this task. In 1883 Palmer was charged with the manslaughter of an Indian worker but was acquitted. This case was extensively reported in the Warrnambool Standard. The Standard also featured a number of articles about Tooram [22 June 1882, 17 March 1883 to 15 May 1993, 30 October 1886, 22 October 1897, 11 May 1926, 8 June 1931]. The property remained in the Uebergang family until after Joyce's death in 1992. Tooram is significant as it was one of the earliest runs taken up in the Warrnambool area. It was divided up following its sale in 1897. Tooram cheese was renowned. This photograph is significant as it shows Tooram Park homestead in its earlier days with the prolific timber decoration which was later removed.Black & white photograph on a cardboard mount showing Tooram Park homestead. Mobil's Super Plume petrol was one of the many brands of petrol available from the late 1920s. No electricity was required to work this bowser as it was gravity fed. The amount of petrol was selected by the position of the front lever. Petrol was then pumped into the bowl by the handle on the side of the bowser and gravity=fed to the vehicle. Book, Jamie Callister, The Man Who Invented Vegemite, 2012
Cyril Percy Callister, a chemist by training, became a food technologist and the inventor of the well known spread 'Vegemite'. A Ballarat School of Mines (SMB) student around 1910, Callister then went to Melbourne University where he obtained his B.Sc. in 1914, M.Sc. in 1917 and D.Sc. in 1931. With Sir David Rivett in 1931 he secured the royal charter for the Royal Australian Chemical Institute, becoming president of the Society of Chemical Industry of Victoria in 1935-36. Vegemite, a yeast based spread, and perhaps one of most famous trademarks in Australia, was discovered around 1922 by Cyril Percy Callister. He was hired by the Fred Walker Company (a Melbourne based manufacturer later known as Kraft) as a laboratory assistant to develop a yeast extract spread. It took some years but by 1954 the special Vegemite song 'Happy Little Vegemites' demonstrated the popularity of the spread. Callister was also known for packing cheese in a can to preserve it and developing Kraft processed cheese. he son of a school teacher and postmaster he was born at Chute on 16 February 1893 and died on 5 October 1949. His brother Reginald Clive Callister (1889-1971) was also a student of SMB. Photograph - Albury & Wodonga District Butter Factory
Holdenson and Nielson Fresh Food Pty Ltd was founded in 1903 by Poul Jorgenson Holdenson and Andrew Nielson, after acquiring the Fresh Food and Storage Co, which had plants throughout Australia, including Albury. The plant was moved to Wodonga that year. Cream was collected from all areas of North East Victoria and the Riverina, with contractors carting it to the railway stations for rail travel to Wodonga. The Butter Factory was built on the Lincoln Causeway in 1926, and the Cheese Factory in 1942 as a wartime emergency project. At the same time, a pasteurising plant was installed in the complex, and so whole milk was collected from dairy farmers, rather than just cream. The company was bought out by the North Eastern Dairy Co-operative in 1962. It became a retail milk depot also involved in ice-making and cold storage. In 1985, Goulburn Murray bought the complex and as the site was surplus to requirements, it was sold to Wodonga Council. The buildings were adapted for other uses. The Butter Factory was modified and extended and for some time was occupied by the Albury- Wodonga Visitor Centre. The Creator's Gallery was established in the engine room, and the loading area and ice-making works were extended and modified for use as the HotHouse Theatre. The Cheese Factory was adapted for use as a theatre and jazz venue, and housed the HotHouse office. The various outbuildings, such as garages and storage areas, were adapted for use as shops and craft outlets. This collection is significant because it documents an important industry in Wodonga.A collection of images and advertisements promoting Holdenson and Nielsen of Wodongaholdenson & nielson, wodonga dairies, victorian dairy industry -

Document - Booklet, The Dennington Factory Looking back, 1907-2005, September 2005
This booklet records in brief the history of the Nestles Factory at Dennington, Victoria from its opening in 1911 to its sale in 2005 to Fonterra Milk, Australia and the closing of the Nestles association with the Warrnambool district. In later years there were productions of cheese, Sunshine Powdered Milk and Nescafe Instant Coffee. Six two-storey residences were built for employees and there were twice-daily trains from Warrnambool to the factory and back for many years. The Nestanglo Social and Sports Club, established in 1923, was important in the community life of Dennington and beyond. This booklet will be of great use as it gives a very good summary of the history of Nestles Factory at Dennington and reveals how important the factory was to the Warrnambool region and to Australia. This is a paperback booklet of 37 pages. Bottle, Tooram Estate, Tooram Milk, 1930-1940
This milk bottle takes its name from the Tooram property near Allansford but the exact decade when this milk bottle was used has not been established. Tooram was established by John Allan when he came to the Allansford area in 1839/1840 with his brother William who established the property of Allandale in the same area. John Allan held the property of Tooram until the early 1860s, with several owners from that date on including John Orlebar, Thomas Palmer and the Owen family. The property was sub-divided in 1897 with the Uebergang family owning Tooram Park from 1912 to 1992. The Torram property was well-known in the late 19th and early 20th century for its cheese production. This bottle is of great interest as one connected with Tooram, a dairying property that was one of the earliest farm properties in the Warrnambool area, being established in the Allansford area in 1839/1840, before the town of Warrnambool was settled. This is a glass bottle with a moulded base and a metal and china stopper. This packaging formed part of a container holding Sungold Milk in 1978. Sungold Dairies were based in Kepler Street Warrnambool before moving to Verdon Street. In 1988 the site in Verdon Street was sold to Macdonalds fast food business and later to Guyetts funeral business. Sungold milk is now produced at the Warrnambool Cheese and Butter Factory at Allansford and today is the chief local supplier of fresh milk. This packaging, produced when the business was located in Verdon Street, was made to mark the centenary of the wreck of the Loch Ard. This ship, wrecked in 1878 near Port Campbell, attracted much attention, not only because of the loss of over 50 lives, but also because the story of the two survivors has become part of local folklore. This packaging is of minor interest as a reminder of the promotional material produced at the time of the centenary of the wreck of the Loch Ard in 1978.This is the cut-down piece of packaging that contained fresh milk. It is one piece of light card folded to make a rectangular-shaped container. The sides have a white background with green and white printing and images of gold suns and ships and a sketch of a coastline. This Babcock tester was used in the laboratory at the Kraft cheese factory, Allansford. When it was superseded it was passed to one of the users of the machine, Les O'Callaghan, president of the Warrnambool & District Historical Society who placed it in the historical society collection. In 2009 when the historical society premises were upgraded there was insufficient room to store the tester so it was donated to Cheese World Museum. The machine was used to test the butterfat content of milk. Prior to dairy factories coming into existence farmers made butter individually on farms. There was no need for milk testing until farmers supplied factories for payment. Payment was based on a gallon of milk weighing 10lbs (pounds) and this led to richer milk, containing a high degree of butterfat for use in buttermaking, being paid at the same rate as lesser quality milk. In 1890 Stephen Moulton Babcock, an American professor at the University of Wisconsin-Madison, developed a method of determining the amount of butterfat in milk, thus providing a standardised and fairer system for payment. Babcock Test Process 1. 18 grams of milk (17.6ml) was put into a test tube 2. The same amount of sulphuric acid was added 3. A centrifuge at 50ºC was rotated at more than 900 revs per minute 4. The fat floating on top of the liquid in the test tube was measured The Babcock Test provided fairer compensation to farmers and also helped produce a consistent product for consumers. It also allowed for selective breeding when dairy herd testing evolved. ‘The Babcock Test is so simple that it can be used by any careful person, and it is inexpensive to operate. From the very beginning it was so complete in every detail that no change has had to be made in it.’ (Babcock Test http://www.en.wikipedia.org/wki/Babcock_test 31 March 2009) Round green metal container with opening lid. Book, Nullawarre School Centenary and District History, 1975
LeThe Uebergang family came from Silesia to Australia in 1848 and were early settlers in the Allansford area. The sons and other descendants also purchased farms in the area. The Percy Uebergang family lived at Tooram Park, Allansford from 1912 until 1992. Percy and Myrtle Uebergang's children were twins, Ray and Joyce born in 1926 who lived at Tooram Park until their deaths, Ray in 1986 and Joyce in 1992 after which the property was sold. Neither Ray nor Joyce married and following the death of her brother Joyce set up the Ray and Joyce Uebergang Foundation which supports the local community. The collection of items from their property was put into store for a number of years before being given into the care of the Cheese World Museum. The family often re-used, recycled and repaired items and examples can be seen in the museum. This item is part of the collection of items given into the care of the Cheese World Museum. Photograph - Framed photograph of ship 'Speculant', c. 1910
This is a photograph of the ship, 'Speculant' at the Warrnambool Breakwater. There is another ship alongside the 'Speculant' and the dredge, 'Pioneer' is in the background. The 'Speculant' was a three masted barquentine of 412 tons built in Scotland in 1895. It was purchased by P. J. McGennan in 1902 and wrecked at Cape Patton, near Apollo Bay, in 1911. It was one of the few ships to be registered at the Warrnambool port. Peter John McGennan (1844-1920) was a cooper by trade, initially operating a shop in Warrnambool making cheese vats, churns, coolers and tanks. He then opened a factory in South Warrnambool making butter boxes, nails and barbed wire. He owned several ships, using them to import material for his businesses, especially white pine timber from New Zealand, and to export his own products. He was a Warrnambool Councillor from 1885 to 1891.This photograph is of interest as a reminder of the importance in the late 19th century and early 20th century Warrnambool of Peter McGennan and his industries and community work. This is a black and white photograph of three ships. It is enclosed in glass with a varnished wooden frame with an ornate edging. Brass Plate, Warrnambool Chamber of Commerce
The Chamber of commerce was commenced in Warrnambool in March 1888 to consider firstly what could be done to assist the dairy industry which at the time was facing record low prices for its butter. Co-operatives had been started in Gippsland around that time and it was decided to start co-operative dairy factories at Woodford, Panmure and Framlingham, shortly followed by the Warrnambool Butter and cheese factory at Allansford. The Chamber over the next thirty years covered many business issues such as trading hours, transport, and public holidays but also put forward ideas which related to water and sewerage matters.ideas were even put forward in 1907 regarding utilising the Hopkins Falls to generate power As an organisation it has waxed and waned in Warrnambool with various names but all working towards improving trade and business opportunities in the town.
